This Rice Pilaf recipe is perfect with anything from chicken to fish and makes a great change from plain white rice.

Rice Pilaf

unsalted butter

onion (chopped)

garlic (peeled)

rice rice

chicken stock

bay leaf

parsley

salt and pepper (to taste)

Melt the butter with the onion in a medium saucepan over medium heat and cook until the onions are soft, about 5 minutes.

Add the garlic clove and rice and stir until coated with the butter.

Increase the heat to medium-high.

Stir in chicken stock, bay leaf, and parsley. Season with salt and pepper, raise the heat to medium-high heat and bring to a boil. As soon as it reaches a boil, lower the heat to a low heat, cover and cook until all the stock has been absorbed by the rice and the rice is tender, about 15 to 18 minutes.

Remove from the heat and let sit for 5 minutes. Discard the bay leaf and garlic clove. Fluff the rice and serve.

Add rice to a fine mesh strainer or colander and rinse really well, until the water runs clear. Set aside to drain.

Melt the butter in a medium saucepan over medium heat. Add the rice and cook, stirring often, until lightly golden. Add onion, garlic, salt, and pepper and cook until onion has softened.

Add chicken broth and bring to a boil. Cover pot with a tight fitting lid and reduce heat to a simmer. (Do not ever remove the lid from the pot during cooking!) Cook for 15-18 minutes. Remove pot from heat and allow to rest, with the lid still on, for 10 minutes.,

Remove lid and gently fluff the rice with a fork. Gently stir in chopped parsley.

In a heavy dutch oven pot, sear the meat and drain any excess foam. Rinse if necessary. Pour 4 cups of water over the beef and simmer for 1 hour until tender. 

Remove beef and drain the water into a measuring cup. Add additional water to make 4 cups of water in total. Set aside.

Wipe clean pot and add oil, carrots and onion. Sauté for 15 minutes over medium-high heat. Bring the beef pieces back into the pot and add spices. Mix thoroughly.

Top with rice and a head of garlic. Pour reserved water from the beef over the rice and lightly shake to avoid any stirring. Bring everything to a light boil then cover and simmer for 30 minutes covered.

Stir in the broth, salt, and pepper. Bring to a boil, then cover with the lid, and reduce the heat to a simmer. Cook for 15 minutes. Remove from the heat and let stand, covered, for 5 minutes.

Remove the lid, and the parsley, and fluff the cooked rice with a fork, stirring in the parsley as you fluff. Serve immediately.

wild rice (, cooked and chilled)

Kosher salt

extra virgin olive oil

lemon juice

cranberries

In a small bowl, whisk together the olive oil, Kosher salt and lemon juice.

Toss gently with the cooked and chilled wild rice.

Add the dried cranberries, celery, pistachios and crumbled feta cheese, toss to combine.
