Crunchy homemade high protein vegan granola that&#39;s super easy to make and tastes just as good as the shop bought kind! Enjoy with milk, sprinkle onto smoothies or as a crunchy snack on its own. I love serving it with Greek style yoghurt and berries.

High Protein Vegan Granola

oats*

tbsp protein powder

tbsp flaked almonds

pumpkin seeds

tbsp flaxseed

tbsp chia seeds

peanut butter

maple syrup

cinnamon

salt

Pre-heat your oven to 130C/150C fan.

Mix the oats, protein powder, nuts &amp; seeds, cinnamon and salt in a large bowl, then add the peanut butter and maple syrup. Mix until everything is well combined.

Spread the granola onto a baking sheet lined with baking paper.

Bake for 10 minutes, then give it a quick toss and bake for another 10 minutes.

Leave to cool completely. Enjoy!

A healthy stack of pancakes that&#039;s delicious, but also high in protein and fibre! A great way to start the day with a balanced and nutritious meal that tastes like a dessert.

Vegan High Protein Tofu Pancakes

tbsp protein powder (I used Bulk caramel gourmet vegan protein)

tsp baking powder

water

dark chocolate chips (optional)

Add all the ingredients (apart from the chocolate chips) to a blender/food processor and blend until you have a smooth batter.

Add more water/milk if the batter is too thick - 1 tbsp at a time. The consistency should be thick, but still pourable. Fold in the chocolate chips if using any.

Heat a little bit of oil in a frying pan over a low/medium heat. Once the pan is hot, pour 1-2 tbsp of the batter and allow to cook for a couple of minutes. Flip and continue cooking for another 1 minute until golden brown.

Sprinkle your favourite toppings and enjoy!

An Italian-ish smoosh flavoured with fresh basil, Parmesan, and fennel. The ultimate high-protein, low-effort lunch or dinner.

Chicken, Basil & Fennel Smoosh

Chicken Breasts

½ Cucumber

Avocado

Fresh Basil

Tbsp Cottage Cheese

Grated Parmesan

Tsp Fennel Seeds

Season your chicken breasts with salt, pepper, and a good drizzle of olive oil. 

Put your chicken breasts onto a baking try and cook for 30 mins until cooked through. While you’re waiting for your chicken to cook, chop your cucumber, avocado, and basil, and grate your Parmesan. 

Once your chicken is finished, chop it up into even-sized pieces and combine all of the ingredients in a large mixing bowl.

Now it’s time to ‘smoosh’ that over a few slices of toast, a pitta bread, a bagel, or whatever you fancy. 

Perfectly seasoned and marinated, these air fryer pork chops are juicy and tender are taken to the next level with our creamy mustard sauce spooned on top. A simple and seriously flavorful weeknight dinner!

Air Fryer Pork Chops

chives

thyme

garlic powder

onion powder

coriander

black pepper

avocado oil

pork chops

unsalted butter (divided)

shallots

garlic cloves

mustard

cognac (or brandy)

heavy cream

salt and pepper

In a small mixing bowl combine chives, thyme, garlic powder salt onion powder, coriander, pepper, and oil and whisk together until fully combined.

Place pork chops into an airtight resealable bag and top with herb mixture. Seal and mix until fully combined. Refrigerate and marinate for at least 1 hour and up to 24 hours

Spray air fryer basket with avocado cooking spray.  Place marinated chops into the air fryer basket.

Air fry at 400˚F for 10 to 12 minutes depending on desired doneness.

Place a small pan over medium heat and melt 2 1/2 tablespoon butter. Add shallots and garlic and sauté for 3 to 4 minutes.

Stir in mustard and cook for 1 minute.

Deglaze the pan with cognac and simmer until most of the liquid has evaporated.

Stir in cream and season with salt and pepper.  Lower heat to medium-low and simmer until cream has reduced by almost half and sauce has thickened.

Remove from heat and stir in remaining butter, in small amounts, constantly stirring, until fully incorporated and sauce is glossy.  Add more salt and pepper if needed.

Remove pork chops from air fryer and top with mustard sauce. Finished with sliced chives and serve.

0% Fat Greek-Style Yoghurt

Combine the oats, protein powder, cocoa powder and chia seeds in a dish, pot, tub or jar with a lid.

Pour in the milk, yoghurt and honey and mix until combined.

Put the lid on and store in the fridge overnight (or for at least 3 hours).

When ready to eat, remove from the fridge and top with an extra layer of yoghurt, some raspberries, a drizzle of honey and some shaved or broken-up dark chocolate.

Really lovely breakfast. Easy to prepare the night before. I usually make it in bulk for 3 of us to have for 2-3 days

Dice the peppers into small cubes and finely chop the parsley. 

Combine all of the ingredients in a bowl (juicing in the lemon) and season with a generous amount of salt and pepper.

'Smoosh’ it over toast, pitta bread, a bagel or whatever you fancy. Sprinkle over some sesame seeds and any remaining parsley and enjoy.

Delicious, simple to prepare and a lovely lunch on toast as others have said. I enjoyed all the lemon and vinegar.  It wasn’t too acidic for me.  Feels versatile too.  Could serve all sorts of ways eg with broccoli.

Really wanted to like this but it just felt bland and way too acidic. The other smooshes are much nicer.

