This Turkey Breast is wet-brined overnight, for maximum flavor and moisture, basted in butter then roasted to perfection. This Brined Roast Turkey Breast is what Thanksgiving dreams are made of!

Brined Roast Turkey Breast

water

salt

cornstarch

Add the water to a large pot and bring it to a boil. For the orange, peel it using a potato peeler or a knife, then cut it in half. Cut the lemon in half and juice it. Add the remaining&nbsp;brine ingredients together (excluding the ice) and bring to a boil to dissolve all the salt and sugar. Add the lemon halves and orange halves after they've been juiced to the brine as well, they will provide more flavor. Remove from heat and cool completely. To speed this up add about 4 cups of ice to the brine. I used my instant pot for this but any big pot that will fit the brine and the breast will work.

Once the brine is cooled, place the turkey breast in the brine making sure it's fully submerged in it. You may have to weigh it down with another pot of water. What I did is wrapped the pot with plastic wrap, then placed a plate over it, and then a pot of water over the plate. This worked for me because the brine and turkey came up to the top of the pot. Another option is to use a brick or rock wrapped in plastic wrap. Store it in the fridge overnight or at least for 12 hours, so make sure you have enough room in your fridge.

Brining the Turkey Breast

Preheat your oven to 350 F degrees. Remove the turkey breast from the brine solution and pat it dry with paper towels.

Place the quartered onions and smashed garlic in a large metal roasting pan then place the turkey breast on top of the onions. Season it generously with salt and pepper on both sides.&nbsp;

Brush the turkey with melted butter, keep remaining butter for basting later. Add the chicken broth to the pan.&nbsp;

Cover the pan with aluminum foil and place the roasting pan in the oven. Cook covered for 1 1/2 hours, basting with the melted butter (remelt again if necessary) every half hour. After 1 1/2 hours, remove the aluminum foil and roast for another 1 hour or until golden brown. The breast is done when a meat thermometer inserted in the thickest part of the breast registers at 165 degrees F.

Transfer the turkey breast to a platter or cutting board and let it rest for a full 15 minutes before slicing into it.

Roasting the Turkey Breast

Skim some of the fat from the pan drippings if necessary.

Place the pan on the stove over medium-high heat. In a little bowl whisk together the cornstarch with the water, then add it to the pan. Whisk everything together. If the gravy is too thin and you prefer a thicker consistency, feel free to add more cornstarch until you reach the desired consistency. Cook for a few minutes, until the gravy thickens a bit. Taste for seasoning and adjust with salt and pepper as necessary.

Strain all the liquid into a bowl, then press all the liquid out of the onion and garlic using a spatula, for additional flavor.

Preheat the oven to 350 degrees. Rinse the turkey and pat it dry.

Combine the garlic, herbs, salt, pepper, and olive oil in a small bowl. Rub the mixture all over the turkey, top to bottom, and underneath the skin. Place in a roasting pan or a rimmed baking sheet. No rack required.

Roast at 350 degrees for 45 minutes to one hour, or until an instant read thermometer inserted into the thickest part of the breast, without touching bone, reaches 165 degrees.

Cover the turkey with foil and allow it to rest for at least 10 minutes. Carve and serve!

Roasted turkey breast is quicker to make than a whole turkey, but will still easily serve six. It&#8217;s unbelievably moist and juicy, too. It&#8217;s easiest to use a roasting pan with a rack. Since we&#8217;re only roasting the breast, the rack keep the breast upright. It is possible to roast turkey breast without a roasting pan and rack. In our photos, you&#8217;ll notice we used a baking dish without a rack. You can do this, as well. Use a dish that just fits the turkey breast, place it into the dish then if you find it to be unstable, use slices of orange to prop the breast up a little so it stands tall. (Instead of orange slices, try lemon or onion slices or even carrots).

Roasted Turkey Breast Recipe

Preheat oven to 450°F.

Place the turkey breast onto a 12-inch skillet. Brush the turkey all over with the melted butter and then sprinkle with the salt and black pepper.

Roast the turkey until an internal thermometer reaches 165ºF, about 45 minutes to 1 hour.

Remove the turkey from the oven and tent with foil to rest for about 15 minutes before serving.

Mayonnaise Roasted Turkey Breast cooks up wonderfully moist and tender every time and it is so easy.

Combine brown sugar, salt, pepper, paprika, and garlic powder in a small bowl.

Rub turkey breast with sugar mixture. Refrigerate 2 hours or overnight.

Preheat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil.

Spread mayonnaise over turkey. Srpinkle with chopped fresh herbs.

Place on prepared pan, skin side up. Bake for 30 minutes.

Reduce heat to 325 degrees. Baste with pan drippings and bake another 90 to 120 minutes or until it reaches an internal temperature of 165 degrees.

Let stand 15 minutes before serving.

Herb crusted and garlic stuffed Boneless Turkey Breast Roast is tender, juicy and perfect for any holiday dinner. With only 7 minutes of prep time, this flavorful main dish produces impressive results every time!

Juicy Boneless Turkey Breast Roast

lbs fresh boneless turkey roast (in casing)

garlic

tbsp extra virgin olive oil

Preheat oven to 350 degrees F.

In a medium roasting pan or Dutch oven, place turkey roast and make 10-15 inserts with a paring knife. Stick garlic slice into each one until you run out of garlic.

