Mixed Baby Greens with Strawberries, Gorgonzola and Poppy Seed Dressing

tbsp red wine vinegar

tbsp cider vinegar

olive oil

tsp shallots

tbsp honey (raw for Paleo)

poppy seeds

oz organic mixed baby greens

almond

strawberries

gorgonzola (leave out for Paleo)

Place all the dressing ingredients in a small jar and shake.

Combine the salad ingredients in a big salad bowl and toss with dressing or you can divide the ingredients equally between four plates.

(16 ounces) coleslaw mix

red onion

mayonnaise

vegetable oil

white sugar

white vinegar

In a large mixing bowl,combine the coleslaw mix and diced red onion.

In a small bowl, whisk together the mayonaisse, oil, sugar, vinegar, salt, and poppy seeds until well blended.

Pour dressing mixture over coleslaw mix and toss well to coat.

This Fall Harvest Pasta Salad combines all the flavors of fall for one epic and easy fall entertaining recipe.

Fall Harvest Pasta Salad

potatoes

Salt and black pepper (to taste)

multi-colored pasta

broccoli (chopped (about 1-inch pieces))

cranberries

pine nuts (toasted)

red onion (thinly sliced)

goat cheese (crumbled)

Begin by preheating your oven to 400 degrees F. Place the sweet potato pieces on a large baking sheet. Drizzle them with olive oil, season with salt and pepper, and then toss. Roast in the oven for 25-30 minutes, stirring occasionally. Remove from the oven and set aside to cool.

Meanwhile, bring a large pot of water to a boil and cook the pasta according to the package directions. You'll want the pasta to be al dente. Drain the pasta, allow it to cool, and place it in a large bowl.

To the bowl of pasta, add the roasted sweet potatoes, broccoli, dried cranberries, pine nuts, and red onions. Toss with the poppy seed dressing until evenly coated. Crumble in the goat cheese and gently stir again until combined. Cover and refrigerate for at least an hour.

Stir before serving, adding more dressing if needed.

One of my favorite recipes! Especially for potlucks! It is always a big hit. People love the addition of the roasted sweet potato.

This pasta salad is delicious and easy to make.  The ingredients go well together.  I didn’t use the pine nuts, because they would have required a loan from the bank, but I’m sure any nuts would be fine.  I love it and will be making it again soon.  I love your blog and your recipes.

In a blender add the strawberries, shallot, vinegar, honey, mustard, salt, and pepper and blend until smooth.  Taste and add more salt or honey if desired.  With the blender still running, slowly pour in the oil in until the dressing is emulsified.  Turn off the blender and stir in the poppy seeds.  Transfer to a jar with a lid and chill in the fridge for at least a couple of hours before serving.  Will keep for up to a week.  The dressing will separate; shake before using.