Really nice except the juice of a whole lemon is way too much. I didn't even add the vinegar. Next time I'll just do half a lemon or the half the vinegar and see how it goes.

This was really tasty! I substituted the mayo for greek yoghurt and added another tbs. It was a little on the acidic side as I used jarred red peppers, so next time I'd decrease the vinegar / lemon to make up for this.

This is one wholesome savoury mince recipe that ticks so many boxes: it’s budget-friendly, quick to make, versatile, protein-rich, and can be served and modified in many different ways. It has everything you want in a healthy weeknight meal: protein, vegies and, perhaps most importantly, plenty of depth of flavour. Trust me when I say you’ll look forward to the leftovers.

💡 Tip: make a gluten-free version
To make this recipe gluten-free, swap the Worcestershire sauce with gluten-free Worcestershire sauce, use gluten-free stock and serve with gluten-free wholegrain bread. 

What goes into my healthy protein-rich savoury mince? Key ingredients:

Chickpeas: rich in anti-inflammatory plant protein, chickpeas boost the overall protein content while keeping the fat content in check. Chickpeas are also packed with dietary fibre, increasing satiety (the feeling of fullness), thereby supporting weight management.
Lean beef mince: using extra lean beef mince (5-10% fat) keeps the overall fat (especially saturated fat) and energy content down. In contrast, regular beef mince contains up to 20% fat. You can substitute the mince with any other extra lean mince (think pork, chicken or turkey), if you like.
Extra vegies: traditional savoury mince can be lacking in vegetables. I boosted the veg content with the addition of mushrooms (a valuable source of B complex vitamins), chickpeas, and frozen peas and corn.

Healthy protein-rich savoury mince recipe

4.60 gm extra virgin olive oil

brown onion, finely chopped

carrot, peeled, diced

button mushrooms, diced

garlic cloves, crushed

3.75 gm ground cumin

extra lean beef mince

44.40 gm no-added-salt tomato paste

tsp plain flour

Worcestershire sauce

(3/4 cup) salt-reduced beef stock

(1 cup) frozen peas and corn

can no-added-salt chickpeas, rinsed, drained

wholegrain sourdough bread, toasted

Step 1

Heat oil in a large, non-stick frying pan over medium heat. Add onion and carrot. Cook, stirring, for 4-5 minutes or until softened. Increase heat to high, add mushrooms and cook stirring, for 3-4 minutes or until browned. Add garlic and cumin. Cook, stirring, for 1 minute or until aromatic. Add beef mince and cook, breaking up mince with a wooden spoon, for 5 minutes or until browned all over.

Step 2

Add tomato paste to the pan and cook, stirring, for 1-2 minutes or until well combined. Add flour and cook, stirring, for 1 minute or until well combined. Add Worcestershire sauce and stock, and stir to combine. Stir in frozen vegetables and chickpeas. Reduce heat to low and simmer, partially covered, for 5 minutes or until vegetables are tender.

Step 3

Serve savoury mince on toast with spinach alongside.

This Protein Fluff is an easy recipe to serve as a fulfilling, refreshing post-workout breakfast bowl.

Protein Fluff

10.5 oz Ice Cubes (equivalent 2 cups)

Unsweetened Almond Milk

1.4 oz Chocolate Protein Powder (equivalent 1 scoop)

PB2 Powdered Peanut Butter (or more protein powder

1/2-3/4 teaspoon Xanthan Gum (or 2 teaspoons of ground psyllium husk)

Sweetener of Choice (maple syrup

Dairy-Free Dark Chocolate Chips

Peanut Butter (Unsalted)

Chopped Peanuts

In a high-speed blender, Vitamix-style (you need the tamper attachment for this recipe, otherwise, use a food processor):  add ice cubes, almond milk, protein powder, powdered peanut butter, and sweetener of choice.

Blend/process on the high-speed setting for about 1 minute, stopping the food processor if needed to scrape down the sides of the bowl or use the blender tamper attachment to push down the mixture next to the blade to encourage blending. Repeat until all the ice is processed into a creamy mixture.

Stop the food processor/blender and add 1/2 teaspoon xanthan gum (or 2 teaspoons of ground psyllium husk), and process/blend 30 seconds on high speed until it turns into a fluffy mixture. Add the extra 1/4 teaspoon of husk/gum if the mixture doesn&#39;t fluff as much as you like. But watch out! Adding too much of these ingredients turns the mixture slimy, and some people may find it difficult to digest. If too slimy, add more almond milk to compensate.

Serve immediately, don&#39;t store in the fridge or freezer.

I make a similar version every night! My secret ingredient is Simply Delish Pudding - 12 grams. Also salt! At least 1/4 tsp of a high mineral salt. 

I love the idea of waiting to add the xantham gum until after and I need to try it with psyllium husk! Thank you! 

However,  the one suggestion I must make, is instead of blending the peanut butter powder, to actually add it as a dry topping at the end! It’s sooooo yummy to have the dry texture contrasting the smooth protein fluff! Ahhh so good! I also like to add cacao nibs and puffed rice cereal on top too! 

Oh! And two more tips: I always put my bowl in the freezer when I start the process - it helps the fluff keep its perfect texture for longer. And I like to blend for at least 4-5 minutes. It totally makes a difference!
