Easy Bean Dip

cream cheese (softened)

refried beans (canned)

taco seasoning

mild green chiles (diced and drained)

sour cream

green onions (divided)

jalapenos (chopped, optional)

cheddar cheese (divided)

Preheat oven to 375°F.

Slice green onions dividing the white and green portions. Set the green part aside.

Combine cream cheese, refried beans, taco seasoning and sour cream with a hand mixer on until fluffy.

Add the whites of the onions, jalapenos, chiles and 2 cups of cheddar cheese.

Spread into a 2qt (or 8x8) baking dish.

Top with remaining cheese and bake 20-25 minutes or hot and cheese is melted.

Serve with tortilla chips.

Preheat oven to 375 degrees F.

In a large bowl, combine the refried beans, Greek yogurt, green chiles, salsa, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Stir in 1 cup of the shredded cheese.

Spread the bean mixture into an 8x8-inch or 2-quart baking dish. Top with the remaining 1 cup of shredded cheese. Bake for 20 to 25 minutes or until cheese is melted. Remove from the oven.

Top the bean dip with sliced green onion, cilantro, avocado, jalapeños, chopped tomatoes, and queso fresco. Serve warm with tortilla chips.

Mix sour cream and taco seasoning together.

Prepare a 9x9 container with a lid and set it aside.

In a bowl, mash the avocados with the cumin, garlic powder, salt, and black pepper until chunky. Add the lime juice and cilantro, then mash further until creamy with slight chunks. Place an avocado pit in the bowl (to help prevent browning), cover, and refrigerate.

In a small bowl, mix the vegan sour cream with the taco seasoning. Taste and adjust seasoning as needed. Cover and refrigerate.

If the refried beans are too dry, drizzle a little olive oil and mix until smooth and creamy.

(16 oz each) cans refried beans

oz diced green chiles

hot pepper sauce

oz shredded cheddar cheese

oz shredded Monterey Jack cheese

Toppings: green onions, tomatoes, cotija, cilantro

Preheat

Combine

In a bowl, blend together the cream cheese and the sour cream. Add the beans, green chiles, taco seasoning, hot pepper sauce and lime juice. Stir in half of the cheddar cheese and half of the Monterey Jack cheese.

Transfer

Transfer the mixture to an oven proof dish. (I used a 12-inch cast iron pan, but a 9x13-inch baking dish will work, as well.) Top with the remaining cheddar and Monterey Jack cheese.

Bake

Bake in the preheated oven until the cheese is melted and the edges are bubbling, about 30 minutes.

Serve

Serve warm, topped with any desired toppings.

oz canned fire roasted diced green chilis

Grab a bowl. Add one can of veg refried beans (or use 2 cups of homemade!), vegan nacho cheese sauce, canned fire roasted diced green chilis, and seasonings - chili powder, garlic and onion powder, crushed red pepper, dried cumin, and salt.

Mix it all together until well combined! Top with pico de gallo for garnish if you like and serve with a generous helping of corn tortilla chips!

This dip can be served at room temp or oven hot. To heat, place dip mixture in oven safe dish and cover with foil. Bake at 375 for 20-25 minutes or until hot and bubbly!
