This Red Posole Recipe is a comforting Mexican stew filled with shredded pork and hominy in a warm red chile broth. It's easy to make and full of authentic Mexican flavor!

Red Posole Recipe

guajillo chiles, (seeds removed)

white hominy, (drained and rinsed (about 4 cups))

oregano

In a large bowl, combine the dried chiles and 3 cups of hot water. Cover the bowl with a large plate or aluminum foil, and let the chiles soak for about 5-10 minutes, until softened.

Transfer the softened chiles and the water they soaked in into a large blender. Add the salt, chili powder, cumin powder, minced garlic and Mexican chocolate. Blend until completely smooth.

Make the sauce

Season the pork with salt and black pepper. Heat a large pot or Dutch oven over medium-high heat. Add in the cooking oil and then the pork. Sear on all sides until nicely browned.

Add the red chile sauce and scrape the bottom of the pot with a wooden spoon to loosen all the brown bits.

Sear the pork

Add the chicken broth and stir until the red chile sauce and broth are fully mixed together. Bring the pot to a boil, reduce heat to a low simmer and cover. Cook for 2 to 3 hours, until the pork is fall apart tender.

Shred the pork with a fork or spatula (it should fall apart very easily). Add the hominy and dried oregano. Stir to combine. Bring to a boil and remove from heat. Taste and season with more salt, if necessary.

Serve with toppings such as finely shredded cabbage, cilantro, lime juice, thinly sliced radishes, diced onions, dried oregano and red pepper flakes.

Posole will keep covered in the refrigerator for up to 5 days, and improves with flavor the longer it sits. You can also freeze it for up to 3 months.

Combine pork, sliced onion, 6 garlic cloves, salt, bay leaves and oregano in a large soup pot. Cover with water by 2-inches and bring to a boil over medium-high heat.

Skim off any foam, lower the heat to a simmer, and cover. Cook until pork is very tender, about 3 hours.

Meanwhile, place chiles in a dry cast iron frying pan or comal and toast on all sides until darker in color and fragrant. Transfer to a heatproof bowl and cover with hot water. Let soak until soft, about 30 minutes.

Drain chiles (saving the water) and place in a blender. Add chopped onion, garlic, cumin, cloves, and salt, and about 1/2 cup of the chile soaking liquid. Blend on high until smooth (you may need to add more soaking liquid to get the blender moving).

Heat the oil in a large frying pan over medium-high heat. Carefully pour the chile sauce into the hot oil (it will splatter) and stir until sauce is fragrant and fried, about 5 minutes. Remove from heat.

Once pork is tender and easily pulls away with a fork, remove it from the broth and set aside to cool. Strain broth, discard the solids and wash out the pot. Return broth to the pot, you should have about 10 cups. Add more water if needed.

Return broth to a simmer. Once pork is cool enough to handle, shred into bite-sized pieces, removing any gristle or fat. Return shredded pork to the pot with the broth. Add chile sauce and hominy and bring to a simmer. Taste and add more salt if needed. Serve with as many of the garnishes as you&#8217;d like.

Rub the pork down with a little salt and some freshly ground black pepper.&nbsp; Heat the lard/oil over high heat in a heavy stock pot or Dutch oven&nbsp;and sear the pork on all sides until nicely browned.&nbsp; Remove and set aside.

Lower the heat to medium-high and add the onions, cooking until lightly browned.  Add the garlic and cumin and cook for another minute.

Return the pork roast and add the chicken broth. Add the Homemade Authentic Red Chile Sauce along with the bay leaves, salt, pepper, Mexican oregano and smoked paprika.Simmer covered over low heat for 2-3 hours or until the roast is fork tender and falls apart.

Transfer the roast to a plate and use two forks to shred the meat.Return the shredded pork to the pot, stir in the masa harina and add the drained hominy.Simmer covered for another hour. Stir in the cilantro and simmer another 5 minutes. Add more salt and pepper to taste.

Serve garnished with shredded green cabbage, sliced red radishes, diced avocado, sliced limes, chopped cilantro, etc.&nbsp; Want some crunch?&nbsp; Add some toasted tortilla strips.

cucharadas soperas de aceite vegetal

cucharadita cafetera de orégano mexicano

Sal al gusto para sazonar

lechuga finamente picada

taza de cebolla blanca finamente picada

taza de rábanos finamente rebanados

Chile piquín recién molido al gusto

Orégano mexicano al gusto para sazonar

Tortillas doradas ó tostadas de paquete (2–3 por persona)

Limones cortados en cuartos

Pon el agua a calentar en una olla grande. Agrega la cebolla, el ajo, la sal, la carne y las costillas. Deja que suelte el hervor y después baja la flama para que se cocine la carne por aproximadamente 2 horas y media, o hasta que ésta se despegue del hueso.

Mientras se cuece la carne, remueve con un cucharón la capa de espuma y grasa que se vaya formando en la superficie del caldo. Si es necesario agrega más agua caliente para mantener el mismo nivel de caldo en la olla.

Cuando la carne se cueza, sepárala del caldo. Quítale al caldo el exceso de grasa, los huesos de las costillas, la cebolla y el ajo.

Para preparar la salsa, remoja los chiles anchos y guajillo durante 25 minutos en suficiente agua que los cubra.

Una vez que los chiles estén blandos, escúrrelos y colócalos en la licuadora junto con el ajo, la cebolla y el orégano, agregando un poco del agua donde se remojaron éstos. Licua hasta que tenga la consistencia de una salsa suave.

Calienta el aceite en un sartén a temperatura media alta; agrega la salsa, y sazona con sal al gusto. (Revuelve constantemente, ya que tiende a brincar). Reduce la flama y hierve a fuego lento por aprox. 25 minutos.

Agrega la salsa al caldo pasándola primero por un colador. Deja que suelte el hervor y agrega la carne. Hierve a fuego bajo por aprox. 10 minutos. Agrega el maíz y sazona con sal y pimienta. Sigue cocinando hasta que el maiz este cocido completamente.

Sirve el pozole en plato hondo y coloca la guarnición a un lado como se muestra en la foto.

Add water in a large stock pot.

To the stock pot, add the pork meat, onion, garlic, bouillon, bay leaf.

Bring to a boil, then lower heat. Let simmer for 2/12 to 3 hours, until meat is tender.

Once it&#039;s cooked, discard onion, garlic, and bay leaf from the broth.

Be sure to skim the fat from the top of the pot.

To Make the Pork:

While the meat is cooking, soak the ancho and guajillo chiles in hot water for 30 minutes or until they are soft.

Blend the chiles, garlic cloves, onion, oregano, salt, and 1 cup of the water used to soak the chiles.

Puree mixture until smooth.

For the Red Chile Sauce:

Place a stainer over the pot with the pork.

Strain the sauce into the pot.

Bring it to a boil.

Add white hominy.

Taste for salt.

Simmer for 10 minutes, or until hominy is heated.

Serve along with toppings.

Pour in enchilada sauce and chicken stock. Stir to combine, then turn heat up to medium-high bring to a boil. Cover, reduce heat to low, and simmer for at least 20 minutes or up to 2 hours.

Serve hot with garnishes like sliced radishes, chopped green cabbage, cilantro, lime wedges and tortilla chips.

Store in the refrigerator in a tightly sealed container for up to 3 days, or freeze for 3-4 months.
