These salad sandwich with herb mayo is the perfect quick and easy lunch recipe. Use any fresh vegetables you have to make a delicious, filling meal.

Easy healthy salad sandwich

mayonnaise

carrot

lettuce / arugula / baby spinach

Combine all the mayo ingredients and blend with an immersion blender until smooth. Alternatively, use a blender or food processor.

To assemble the sandwich, spread a generous dollop of the mayo onto each slice of bread and top with the vegetables and cheese. Sandwich, slice and serve.

Hard boiled egg, tomato, green onions, lettuce and mayonnaise create a true taste of Ireland in these savory sandwiches.

Start by preparing the filling for these sandwiches. Halve the tomatoes and scoop out the seeds and pulp, and discard. Dice the outer tomato flesh into 1/2 cm size pieces.

Slice the green onions very thinly.

Shred the lettuce leaves thinly and mash the hard boiled eggs.

Mix the mashed hard boiled egg, diced tomatoes, green onions, lettuce and mayonnaise.

Season the filling with salt and pepper to taste.

Butter each pair of bread slices on the touching, matching sides..

Divide the filling in two and spread over the buttered side of two bread slices.  Top each sandwich with its paired buttered bread slice.

Cut away the top crust of each sandwich.  Divide into four triangles by slicing each sandwich with two crossing diagonal cuts.

Arrange on a sandwich plate and serve with hot tea, and a side of chips or crisps.

Here&#039;s a twist on the chicken salad sandwich: healthy curry chicken salad full of chewy dried figs and crunchy cashews.

Healthy Curry Chicken Salad Sandwich with Figs

raw cashews (toasted and chopped coarse)

Dissolve 2 tablespoons salt in 6 cups cold water in Dutch oven. Submerge chicken in water. Heat pot over medium heat until water registers 170 degrees. Turn off heat, cover pot, and let stand until chicken registers 165 degrees, 15 to 17 minutes.

Transfer chicken to paper towel–lined tray. Refrigerate until chicken is cool, about 30 minutes. While chicken cools, microwave vegetable oil, curry powder, and cayenne, uncovered, until oil is hot, about 30 seconds. Whisk mayonnaise, lime juice, ginger, and curry mixture together in large bowl.

Pat chicken dry with paper towels and cut into ½-inch pieces. Transfer chicken to bowl with mayonnaise mixture. Add celery, shallot, figs, cashews, and cilantro; toss to combine. Season with salt and pepper to taste. Serve. (Salad can be refrigerated for up to 2 days.)

Recipe video above. Salad sandwiches can be so boring. This one isn&#39;t! I essentially treat it like a dressed salad stuffed in a roll with a little vinaigrette used to lightly pickle the carrot and dress the greens. Honestly, it is so much nicer than eating a mound of plain raw vegetables!

Dress carrot first - Whisk the Dressing ingredients in a small bowl. Pour 3/4 of the dressing in a separate bowl, add the carrot, toss with fingers. (Leave remaining dressing in the other bowl for now, there shouldn&#39;t be much).

Lazy smashed avocado - Use a fork to smush the avocado flesh in the skin with a generous pinch of salt and pepper. (If scaling up or you prefer being normal, scoop flesh into a bowl and smush).

Dress baby spinach - When you&#39;re reading to assemble the sandwich, toss baby spinach in the remaining dressing (&quot;wipe&quot; the side of the bowl clean).

Assemble - Cut bread roll in half. Smear lid and base with smushed avocado (1/3 - 1/2 cup). Place tomato slices on base, sprinkle with a pinch of salt and pepper. Top with baby spinach, beetroot, carrot then lastly the alfalfa. Place lid on, devour!

What a great salad sammo!  I've never been a fan, but this was so tasty, perhaps because of the dressing and seasoning, and I felt very virtuous.  Surprisingly for me, the beetroot was a good addition.  I used halved cherry tomatoes (less mess) and light rye bread.  Yumm!!
