A scrumptious Italian Sausage Pasta loaded with browned sausage, onions, garlic, rigatoni, sundried tomatoes, and spinach all in an easy creamy parmesan sauce.

Italian Sausage Pasta Recipe

lb. Italian Sausage

onion

garlic

marjoram

black pepper

rosemary

thyme leaves

red pepper

rigatoni

chicken broth

heavy whipping cream

Parmesan cheese

tomatoes

baby spinach

Salt

Start browning the Italian Sausage in a large skillet over medium heat. After 3-4 minutes add the onion and continue cooking until the sausage is browned and the onions are soft. Reduce the heat to low.  Add the garlic, marjoram, black pepper, rosemary, thyme leaves, and crushed red pepper cooking for 1 minute while stirring constantly. Plate the sausage mixture and cover with foil.

Meanwhile cook the pasta according to package instructions and drain well.

Add the chicken broth to the skillet working to deglaze the bottom and collect all the brown bits. Add the heavy cream to the skillet. Bring to a boil and then reduce to a simmer. Let it reduce by about half.

Turn the heat to low and stir in the parmesan cheese, sundried tomatoes and spinach. Continue cooking until the cheese is melted and the spinach is wilted. Add the sausage mixture and pasta to the skillet. Stir to coat. Season with salt and pepper to taste. Continue cooking over low heat until the pasta dish is heated through.

Oh yum this looks like the perfect midweek crowd-pleaser for Autumn months. I'll keep this in my back pocket for the coming weeks.

This was DELICIOUS!!! Only change was I  used half and half since I had a full container. Great substitute but since it’s not as fatty/thick as heavy cream has to add some corn starch so FYI if you sub in half and half! So flavorful and easy. And made a lot for leftovers for lunches! Love that the spinach is in the pasta so no need for a side salad right?! 😂

My wife picked this recipe and I made it tonight.  I followed the recipe almost exactly and we loved it!

This was so tasty!!! I made some vegan modifications to your recipe. I used 1.5 cups of vegan Italian sausage crumbles, 1.5 cups of veg broth, 1 cup of almond milk with a tablespoon of cornstarch. I replace the parm with half a cup of shredded vegan cheese and served it with vegan parm.  I gave it 5 stars!!!

First time I made this meal. My daughter came across it. Only change I did was omit tomatoes. Tomatoes don't agree with us. Highly recommend this meal, you won't be disappointed.

The whole family loved this..The only thing is the recipe doesn’t say if you should cut up the tomato’s ..So I put them in whole .But then I noticed in the picture they are cut up..

We didn't leave it to reduce as long as we probably should have but just added some extra parm to help it thicken faster. It was excellent.

This cheesy casserole includes Tortellini pasta, sausage and store bought marinara!  So easy and so delicious!

Easy Tortellini Casserole

Preheat oven to 375 degrees.  Spray a large casserole dish or 9 x 13 baking dish with non stick spray for easy clean up.

Bring a large pot of water to boil. (start the sauce while the water comes to a boil).

Heat a large skillet over medium high heat.  Cook sausage and onion until fully cooked and crumbly.  Drain any excess grease if necessary.

Boil pasta according to package directions, less 3 minutes so tortellini is just al dente.  Firm on the outside but soft in the middle.  (It will continue to cook with the sauce in the oven).   When cooked, drain but do not rinse.

Add marinara to the cooked sausage and onion.  Bring to a simmer, stirring occasionally.

Combine the cooked tortellini with the sausage marinara.  Stir gently to not break up the pasta.

Layer half the tortellini in a large baking dish and top with half the cheese.  Top with remaining tortellini and finish with remaining cheese.

Bake at 375 degrees for about 20 minutes until sides are bubbly and center is hot.

Serve with a simple green salad and baguette if desired.

Our Spicy Sausage Pasta is hearty, full of flavor, and just the right amount of heat, with a rich tomato sauce that coats every bite.

Spicy Sausage Pasta Recipe

Pecorino Romano cheese (or Parmasean cheese)

olive oil

sweet onion (chopped)

basil (chopped)

garlic (finely chopped)

tomato paste

sugar

red pepper flakes (optional)

black pepper (to taste)

fine sea salt (to taste)

basil (for garnish)

Place a large skillet over medium heat.

Add the olive oil and chopped onions to the pan. Cook for about 5 minutes, stirring frequently until the onions become tender.

Add the garlic to the pan and cook for 1-2 minutes, until fragrant

Add the spicy Italian sausage meat to the pan and cook for 5-7 minutes, or until it is fully cooked and no pink remains. As it cooks, break up any big pieces with a spatula or spoon.

Scrape the little browned bits off the bottom of the skillet.*For an even more robust flavor deglaze the pan with 4 ounces of dry red wine.

Add the crushed tomatoes to the mixture.  Stir to combine and continue to cook until it comes to a light boil.

Add the tomato paste, granulated sugar, red pepper flakes, black pepper, and sea salt to the sauce, stirring until thoroughly combined.Simmer the sauce over medium heat while the pasta cooks.

Cook the rigatoni according to the package instructions for al dente.  Drain the pasta and reserve ½ cup of the starchy pasta water, if needed, to thin out the sauce.

Add the pasta to the tomato sauce and mix together until well combined.

Remove the pan from the heat and add the Romano cheese and fresh basil to the mixture. Stir to combine.

Serve with grated Romano or Parmesan cheese and savor the flavor!

I made this last night almost exactly as written with the exception of adding mushrooms. This is EXCELLENT! Husband said “ this is the best sauce he’s ever had”! Great recipe, thanks Chef!!
