Slow-Cooker Beef Tacos

beef chuck roast (about 3 to 4 lbs.)

This is possibly the worst recipe I’ve ever gotten off the internet. The meat was tasteless and bland.

Had to shred the beef and immerse the shredding in the liquid and reduce in the oven to get the taco flavor into the meat.  Else we ended up with a bathed pot roast.

Chuck roast comes out of the Instant Pot tender and flavorful thanks to a generous sprinkle of Mississippi Roast Seasoning Mix, butter and pepperoncini peppers. Ideal for busy weeknights, it&rsquo;s also easy to whip up this meal in the slow cooker.

Instant Pot® Mississippi Roast

Add water to pot. Place roast in pot; sprinkle with Seasoning Mix. Top with butter and peppers. Close lid. Set Valve to Seal.

Set to cook for 60 minutes on MEAT/STEW function or until meat is tender. When done, quick-release the pressure. Let stand 10 minutes before opening lid. (Check manufacturer’s manual for safe operating directions.) Serve roast with peppers and sauce.

TO PREPARE IN SLOW COOKER:1. Place roast in slow cooker. (Omit water for slow cooker preparation.)2. Sprinkle roast evenly with Seasoning Mix. Top with butter and peppers. Cover. 3. Cook 8 hours on LOW or 4 hours on HIGH or until tender. Serve roast with peppers and sauce.

Balsamic Crock Pot Roast Recipe

c. beef broth

c. brown sugar

c. balsamic vinegar

soy sauce

salt

tsp crushed red pepper flakes

garlic (pressed)

baby carrots

lbs baby red potatoes (quartered)

In a small bowl whisk together beef broth, brown sugar, balsamic vinegar, soy sauce, salt, red pepper flakes and garlic.

Place beef roast in crock pot. Top with carrots and potatoes. Pour liquid mixture over the beef, carrots and potatoes.

Cook on low for 6-8 hours.

This recipe would have turned out so much better had I not put in any brown sugar at all. I put in less than the recipe called for and I still felt like I had spoiled a good roast. I love the savory taste of pot roast with carrots and potatoes and if you do too, don't add any sugar!!!