Rub roast with oil, then sprinkle with salt and pepper all around. Taking small handfuls of rosemary pat it onto the roast, then sprinkle some. The goal is to coat the roast in herbs.

Bake uncovered for 90 minutes.

Check with meat thermometer, it should read 160 degrees F.

Remove from the oven, cover and let rest for 10 minutes.

Internal temperature will reach 170 degrees F and juices settle.

Using  a sharp knife or scissors, remove the casing and slice.

Serve warm at a Holiday table with traditional sides of mashed potatoes and gravy, cold as an appy or use in sandwiches instead of deli meat.

Boneless Turkey Roast

Place roasting pan with juices from cooking turkey roast on medium heat. Scrape and shake rosemary and burnt on pieces from removed casing into the pot. There is a lot of flavor. Discard the casing.

Add broth and bring to a boil. Cook for 5 minutes and whisk to scrape the walls. Again lots of flavor in there.

Add white wine, butter, salt and pepper. Bring to a boil, reduce heat to low-medium and cook for 5 minutes.

In a small bowl, add a bit of gravy from the pot and cornstarch. Whisk well with a fork, pour back into the pot and whisk until gravy starts boiling.

Cook for 2-3 minutes or until thickened a bit. Serve with a turkey roast.

Boneless Turkey Breast Roast

Flavorful Herb Crusted Roast Turkey Breast, easy to make and the perfect size if you&#39;re cooking for one or two people. A wonderful alternative to roasting a whole turkey and no basting necessary!

Roast Turkey Breast

(2.5 pound) split turkey breast

salted butter (, softened)

Heat an oven to 400 degrees F. (200 degrees C). Rinse and pat dry the split turkey breast.

With your fingers, carefully separate the turkey skin from the meat and spread 1 tablespoon of the softened butter under the skin.

In a small bowl, mix together the remaining tablespoon of the softened butter, olive oil, dried rosemary, salt, and black pepper.

Spread the rest of the butter over the top of the turkey breast and place the turkey breast in a roasting pan.

Roast the split turkey breast for 45-50 minutes or until an instant-read thermometer inserted into the center of the breast reaches 165 degrees F.

Remove the turkey breast from the pan and cover and and rest for at least 15 minutes. Slice and enjoy.

In a small bowl, combine the butter, parsley, sage, and thyme. Set aside.

Gently pull the skin up from the breast of the turkey, creating a pocket. Take half of the butter and press the butter in between the skin and the breast meat on one side, then use the remaining butter on the opposite side. I think it’s easiest to put the butter under the skin, then evenly press it out on the outside of the skin.

Fill

Tuck the apple and onion into the small cavity under the bone.

Shake

Place the flour in an oven safe turkey bag. Shake to distribute it evenly.

Place

Place the turkey bread in the bag and set it in a baking dish that is at least 2 inches deep. Make sure the apples and onions are on the bottom.

Broth

Pour the chicken broth over the turkey, then tuck the edges of the bag under the breast and cut a few slits in the top of the bag.

Bake

Bake in the preheated oven until a thermometer inserted in the areas reads 165ºF., about 15-20 minutes per pound of turkey breast.

Remove the turkey from the oven and let it sit for at least 10 minutes before slicing.

This is the perfect way to enjoy Turkey for a couple.  
You can also buy prepared sides such as cornbread dressing, green bean casserole, and sweet potatoes at grocery stores, ie., Trader Joe's, etc.

This easy roasted turkey breast is just what you need for an intimate holiday dinner. It comes out of the oven perfectly moist and tender, with flawlessly crispy skin! Watch the video below to see how I make this in my kitchen.

Roast Turkey Breast (Herbed Garlic Butter)

(6 ½ pound) whole bone-in turkey breast

unsalted butter (softened at room temperature)

Make the herb butter. Preheat the oven to 325°F (160°C). In a small bowl, stir together the softened butter, garlic, rosemary, thyme, salt, and pepper.

Coat the turkey breast. With your fingers, gently loosen the skin from both halves of the turkey breast. Spread half of the butter mixture under the skin, all over the turkey breast, then smooth the skin and spread the remaining mixture evenly on top of the skin. Place the turkey breast in a 9x13-inch baking dish.

Roast. Roast the turkey breast uncovered for 1 ½ to 2 hours, until the skin is golden brown and an instant-read thermometer reaches 160°F (71°C) when inserted into the thickest part of the breast. Remove the turkey from the oven and let it rest, covered with foil, for 15 minutes (the temperature will rise to 165°F (74°C).

Slice. Slice the turkey away from the breast bone, then slice it crosswise on a cutting board.

This was the perfect recipe for our family of three, for Thanksgiving. I shy away from cooking turkeys only because I've cant seem to make a moist one. This solves that problem! We are enjoying the leftovers as well. This is so easy to make and the best part is the wonderful flavor and the moistness (be sure to bring to room temp, I think that is the key). The gluten free gravy paired very well also. I plan to make this throughout the year!

I made this for Thanksgiving this year '24 and it was a hit. My husband seemed a bit skeptical that I could pull it off, since I've never done just a breast before, but it was great! The flavor was delicious and the turkey moist. What I didn't realize was the breast included all the ribs so I couldn't set it flat rather had to put it on its side-ish. But it still turned out so great

We downsized Thanksgiving a little bit this year, so for the first time decided to go with only a breast (albeit over 9 pounds) rather than a full bird.
