Few desserts are both rich and refreshing at the same time, but that's what pudding pops do best. They're as creamy as top-notch soft-serve, but light enough to feel just a little bracing on a hot summer's day. In fact, they turn out particularly nice with skim milk, which gives the pops an icy quality that I absolutely adore. If you like, dip 'em in melted chocolate cut with coconut oil to make a quick Klondike Bar–like treat.

DIY Pudding Pops Recipe

For the Pudding:

heavy cream (3/4 cup; 170 grams)

vanilla

sugar (1 cup; 195 grams)

tapioca starch (1/4 cup; 28 grams)

eggs

rum,

For the Chocolate Shell (optional):

chocolate

coconut oil

Sprinkles, crushed peanuts, cocoa nibs,

For the Pudding: Bring 10 ounces milk (1 1/4 cups; 280g), cream, and vanilla pod to a simmer over medium heat in a 3-quart stainless steel saucepan or saucier. Once the dairy begins to bubble, remove from heat, cover, and steep 30 minutes. 

Meanwhile, blend together vanilla seeds, sugar, tapioca starch, and salt until well combined, then whisk in eggs. Remove vanilla pod from dairy and discard, then pour into egg mixture, whisking all the while.

Return to saucepan and cook over medium heat, whisking constantly but not vigorously, until thick and just beginning to bubble. Immediately pour through a fine-mesh strainer into a quart-size measuring cup, then stir in remaining milk and rum (see note). Divide evenly between 10 three-fluid-ounce popsicle molds and freeze until just beginning to firm, about 30 minutes. Insert popsicle sticks and continue freezing until completely solid, about 4 hours. To unmold, place molds in hot tap water for a few seconds and jiggle sticks to release. Wrap individually in plastic and freeze up to 3 weeks, or arrange on a parchment-lined baking sheet and freeze while you prepare the chocolate shell.

For the Chocolate Shell (optional):  Microwave chopped chocolate with a few 15-second bursts, stirring well between each round, until fluid and warm. Stir in coconut oil with a flexible spatula and transfer to the smallest possible measuring cup or drinking glass that can accommodate a popsicle. Dip popsicles one by one, letting the excess run off. If you like, dip in sprinkles or other crunchy coating before chocolate starts to set. Return to baking sheet and freeze to ensure chocolate coating is completely hard, about 5 minutes. Transfer to individual sandwich bags and freeze up to 1 month.

Blueberry Frozen Dog Treats

¾ cup greek yogurt (low fat preferably)

½ banana, ripe

Gather all ingredients and equipment.

Add all ingredients into a blender or food processor.  Blend until fully incorporated, about 90 seconds.

Pour into molds.  Freeze until solid, about 5 hours.

Remove from molds and give as treats. Happy dog!

Make a popular Korean popsicle – Melona bar from your home! It takes less than 10 minutes to assemble! Easy &amp; delicious!

Homemade Melona Bar (Honeydew Melon Ice Pops)

heavy cream

Tbsp honey

drop green food colouring (, optional)

Whip the cream (using an electric beater/food processor/stand mixer) until stiff peaked.

Blend the honeydew melon, honey and food colouring (if adding) in a blender until pureed.

Combine the whipped cream and the pureed honeydew melon by gently folding the cream. (Don’t whisk or stir as it will ruin the texture of the cream.) This should result in about 1 and 1/3 cup of mixture.

Pour the honeydew melon - cream mixture into ice pop moulds and freeze them until slushy (for about 2 hrs). Insert the ice pop sticks then return them to freeze until completely frozen (a further 6 hrs or overnight).

Creamy Popsicles

Pour the cream into a pot and add the honey. Boil and stir it on low medium to low heat for about 3 mins. (Stir well to dissolve the honey and not to burn the cream). Turn off the heat, set it aside and cool it down for about 5 mins.

Cut the cleaned honeydew melon into small chunks and put them into a food processor/blender. Blend it until it turns to puree.

Combine the cooled cream (from step 1) and the pureed melon (from step 2) in a bowl. whisk well. Pour the honeydew cream mixture into ice pop moulds and freeze it for at least 6 hours.

Apple Cider and Rosemary Ice Pops

apple juice

Combine first 6 ingredients in saucepan. Bring mixture to boil, stirring until sugar dissolves. Reduce heat to medium; simmer until mixture is reduced to 3 1/2 cups, 20 to 25 minutes. Strain into 4-cup measuring cup; cool to room temperature. Stir in vinegar and vanilla. Pour into twelve 1/3-cup ice pop molds. Insert ice pop covers and sticks; freeze overnight.

Small paper cups can be used instead of ice pop molds. Pour the mixture into the paper cups, partially freeze, then insert a wooden stick into the center of each and freeze overnight. If pops are difficult to remove from cups, cut a slit in each cup with scissors, then peel it off.

Cup of Tropics Fruit Mixture (Can substitute with Buenas Halo Halo Mix)

Can Evaporated Milk (Black & White or Jans Sweet Cow)

Jar of Ube Cookie Butter

Metal Popsicle Molds (We highly recommend this

First, we are going to make the top layer.&nbsp; Spoon Tropics Fruit Mixture into the cavity of each popsicle mold, going just halfway up.

