These golden roasted potatoes are the perfect side dish! The fresh herbs are optional, but quite nice. Recipe yields about 4 generous side servings (see note for multiplying the recipe).

Perfect Roasted Potatoes

garlic powder

rosemary (from about 3 sprigs)

Optional garnish: 2 teaspoons finely chopped fresh parsley

Preheat the oven to 425 degrees Fahrenheit with a rack in the middle of the oven. Line a large, rimmed baking sheet with parchment paper to prevent the potatoes from sticking.

Slice the potatoes into 2-inch chunks (slice small potatoes in half, larger potatoes into quarters, and so on). Place them on the prepared baking sheet.

Drizzle the olive oil over the potatoes, then sprinkle on the garlic powder, salt, and rosemary, if using. Toss with your hands until the potatoes are evenly coated in the mixture (it might seem like you don&#8217;t have enough oil, but you do—keep going!). Arrange the potatoes in an even layer across the pan with their flat edges against the pan.

Roast the potatoes for 40 to 45 minutes, stirring halfway, until the potatoes are deeply golden (check the undersides) and easily pierced through by a fork. Stir in the parsley, if using, and season to taste with additional salt and some black pepper (careful, the potatoes are hot). Serve promptly.

Best oven baked potatoes ever!  I make oven baked potatoes every week, but I slice them very thin.  This recipe, with the big chunks, makes a total difference.  It is so, so, so good! Baby New Potatoes (cut into 4 pieces each)

Vegetable Oil

rosemary (minced)

In a large bowl, add potatoes, oil, rosemary, garlic, salt, and pepper. Mix well.

Place the seasoned potatoes in the air fryer basket and cook at 400F for 15 minutes. Check to ensure the potatoes are cooked through.

Sprinkle lemon juice and chopped parsley onto the potatoes and serve.

With plenty of lemon and fresh rosemary, these roasted potatoes are a go with everything simple side that pairs with most main dishes.

Arrange the potatoes cut side down on a sheet pan. Spread them out in a single layer, so the potatoes are not overlapping, and they are making direct contact with the pan.

Roast the potatoes for 40-45 minutes until they are brown and crisp on the edges and soft in the middle. You should be able to easily pierce them with a paring knife.

Best Rosemary Roasted Potatoes

Preheat the oven to 450 degrees Fahrenheit.

Wash the potatoes, then dice them into 1/2 to 3/4 inch cubes. Finely chop the rosemary. Thinly slice the half lemon.

In a large bowl, stir together potatoes, olive oil, garlic powder, kosher salt, and several grinds of fresh ground black pepper.

Line a baking sheet with parchment paper or aluminum foil. Spread the potatoes in an even layer on the sheet. Top with the lemon slices and sprinkle with rosemary. Roast for about 30 to 40 minutes, until potatoes are cooked through and browned, stirring once (the exact timing depends on how thick the pieces are). If desired, garnish with another 1 tablespoon finely chopped rosemary.

Wonderful recipe that is tasty, nutritious and easy to prepare. I omit the salt, throw in several fresh garlic buttons, sprinkle sweet leaf and parsley flakes, then circle the mixture with thinly sliced potatoes that will become rosemary flavored potato chips!! Any leftovers taste even better the following day.😇
