A Cajun-inspired rice pot recipe with spicy Spanish sausage, sweet peppers and tomatoes

Heat 1 tbsp olive oil in a large <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">frying pan</a> with a lid and brown 2 chopped chicken breasts for 5-8 mins until golden.

Remove and set aside. Tip in the 1 diced onion and cook for 3-4 mins until soft.

Add 1 thinly sliced red pepper, 2 crushed <a href="https://www.bbcgoodfood.com/content/top-five-garlic-gadgets">garlic</a> cloves, 75g sliced chorizo and 1 tbsp Cajun seasoning, and cook for 5 mins more.

Stir the chicken back in with 250g long grain rice, add the 400g can of tomatoes and 350ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender.

This Chicken Bibimbap is flavor-packed and makes a perfect lunch or dinner to share with a friend. You’ll start by tossing chicken in an easy garlic-soy marinade that will ensure your chicken is crisp and caramelized when you cook it. Then, you’ll keep building the dish with cooked carrots, spinach, and shiitake mushrooms. Fry up a couple of eggs and you’re ready to serve a delicious meal.

In a shallow dish, combine 2 cloves of garlic, the ginger, 2 thinly sliced scallions, the soy sauce, 2 tablespoons sesame oil, the mirin, and brown sugar, and whisk to combine.

Add the chicken and toss to coat. Cover with plastic wrap and let marinate in the refrigerator for 30 minutes.

Bring a large pot of water to boil over high heat and season generously with salt. Prepare an ice bath in a large bowl. Blanch the spinach in the boiling water for 30 seconds, then transfer to the ice bath to shock, then drain. Transfer to a small bowl and season with 1 teaspoon of sesame oil, salt, and pepper.

In a medium skillet, heat 1 teaspoon of sesame oil over medium heat. Add the carrots and cook until softened, 2-3 minutes. Remove from the pan and set aside. Season with salt.

In the same skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the remaining clove of garlic and cook for 30 seconds, until fragrant. Add the mushrooms and cook, stirring frequently, until softened, about 2 minutes. Season with salt, then remove from the pan and set aside.

In the same skillet, heat the remaining tablespoon of sesame oil over medium-high heat. Add the marinated chicken and sauté, stirring occasionally, until cooked through, about 5 minutes.

Heat a nonstick pan over medium-high heat. Melt the butter in the pan. Once the foaming subsides, crack the eggs into the pan and cook until the whites are firm and golden brown around the edges and the yolks are still runny, or to your desired doneness.

To assemble the bibimbap bowls, top the rice with the chicken, kimchi, sliced scallions, carrots, spinach, mushrooms, cucumbers, and fried eggs.

Watercress & chicken stir-fry

sunflower oil

chicken breasts,

cashew

red onion, chopped into large chunks

watercress

hoisin sauce

garlic cloves, crushed

tbsp sesame oil

tbsp rice vinegar vinegar

To make the sauce, mix all the ingredients together in a small bowl until completely blended. Heat the oil in a frying pan until very hot. Throw in the chicken, cashew nuts, pepper and onion, then stir-fry for about 4-5 mins until the chicken is cooked and the nuts are toasted. Pour over the sauce and simmer with a splash of water. Remove the pan from the heat, then stir through the watercress just before serving with boiled rice.

Cantonese Cream Corn Fish Fillet

Fillets

Salt

tbsp Vegetable Oil

Spring Onions (for garnish (optional))

Cornflour

Paprika

tsp Chilli Powder

tsp Garlic Powder

Egg (for the coating) (beaten)

Cream Style Corn* (see notes)

Eggs (beaten)

Season the fish fillets with some salt.

Mix all the coating ingredients (except for the egg) together.

Dip the fish fillet into the beaten egg (for coating) and then drench them into the cornflour mix until thoroughly coated.

In a large pan, heat oil over medium-high heat. Fry the fish fillets until golden brown in colour, roughly 5 minutes for each side. Add more oil if needed. Set aside and use a kitchen towel paper to soak up any excess oil.

In the same pan, pour in the canned cream corn and warm it under medium heat. Once it starts bubbling, turn down to low heat and slowly stir in the beaten egg. Keep stirring until the egg start to form egg ribbons.

Bring the fish fillets back into the pan and gently toss with the sauce. Garnish with chopped spring onions, if using. Serve immediately.

Instant Pot Mushroom Risotto

white wine (I love pinot grigio)

Press sauté button on the Instant Pot.

Once the Instant Pot reads “hot” add in 2 tablespoons butter.

Allow butter to melt.

Add in onion, salt, pepper, and red pepper flakes.

Cook for 3 minutes to soften the onions, stirring occasionally.

Add in mushrooms, garlic, and rice and cook for 2 minutes, stirring often.

Press cancel on the Instant Pot.

Deglaze with wine, then stir in veggie broth.

Cover and lock lid (ensure steam releasing handle is pointing to “sealing”).

Cook using the manual (or pressure cook) button (set to high pressure) and adjust timer on the Instant Pot to 5 minutes.

The Instant Pot will beep when it's finished.

Flip the valve to "venting" for a quick release.

Give the mixture a stir, then add in remaining 2 tablespoons butter, baby spinach, peas, cheeses, lemon zest, and lemon juice.

Taste and re-season, if necessary and enjoy!

Start by melting the butter in a large skillet over medium-high heat.

Add in the sliced mushrooms and let brown, stirring, for 10 minutes.

Next add the shallot, jalapeño, salt and pepper and let cook for another minute or two.

Deglaze the skillet with the marsala wine and let reduce for 2 minutes.

Add the soy sauce and stir, then add the cooked rice.

Stir together and then season with more salt and pepper to taste if needed.

Don't wash mushrooms. They absorb water which makes them harder to brown. Put them in a dish towel or bag and gently shake the dirt off. Great recipe. Looks delicious.

Just made this but added ground sausage to the mix. Omg so good, using the leftovers to stuff some butternut squash! This will be a fall staple.

I've mad this recipe a ciuple of times. The first one exactly like the recipe states. The second I added an item to add a slight crunch to give it some more texture. They were both excellant! I just wish I could remember the crunchy ingredient. LOL!

I love this recipe, especially the mushrooms. My husband loves sautéed mushrooms on his steak so this will be my go to recipes from now on. My only criticism would be that I found it to be a little salty, but that’s a very personal preference.  Reheats nicely.

Being from Louisiana, this is basically rice with soy sauce. Not impChelebaileyley1ileyressed.  Without the seasoning I added, it has to bland. But hey, to each her own....we like food with kick. This ain't it.

I stumbled on this recipe looking for a side dish.  I followed the recipe  but used chicken broth as I didn’t have marsala wine.  It was sooooo very good!   It tasted phenomenal the next day.
I just recently  made it again and added bacon and let me tell you, the flavors of everything just popped.  
This is the most simplest side dish recipe I’ve made that can be tweaked but tastes wonderful any which way you add to it.
I always double it!
