Silken Tofu with Onion and Garlic. Chilled soft silky tofu that is garnished with a flavourful Chinese sauce containing green onions, garlic, white onion and soy sauce. Easy to make and delicious as a side dish. A vegan recipe ready in 15 mins.

Silken Tofu with Onion and Garlic (15-min. Recipe)

onions

white onion (finely diced)

garlic

tbsp oil

tbsp regular soy sauce

Carefully peel away the plastic seal on the silken tofu package. Hold the tofu in place and turn it upside down to drain the excess liquid over the sink.

Place the tofu over a paper towel to soak up the liquid.

Next place a plate over top of the tofu package and transfer onto the plate.

In a small pot set over medium heat, add oil followed by white onion, green onion and garlic. Saute for 5 minutes until fragrant.

Pour in the soy sauce and mix in with onions and garlic. Let this cook for another 2 minutes.

Pour the sauce over the silken tofu. Optional: garnish with sesame seeds and green onions. Enjoy!

Silken Tofu with Onion & Garlic

Ground pork stir fried with silken tofu in a rich, mildly spicy and deeply flavorsome sauce. Mapo Tofu is a classic Chinese dish full of protein, but this one is healthier as there's less of the chillies and oil. It's very easy to make and great for meal prep too.

Healthy Mapo Tofu

silken tofu

pork

garlic,

tbsp doubanjiang

soy sauce

tbsp miso paste

tsp Sichuan pepper powder

water

tbsp corn starch

tsp oil

Drain tofu and pat dry, then cut into 0.8 in cubes.

In a bowl, combine doubanjiang, soy sauce, miso paste, Sichuan pepper powder and half of the water.

Heat up oil in a non-stick skillet over medium-high heat. Add garlic and stir fry until fragrant.

Add pork to skillet and stir fry until golden brown.

Add tofu cubes and prepared sauce to skillet. Bring to a boil, then reduce heat to a simmer, stirring gently once in a while. Cook for 2 minutes.

In a small bowl, add corn starch and the remaining water and mix until combined. Add this mixture to skillet and let the sauce cook and thicken slightly or to your preferred consistency.

Taste and add more soy sauce and pepper powder if necessary.

Remove from heat and serve with steamed rice or noodles.

Protein overnight oats are a flexible, tasty, and satisfying way to start the day. This recipe offers two ways to make overnight oats with a nice amount of satisfying protein, with either vegan protein powder OR creamy silken tofu. Both are quick, easy and versatile.

Protein Overnight Oats (Vegan)

oats

chia seeds

serving plant-based protein powder, any flavor

unsweetened non-dairy milk

maple syrup

vanilla extract

sea salt

Stir together all ingredients in a bowl, jar or storage container.

Chill

Cover the overnight oats and refrigerate until ready to eat, anywhere from 3 hours to overnight. Enjoy as is, or serve with fresh fruit, nuts, seeds, nut/seed butters, or non-dairy yogurt.

For the protein powder oats:

Blend

In a blender combine the tofu, sweetener, vanilla, and salt. Blend until smooth. In a bowl or other container, combine the oats and chia seeds. Pour the blended tofu mixture over the oats, and stir until fully incorporated.

For the silken tofu version:

Creamy Tofu Pasta Sauce is a delicious and healthy alternative to dairy and a lighter option than vegan sauces made with nuts. Enjoy it on pasta as a garlicky tofu cream sauce, or add one more ingredient to transform it into a tofu cheese sauce that&#039;s perfect for mac and cheese! Only 7 ingredients and 10 minutes prep time. Gluten-free, oil-free and nut-free.Yield: makes about 2¼ cups of sauce, enough for 8 ounces of dry pasta. Double the recipe for a full pound of pasta.

Silken Tofu Pasta Sauce

silken tofu (I prefer the refrigerated type)

Tablespoons nutritional yeast (For the best flavor choose a non-fortified brand like Sari)

lemon zest, optional

lemon juice

white wine vinegar

fine sea salt

mustard,

red pepper

Plan

Note that as written the recipe makes about 2¼ cups of sauce, enough for 8 ounces of dry pasta. For a full pound of pasta, prepare a double batch of sauce.

Combine all ingredients except the roasted red pepper, if using, in a full size blender. Start on low speed, then increase to high. Blend until smooth. Stop to scrape down the side of the blender as needed.

Season

Taste the sauce, and add more lemon, garlic, salt, or nutritional yeast as desired. Add a small piece of roasted red pepper, if using, and blend again. Taste and add more if you like.

Simmer

If not serving right away, transfer to an airtight storage container and refrigerate until ready to use. Otherwise, pour into a saucepan. While whisking, cook over medium-low heat until bubbly and hot, 3-4 minutes.

Serve

Toss with your choice of cooked pasta, or serve as a sauce over roasted vegetables, potatoes, french fries, and more.

I made it in about 5 minutes, and took it to my sister's house where she was serving spaghetti with meat sauce. It was really good as a vegan alternative, and the omnivores who tried it, agreed.
