Red Cabbage Salad with Apple

red cabbage ((6 cups finely chopped))

sauerkraut (well drained)

Finely chop cabbage and transfer it to a large mixing bowl.

Thoroughly squeeze sauerkraut by the fist-fulls to remove excess moisture until you have 1/2 cup of squeezed sauerkraut then add it to the salad bowl.

Add sliced cucumber and granny smith apple, chopped dill and green onion.

Drizzle the salad with 4 Tbsp extra virgin olive oil and 1 Tbsp white vinegar and 1/2 tsp sea salt*. Toss the salad well to combine and add more salt and/or vinegar to taste.

Spinach, Orange, and Red Cabbage Salad

Combine the spinach, cabbage, oranges, cucumber, and almonds in a serving bowl and toss together.

Dress as desired with oil and vinegar, then season with salt and pepper. Toss again and serve.

In a small jar, combine all of the dressing ingredients (lemon juice, vinegar, sugar, salt, sumac, and white pepper). Shake to combine.

In a bowl place your chopped cabbage. Add your dressing and massage it into the cabbage for around 30 seconds. Add the other vegetables and mix thoroughly. Taste and adjust salt if necessary. Enjoy!

Make the dressing. In a small bowl, whisk together the apple cider vinegar, Dijon mustard, grated garlic, honey (or maple syrup), salt, and several grinds of black pepper.

Slowly drizzle in the olive oil while whisking continuously until the dressing becomes smooth and emulsified. You can also add everything to a jar with a tight-fitting lid and shake well to combine.

Prepare the vegetables. In a large mixing bowl, add the shredded red cabbage, chopped parsley, grated carrot, sliced red bell pepper, diced celery, and diced apple.

Toss the salad. Pour the dressing over the vegetables and toss well until everything is evenly coated.

Add the nuts (optional). If using almonds or pecans, fold them in just before serving for extra crunch.

Let the flavors develop. For the best flavor, allow the salad to sit for about 10 minutes before serving so the cabbage softens slightly and absorbs the dressing.
