I really liked them! I did an other muffin recipe with pumpkin not long ago that I thought were pretty good but these are better. My only issue was that the streusel topping became soft and didn't stay crispy after a few days... But overall those a really good. ;)

Pumpkin Spice Cupcakes With Cream Cheese Frosting

c. pure pumpkin

tbsp. molasses (not blackstrap)

Pumpkin Pie Energy Balls

c. old-fashioned rolled oats

c. unsweetened coconut flakes

c. unsweetened almond butter, warmed

pumpkin puree

golden raisins

maple syrup

We crave pumpkin flavored everything in the Fall. These Pumpkin Spice Almonds are roasted in your in oven and coated with delicious sugars, spices, and vanilla.

Roasted Pumpkin Spice Almonds Recipe

almonds

vanilla

water

brown sugar

white sugar

ginger

Preheat oven to 250 degrees.

Line a baking sheet with foil and spray with non-stick cooking spray. Set aside.

Whisk together your egg white, vanilla, and water.

Whisk until it begins to get frothy. It doesn&#39;t take long with just a regular hand whisk, or you can use a hand mixer.

Pour your almonds in the egg white mixture and toss until evenly coated. We found this to be easiest in a large mixing bowl.

To a large ziploc bag, add your dry ingredients and mix gently to combine them all within the bag.

Dump your almonds in the ziploc bag, zip it shut, and shake to coat your almonds. You should not have a lot of extra sugar in the bag, so keep shaking until totally coated.

Roast your almonds at 250 degrees Fahrenheit for one hour, tossing every 20 minutes to avoid sticking together.

Cool on parchment paper and store in an airtight container for up to 30 days.

Inspired by a recipe in 'The Craft of Baking,' by Karen DeMasco and Mindy Fox (2009, Clarkson Potter), this moist and irresistible pumpkin bread is wonderful for breakfast, or with an afternoon cup of coffee or tea. We wrote about it in December 2020.

DeMasco wrote in her headnote that she likes it toasted and spread with “a thick pat of nice salty butter,” but we’ve never gotten that far — once we cut a slice, it’s impossible not to gobble it up directly. DeMasco, in case you don’t know her, was the James Beard Award-winning pastry chef overseeing desserts at Tom Colicchio’s Craft, Craftbar and ’wichcraft from 2001 to 2008. 

We swapped out half of the all-purpose flour in DeMasco’s recipe for whole wheat flour (rye flour also works great), cut the white sugar by half and added freshly ground cardamom to the spice mix. Feel free to use all AP flour, double the white sugar and omit the cardamom if you’d rather try DeMasco’s original recipe. As DeMasco noted in her headnote, the flavors deepen as the bread sits, so it’s an ideal cakey bread to give as a gift or make in advance for the next day.
