(28 oz) can Mutti Whole Peeled Tomatoes

(8 oz) bottle clam juice

halibut (or white firm fish), cut into 1” pieces

lb clams or mussels

lb large shrimp

(14 oz) cans Mutti Cherry Tomatoes, drained (do not rinse)

tbsp balsamic vinegar

lemon juice

basil leaves, julienned

tsp salt

tsp pepper

lb Italian chicken sausage, raw links

basil leaves, julienned (more for serving)

onion, chopped

dry white wine

parsley and basil

In a large dutch oven heat olive oil over medium heat

Add onion and sauté until translucent, 3 minutes

Add garlic, oregano and thyme and continue cooking until fragrant

Add in red pepper flakes, tomato paste, salt and pepper and stir until incorporated.Using your hands, squeeze the tomatoes until crushed and add to pot

Pour remaining liquid from the tomatoes into the pot and stir to bring everything together.Add the wine and clam juice and bring to a simmer until sauce begins to thicken

About 10-15 minutes.Add the chicken stock along with the halibut or cod, shrimp and shellfish, bring to a simmer, cover and cook for 5 minutes

Discard any clams or mussels who’s shells did not open

Adjust seasoning as needed.Sprinkle with parsley serve immediately along with crusty bread.
BruschettaServes 4 
In a medium bowl, gently toss the curry tomatoes with all remaining ingredients

Allow to sit for at least an hour before serving to let the flavors develop

Serve over grilled chicken or steak or on top of crostini

Cassoulet Serves 4 
Preheat oven to 400°F.Heat the olive oil in a medium sized, oven proof skillet

In prepared skillet, brown sausage on all sides

Remove sausage from pan and set aside.Add onions to skillet and sauté until they begin to soften

Add in garlic and cook for another 1-2 minutes

While still over medium heat add in white wine, bring to a simmer until reduced by half (about 3 minutes)

Add in chicken stock, tomatoes, fresh basil, fresh thyme, salt and pepper and bring to a simmer

Place in the oven on the center rack and bake for 15 minutes.Garnish with extra fresh basil ribbons and/or parsley and serve warm along with toasted bread

Sprinkle the chicken thighs with 1 teaspoon salt and add them along with the tomato sauce to your pressure cooker, giving it a quick stir to combine.Cover with the lid

Cook on high (full pressure) for 5 minutes.Let the pressure release naturally for 10 minutes

Then do a quick release for any remaining pressure.While the chicken is cooking, bring the chicken stock to a boil in a medium sized pot, set over high heat

Whisk in polenta and cook, while stirring, until polenta has absorbed all the liquid, about 12-14 minutes

Stir in remaining 1 teaspoon salt and remove from heat

Cover with a lid until ready to serve.Use two forks to shred the thighs in the tomato sauce

Serve over polenta and enjoy!
*Note: If polenta thickens too much while cooling, return to heat and add in water, ½ cup at a time

**Note: This chicken is equally delicious over a bowl of pasta.

We can't have egg or dairy (other than butter and cheddar cheese) so I look forward to trying some of my normal modifications to these. I think they will swap well. 
FYI for any other lactose intolerant people out there, Follow Your Heart makes a great vegan parmesan . Kite Hill makes the best vegan sour cream (I've even been able to think it a bit with almond or oat milk and it is still great) and Follow Your Heart makes a wonderful Mayonnaise. It's in the refrigerated section. I limit gluten as well, and in my opinion Jovial Organic Brown Rice Pasta is the best. They are bronze pressed in Italy.

In a large skillet, set over medium-high, heat the olive oil until glistening.Season the chicken breasts with 1 teaspoon salt and the pepper.Add the chicken to the skillet and cook until golden on the bottom, about 5 minutes

Remove the chicken from the pan and set aside.Add the garlic to the same skillet and cook until fragrant about 1 minute

Thank you for giving me ideals on what to cook.  My family likes mine cooking but it's the same thing.  What I did was copy the ones I'm going to try on a word doc. then slowly add them and see what the family says.

This was a perfect dinner.  Everything item was delicious.  The sauce was tasty on chicken, beans and potatoes.  The beans were actually cooked to perfection, tender crisp.  My husband who is a picky person when it comes to recipes from the internet.  This time he had to admit that the dinner was tasty.

The only thing which I changed was the amount of honey and mustard.  I used a quarter of a cup of each which worked out great.  I will definitely make this dish again.

In a large bowl mix together the olive oil, lime juice and taco seasoning

Make the crema: Add the avocado, garlic, sour cream, salt, lime juice, cilantro and jalapeño to the base of a food processor

Blend until smooth.
Make the slaw: In a large bowl toss together the cabbage, raw onion and cilantro with 1/2 cup of avocado crema until fully incorporated.
Heat a large skillet over medium

Warm the tortillas, using a little bit of olive oil if desired

Once warmed/toasted, place them on a plate and cover them with a tea towel so that they stay warm
