There are many ways you can cook asparagus﻿, but roasting is our absolute favorite. When the stalks darken and crisp, they're not burning, they're developing more flavor.  Here's to cook perfect asparagus every time. ﻿

Oven-Roasted Asparagus

Be honest: Do you have a veggie side with each dinner?

I love this but I think I put too much olive oil! Mine were not crisp at all, too soggy but still good. Maybe a higher heat first or put oil in pan then bake pan to get hot before putting the veggies in? I usually sauté. Is there special baking pans or should I use a cookie sheet?

I start with a plastic bag. Shake in garlic powder, Italian seasoning, salt and then add your best olive oil. Massage bag to combine the spices with the oil, and add the asparagus. Toss all together till every piece is coated and turn out onto a sheet pan. I roast at 400 degrees for about 10 min. till crisp tender, and no more. 
Always perfect.

Recipe was easy yet I used my Spanish Olive Oil +added some of the Italian extra virgin Olive Oil, that I purchase @ the Sugarloaf Crafts Festival  every year.  I also added the juice from a fresh lemon and about 2 very well diced garlic cloves to add to the flavor.  Also, I usually always use freshly grind my salt and my pepper (my pepper being a multi blend of many types of different peppercorns).

I prefer roasting in the oven at a lower temperature, starting at around 350 for about 15 to 20 minutes and then turn it down to 250 degrees for about another 15 minutes. Also I use real butter, real garlic, pink salt and fresh ground peppercorn medley. I have a question, who knows what fresh herbs are good with asparagus?

If you only roast for 10 minutes you won't get the charred yumminess! If it doesn't look charred enough at 25 minutes, I'll leave it in longer!

Roasted Asparagus

asparagus (woody ends trimmed)

Extra-virgin olive oil (for drizzling)

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Toss the asparagus spears with olive oil, season with salt and pepper, and spread them evenly on the baking sheet. Bake for 10 to 15 minutes, or until lightly crisp and tender. Squeeze with lemon juice and serve.

Perfect Roasted Asparagus

asparagus

Lemon juice

Preheat oven to 450 degrees F (232 C). Set out a large baking sheet (as original recipe is written // use more baking sheets as needed to avoid crowding).

Trim woody ends off of the asparagus (~1-2 inches from the bottom) and place the asparagus sprigs on the bare baking sheet(s). If you want to use parchment paper, refer to packaging for maximum safe temperature. We found a bare baking sheet yielded the best result.

Drizzle with oil and toss to distribute evenly. Sprinkle with sea salt and black pepper (optional). To encourage browning, avoid crowding the pan. The asparagus can touch but should not be overlapping.

Bake for 6-10 minutes or until lightly browned and tender when pierced with a fork. Should still have a little bite. Thicker stems will require longer cook time than thinner stems. Taste and add more salt to taste as needed.

Serve hot. Optionally, garnish with vegan parmesan cheese and/or a sprinkle of lemon juice and/or zest.

Best when fresh. Store leftovers in a sealed container in the refrigerator for up to 2-3 days. Reheat in a skillet on the stovetop until warm. Not freezer friendly.

I have always roasted asparagus at 400 degrees. Not usually happy with results. I am not an asparagus fan but other half is so I gave your temp and time a try. I was Leary, it didn’t look done enough. But was I wrong . The texture was perfect and had a nice crunch. Didn’t gag me like asparagus usually does

Roasted Asparagus with Dill Yogurt Sauce

asparagus spears (trimmed)

salt

plain Greek yogurt (or plain yogurt)

garlic (minced

Tbsp fresh dill (or 2 tsp dried dill)

fine sea salt

cayenne pepper

lemon juice

Extra virgin olive oil

Preheat oven to high broil with rack in the middle position. Place asparagus on a rimmed baking sheet, and drizzle with olive oil; toss to coat. Sprinkle with salt, and broil until asparagus is crisp-tender; about 3 to 5 minutes. Do not stir the asparagus.

Meanwhile, make the sauce: Combine the yogurt, garlic, dill salt, pepper, and lemon juice and whisk until creamy and smooth. Taste to adjust flavor and drizzle with olive oil.

Arrange roasted asparagus on a platter. Spoon Dill Yogurt Sauce over the asparagus spears. Add lemon zest and freshly ground pepper for garnish.

Miso-Roasted Asparagus and Pickled Carrot Sushi Bowls

carrots,

rice vinegar

sugar

white, short-grained sushi rice

water, plus water for rinsing the rice

asparagus spears

miso paste ((I used sweet white miso))

sesame oil

ginger root

radishes,

sesame seeds

nori

pickled ginger

lemon wedges

tamari, shoyu, or soy sauce

Use a vegetable peeler to peel the carrot into long, wide ribbons. Meanwhile, combine the vinegar, sugar, and salt in a mason jar or bowl, stirring to dissolve the sugar. Add the carrot, toss to coat, and let sit while you get on with the rest.

Pickle the carrot:

Place the rice in a bowl, cover with cool water, and swish it around to release the starches. Carefully pour off the water, then repeat 2-3 more times. Drain well. Place the rice in a small saucepan and add the 1 1/3 cups water, the sugar, and the salt. Place the pot over a medium flame and bring to a simmer. Immediately reduce the heat to low, cover the pot, and let the rice steam until the water is absorbed, 10-15 minutes. Remove from the heat and let stand 10 minutes. Test the rice - if it is too firm, sprinkle in a few tablespoons more water and repeat the steaming/standing process until the rice is tender, but still chewy. Fluff the rice with a fork, sprinkle the vinegar over the rice, and gently toss with a spoon to incorporate the vinegar. (Try to handle the rice minimally and gently to prevent if from become mushy.) Let the rice cool to warm or room temperature, 30-60 minutes.

Cook the rice:

Position a rack in the center of the oven and preheat to 375ºSpread the snapped and sliced asparagus on a rimmed baking sheet. In a small bowl, stir together the miso, sesame oil, lemon juice, grated ginger, and salt. Drizzle this mixture over the asparagus, toss to coat, and roast in the oven until crisp-tender, 10-15 minutes. Remove from the oven and let cool.

Meanwhile, roast the asparagus:

Divide the rice between 2 wide bowls (you may or may not want to use all of it). Top with the asparagus, pickled carrots, radish, cucumber, avocado, and a sprinkle of sesame seeds. Serve the bowls with nori strips, pickled ginger, lemon wedges, wasabi, and tamari or soy sauce. I like to mix together about a teaspoon of wasabi with a couple tablespoons of tamari, and pour it all over my bowl along with the juice from a lemon wedge or two.
