Pan-Seared Salmon with Creamy Avocado Sauce

salmon

olive oil

Combine creamy avocado sauce ingredients in a blender, blend until smooth and creamy, set aside. If sauce is too thick you can add 1-2 tablespoons of water.

Season salmon filets with salt and pepper on both sides. Coat the bottom of a skillet with olive oil, over medium-high heat. Once oil is hot, add salmon filets and sear for 5-6 minutes. Flip and sear for 5-6 additional minutes.

Transfer salmon filets to a plate and top with creamy avocado sauce. Sprinkle with fresh basil and serve immediately with a lemon wedge.

I made this last night and it was absolutely delicious! I would definitely recommend it to anyone who wants a different twist on salmon.

Creamy Salmon Piccata

| 6 oz skinless salmon fillets

Salt and pepper (to taste)

flour ((OPTIONAL))

unsalted butter

dry white wine*

low-sodium chicken stock/broth ((fat free if you can find it))

cornstarch ((or corn flour))

lemon juice ((adjust

capers

reduced fat cream ((or heavy cream)*)

Lemon (to serve)

Season both sides of salmon fillets evenly with salt and pepper. Add ¼ cup of the flour to a shallow dish; dredge the salmon in the flour to evenly coat. Shake off excess.

Melt 1 tablespoon of butter in a large nonstick pan or skillet over medium-high heat. Add 1 tablespoon oil and swirl to mix through the butter. Add salmon; sauté 4 minutes on each side or until just cooked to your liking. Transfer salmon to a warm plate; tent with foil and set aside.

Add remaining 1 tablespoon butter (or oil) to pan and melt. Add the garlic; sauté for a further minute until fragrant. Add wine; bring to a boil scraping any browned bits off of the bottom of the pan. Cook until liquid almost evaporates, stirring occasionally. Add ¾ cup stock/broth to the pan along with the lemon juice; bring to a boil and cook for a further minute.

Mix 1 teaspoon of cornstarch (or cornflour) with 2 tablespoons of the reserved broth, whisking well to combine. Pour the mixture into the pan, stirring through the liquid to create a sauce. Cook for 1 minute or until slightly thickened. If it's not thick enough, mix the remaining cornstarch with the remaining broth and add to the centre of the pan. Stir in the cream and remove from heat and add the capers.

Place the salmon fillets back into the pan. Sprinkle with chopped parsley, pepper and add in lemon slices.

Serve immediately with the sauce over rice or pasta, vegetables of choice or with a salad.

Salmon with Herb & Garlic Cream Sauce

salmon fillets (, skinless (~180 grams/6 ounces each) (Note 1))

tsp black pepper

chicken or vegetable stock/broth (, low sodium)

cream (, heavy/thickened)

tarragon leaves* (, finely chopped)

tsp chervil* (, finely chopped)

tsp parsley* (, finely chopped, plus more for garnish)

Season: Pat salmon dry, then sprinkle with salt and pepper.

Pan-sear: Heat oil in a large non stick skillet over medium high heat. Add salmon, presentation side down, and cook for 3 minutes until golden brown.

Flip: Turn salmon and cook the other side for another 2 minutes, until the internal temperature registers 49°C / 120°F (for medium-rare, recommended) or until cooked to your taste (Note 5).

Butter baste: When it&#039;s almost cooked, add the butter. Melt, then spoon over the salmon a few times.

Rest: Remove salmon onto plate, and cover loosely with foil to keep warm.

Salmon:

Sauté garlic: Add garlic and stir for 20 seconds or until light golden.

Reduce wine: Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the wine-y smell is gone.

Thicken cream &amp; stock: Add cream and chicken stock, then simmer on medium heat for 2 - 3 minutes until reduced and slightly thickened.

Add parmesan &amp; herbs: Stir through parmesan (this will thicken sauce more), then the herbs. Taste sauce and see if more salt and pepper is needed.

Over medium heat, place a large skillet and add butter.

Once butter is melted and sizzling, add the flour, and whisk well to combine while cooking. Let it cook for about 1 minute while stirring.

Next, add slowly the light cream and continue to stir. Make sure not to pour the cream all at once, instead do it slowly.

Then, add garlic, lemon juice, lemon zest, dried herbs, salt, and pepper.

Once the sauce simmers, reduce heat to low and add shredded Parmesan cheese to the mixture. Stir for few seconds until the cheese fully melts.
