This is a classic Sunday dinner that the whole family will love. It’s super simple too. Always try to buy the best quality chicken you can afford – aim for RSPCA-Assured birds as a minimum, then trade up when you can. I’ve seen the way low-standard chickens are kept and I’d never feed them to my kids.

Ultimate roast potatoes

1kg Maris Piper potatoes

Put a <a href="https://www.bbcgoodfood.com/review/test-five-best-roasting-tins">roasting tin</a> in the oven (one big enough to take the potatoes in a single layer) and heat oven to 200C/fan 180C/gas 6.

<a href="https://www.bbcgoodfood.com/content/test-five-best-peelers">Peel</a> 1kg potatoes and cut each into 4 even-sized pieces if they are medium size, 2-3 if smaller (5cm pieces).

Drop the potatoes into a large <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">pan</a> and pour in enough water to barely cover them.

Add salt, then wait for the water to boil. As soon as the water reaches a full rolling boil, lower the heat, put your timer on and simmer the potatoes uncovered, reasonably vigorously, for 2 mins.

Meanwhile, put 100g duck or goose fat or 100ml olive oil into the hot roasting tin and heat it in the oven for a few mins, so it’s really hot.

Drain the potatoes in a colander then shake the <a href="https://www.bbcgoodfood.com/content/test-five-best-colanders">colander</a> back and forth a few times to fluff up the outsides.

Sprinkle with 2 tsp flour and give another shake or two so they are evenly and thinly coated.

Carefully put the potatoes into the hot fat – they will sizzle as they go in – then turn and roll them around so they are coated all over.

Spread them in a single layer making sure they have plenty of room.

Roast the potatoes for 15 mins, then take them out of the oven and turn them over.

Roast for another 15 mins and turn them over again. Put them back in the oven for another 10-20 mins, or however long it takes to get them really golden and crisp. The colouring will be uneven, which is what you want.

Scatter with Maldon salt and serve straight away.

Simple as roast potatoes are, there’s a handful of tiny, but important, details – picked up throughout my cooking career – that when combined give you this ultimate recipe, which I believe creates the perfect roast potato. What a luxury.

I expect many of us will be including many variations of roast potatoes on our Thanksgiving tables this November.But what do you do with leftovers? Leftover potatoes can, in general, be tricky to store and reheat properly. But with the right tools (*cough cough* this article) and the right method, you can reheat them so they&#39;re as good as when you first made them.

The BEST Way To Reheat Roast Potatoes

Grease a baking sheet with a fat of your choice* and place in the oven.

Preheat the oven to 400ºF (200ºC) with the greased baking tray inside.

Carefully arrange potatoes in a single layer on the preheated baking sheet. Don’t overcrowd because this will lead to uneven heating.

Bake for 8 to 12 minutes, flipping potatoes periodically.

These spuds really are a phenomenon. They look dark and gnarly, and they’re beautiful yet kind of charmingly ugly at the same time. The volume of balsamic used here requires you to have faith. Trust me – incredible things will happen.

I’ve always liked making this, since I was a kid. We’d have the pan going for well over an hour, slowly turning those precious leftovers into an incredible pile of gnarly, starchy, veggie gorgeousness. Good bubble & squeak is hard to beat.

The crispiest, most delicious roast potatoes you’ll ever eat. Follow the method to the letter. Roast garlic is key.

1kg Maris Piper Potatoes

Tbsp Goose Fat

Garlic Bulb

Thyme

Rosemary

Salt

Pepper

Peel your potatoes and quarter them. Add to a pan of boiling water with a large pinch of salt. Parboil for 10 minutes.

While the potatoes are cooking, add goose fat to a roasting tray. Place tray in the oven for 10 minutes so the fat can melt and heat through.

Drain your potatoes and re-add to the pan. Place a lid on top and give them a good shake. Remove the lid. The outside of the potatoes should be nice and fluffy. This is KEY to the crispiness.

Place your fluffy potatoes in the roasting tray. Add 10-12 whole garlic cloves (skin on), a large handful of rosemary, a large handful of thyme, a big pinch of salt and some pepper. Toss everything together. Place the potatoes in the oven for 1 hour and 15 minutes.

KEY PART OF THE METHOD. Every 25 minutes you need to remove the roasting tray from the oven and gently turn the potatoes in the goose fat. This will ensure a nice even golden outside.

Once the potatoes are gold all over, remove from the oven. Serve with some salt sprinkled on top and enjoy!