Then, pour in the evaporated milk, just covering the fruit mixture. Mix lightly and press down with the spoon handle.

Place the popsicle sticks in and cover.

Put in freezer for 4 hours to set.&nbsp; Once the fruit layer has set, make the creamy ube layer.

Mix the rest of the evaporated milk (there should be half left) and half the Ube Cookie Butter Jar together.&nbsp; Mix well with a whisk in a small bowl.&nbsp; It's okay if there are tiny lumps of the cookie butter.&nbsp; It adds to the texture of the popsicle.

Take the popsicle mold out of the freezer and remove the cover.

Pour the ube mixture into the mold leaving about 1-2mm gap from the top to leave room for expansion during freezing. 

Freeze overnight.

To un-mold, dip the molds into a cup of warm water for 10 seconds and warm with your hands.  Carefully pull out the popsicle. Eat right away.

HONEY LEMONADE POPSICLES

lemon juice (fresh-squeezed)

honey (simmer

water (cold)

Edible flowers if you desire

Squeeze lemons to make 1 cup lemon juice

In a small saucepan add ½ cup honey and ½ cup water and simmer until honey is reduced and melted

In a container with a spout, add the lemon juice, honey water, and 1½ cup cold water

Pour into popsicles molds and add edible flowers

Place sticks in and freeze them overnight

Dairy Free Strawberry Banana Smoothie Popsicles

Coconut Milk (divided into 1 cup for the smoothie, 1 cup for the stripes.)

In a blender, combine yogurt, banana, strawberries and 1 cup coconut milk. Feel free to add more milk for desired consistency.

To make striped smoothies, pour a small amount of the smoothie mix into each popsicle mold. Freeze, then do a layer of coconut milk.&nbsp;Freeze again and continue the layers until you reach the top.

For solid smoothie pops, fill the mold to the top with the strawberry smoothie mix and freeze. Drizzle with honey and top with granola!

How to make Makgeolli (Korean Rice Wine) Ice Cream without an Ice Cream Machine. Creamy, slightly sweet with a perfectly velvety texture.

Makgeolli Ice Cream - No Ice Cream Machine Needed

230 ml makgeolli

g sugar

150 ml whole milk

heavy whipping cream ((or whipping cream))

Tbsp corn starch

Make Makgeolli syrup by mixing 100 ml makgeolli + 100 g sugar in a small pot.

Bring to boil and then simmer on low heat until reduced by one half.

Mix corn starch and 50 ml milk. Set aside.

In another small pot, add 130 ml of makgeolli. Bring to boil, simmer on low heat until reduced by one half. Transfer to a bowl and it cool. Should make about 65 ml.

Once syrup and reduced makgeolli are cooled, in a pot,  add 100 ml milk, makgeolli syrup (50 ml) from 1, reduced makgeolli from 3 (65ml).

Use a whisk to stir gently and mix everything together. Bring to boil. Reduce to simmer.

While simmering, stir cornstarch + milk mixture once again, then add the cornstarch + milk mixture to pot. Continue to whisk until things thicken. Turn off heat. When finished, consistency should be runny. If it seems to be too thick for some reason, add a little extra makgeolli and simmer another 30 seconds or so.

Add salt to 5, mix and let it cool.

When the ice cream base has cooled, whip the heaving cream until you get a soft peak.

Add ice cream base and lemon juice to whipped cream. Carefully mix everything together by folding everything until well mixed. Optionally add chopped nuts in this step to make a nutty ice cream.

Transfer ice cream mix to a container (something that has straight edges on the side, not a curved bowl) that is at least 5 x 5 inches or wider.&nbsp;

Cover and freeze.

After 5-6 hours, check to see if it has started to harden on top and then use a fork to scrape the top and fluff things up. Repeat 2-3 times. This way, ice cream feels more like a sorbet than a heavy ice cream.

Paletas de Fresas (Mexican Strawberry Popsicles)

Set aside 3 strawberries.

In a food processor or blender, puree the rest of the strawberries. Strain the mixture through a strainer into a large bowl. Discard the seeds.

In the same food processor or blender, add ½ cup milk and sugar. Process until the sugar has dissolved completely, about 1 minute. Add to the puree.

In the same food processor or blender, roughly blend the reserved 3 strawberries into ¼-inch pieces. Pour into the puree.

In the puree bowl, add the rest of the milk and heavy cream. Mix well. Fill the popsicle molds with strawberry mixture. If using molds that contain sticks or hold wooden ones in place, put on lids and freeze. If using open cup molds, freeze until beginning to set, about 2 hours, then insert the sticks and put back in freezer.

After about 8 hours, popsicles are ready. If the popsicles are stuck in the molds, dip the molds in warm water for 10 seconds or so. Remove molds and serve.

Popsicles have never been so satisfying! (Please note that the recipe requires an additional 4+ hours for freezing before popsicles are ready to eat.)
