This is a fun recipe and so delicious. Now you can enjoy a restaurant favorite right at home that’s made healthier but, no one will know. They’re that good!  Enjoy!!

Twice Baked Potatoes

russet potatoes

milk, I used 2 percent

-1/3 cup butter or margarine, softened

tsp salt

tsp black pepper

onion powder

turmeric

onions chives

plain Greek yogurt sour cream

sour cream yogurt

1.Bake potatoes as directed http://pamsdailydish.com/how-to-make-the-perfect-baked-potato/2.When potatoes are cool enough to handle, cut lengthwise in half; scoop out inside, leaving a thin shell. In medium bowl, mash potatoes with potato masher. Then, switch over to a hand held mixer. 3.Add milk slowly and beat on low speed. Trying to get all the lumps out.4.Add butter, salt, pepper, onion powder and turmeric. Beat slowly then turn to medium high. Whip until smooth and fluffy. Add yogurt. Beat on slow to incorporate.5.Stir in cheese and scallions.6.Scoop out potato mixture into shells. Place on cookie sheet.7.Bake at 400 degrees for about 20 minutes. Take out and add a little cheese on top. Put back in for 5 minutes just for the cheese to melt.8. Top with additional yogurt or sour cream and enjoy the creamy, cheesy yumminess!

These Chili-Stuffed Baked Potatoes are basically piling comfort food on top of comfort food for a warm, delicious meal that will fill up everyone. They’re also a great way to use up leftover Chili or Chili Mac! Simply bake your potatoes and smother them with the warm, delicious chili and sour cream and cheese for pure food heaven.

Chili Stuffed Baked Potatoes

large Russet baking potatoes

olive oil

salt

prepared Best Chili on Earth

cheddar cheese (shredded)

sour cream

chives (chopped)

Make the Baked Potatoes: Preheat the oven to 400 degrees F. Run the potatoes under cold water, scrubbing with fingers or a small brush, until clean. Poke holes all around the potatoes using a fork.

Rub approximately 1 tablespoon of olive oil over the entire surface of each potato. Coat with seasoned salt and place in the center of a rimmed baking sheet. Bake in the preheated oven for 1 hour, or until a knife or fork can be easily inserted into the centers.

During the last 15 minutes of baking the potatoes, heat the Best Chili on Earth in a saucepan over medium heat until simmering.

Assemble the potatoes: Remove the potatoes from the oven but keep them on the baking sheet. Cut them down the centers lengthwise. Top each potato with 1 cup of the warmed Chili or Chili Mac and 1/4 cup of the cheese. Return to the oven for 5 minutes, or until cheese is melted.

Remove from the oven and top each potato with 2 tablespoons of sour cream and 1 tablespoon of chives. Serve immediately!
