Sausage Gnocchi Soup is flavor packed, creamy and hearty to warm the soul during soup season!  This soup comes together in one pot and makes a great weeknight dinner.

Sausage Gnocchi Soup

Pound sausage

olive oil

½ White Onion (diced)

carrots

Celery

Cloves Garlic (finely minced)

Thyme

Basil

Salt

Black Pepper

ups Low-Sodium Chicken Broth

Diced Tomatoes

17.6-oz Package Gnocchi

Cups Baby Spinach (washed and dried)

Cup Heavy Cream

Crumble and cook the sausage in a large soup pot or Dutch oven over medium heat until completely browned then drain and set aside and wipe out the pan.

Pour in the olive oil then add the onion and cook until it becomes translucent.

Add the carrots, celery, garlic, thyme, basil, salt and pepper and cook until the vegetables become soft, about 5 minutes.

Pour in the chicken broth and diced tomatoes and bring it to a boil over high heat then reduce the heat to medium and let it simmer for 15 minutes.

Stir in the gnocchi and spinach and cook for 2 minutes then pour in the heavy cream and let it simmer for another 5 minutes.

Serve with freshly minced parsley for garnish and toasted bread slices if desired.

hot sauce

chicken broth

heavy cream

potato gnocchi (in pasta aisle)

Parmesan cheese (grated)

baby spinach

EACH: basil, parsley, oregano, mustard powder

Pro Tip: Prepare/measure out all ingredients before beginning.

Heat olive oil in a large soup pot over medium heat. Add the sausage and cook and crumble to break it apart. Stir occasionally until cooked through, 7-10 minutes. Remove and set aside.

Add the wine and set the heat to medium. Use a silicone spatula to “clean” the brown bits from the bottom/sides of the pot, this will add more flavor to the soup. Bubble gently and reduce by half, about 4 minutes.

Add the butter, onions, celery, carrots, and garlic. Cook until softened, about 5-6 minutes. Add the soy sauce, hot sauce, and seasonings and cook for 2 minutes.

Stir in the flour and cook for 1-2 minutes.

Add the chicken broth in small splashes, stirring continuously. Add the heavy cream in the same manner. Bring to a boil, then reduce to a simmer.

Add the sausage back along with the gnocchi and simmer for about 5 minutes, refer to package instructions for exact cooking time.

Reduce heat to low and sprinkle in the Parmesan cheese, stirring continuously. Add the spinach and cook until wilted, about 3-4 minutes. Remove from heat and serve!

Absolutely delicious!  I really appreciate your recipes, they taste gourmet but are not out of reach to someone who's not on a professional level.  They've been a great fit for me as I've moved past basics but still don't want anything majorly complicated!  Thanks for the recipes!  I went light on the soy sauce and hot sauce, and added a touch of sugar and our whole family enjoyed it.
