Bottom round roast is a cut of meat that is affordable but has a tendency to be pretty tough. Learn how you cook a perfect, tender, medium-rare bottom round roast that can be sliced nicely.

The Perfect Bottom Round Roast

lb bottom round roast

Preheat the oven to 450°F or 232°C.

Remove the fully thawed roast from the fridge and remove it from the packaging.

Place the bottom round roast on a cutting board.

Brush the entire surface of the roast with olive oil (you can use avocado oil as well).

Combine all of the seasonings in a small bowl.

Rub the seasonings over the entire surface of the roast - top, bottom and all sides.

Place the roast in a cast iron skillet.

Cook for 20 minutes at 450 degrees.

Reduce heat to 170°F or 77°C and continue cooking low and slow.

Cook the roast until the internal temperature reaches around 135-140 degrees (medium-rare is 145 degrees but the roast will cook as it is cooling).

Slice and serve if you want to serve it medium-rare.

If you want to serve it medium or medium-well, slice the roast in the cast iron pan, pour 2 cups of beef broth in and heat on the stove over low heat until the slices reach the desired level of done.

Prepare the garlic by separating it and peel the cloves.TOP TIP: to peel the garlic in seconds, then simply break the garlic head/s up into cloves by bashing lightly with the palm of your hand and then add them to a Tupperware container or mason jar with a lid (or between two metal bowls) and shake VIGOROUSLY for 20-30 seconds. DONE! Even the ones that aren&#039;t fully peeled will be loose enough to peel off super easily.

Add the items to a deep baking tray or casserole dish. I placed the rosemary first, then added the garlic cloves and poured enough oil over to submerge the garlic entirely.It&#039;s best to use a smaller dish here with high sides, so you need less oil than a large oven-tray.

Slow roast the garlic in the oven for around 2 hours at 195ºF/90ºC  (fan-assisted). When ready the garlic will be tender and lightly golden but not too browned.I prefer a slower, low-temperature cook for better flavor but feel free to check on the garlic after an hour as it may already be good enough for you.

Allow the garlic confit to cool enough to remove any herbs (if you want to). To speed up the cooldown time, place your container of garlic confit within an ice bath. When cooled, transfer to a sterilized glass jar and move to the refrigerator immediately.

This recipe will give you succulent and non grasy roast pork with perfect crackling, step by step.

Slow Roast Belly Pork with Perfect Crackling

salt

cooking salt

vegetable oil

onions (sliced)

Bring the pork to room temperature and score the surface of the pork with fine lines.

Sprinkle the surface with table salt and leave for 30 minutes.

Heat the oven to 160FAN/180C/350F.

Wash off the salt and pat dry then put the pork on a rack over a roasting pan.

Rub the meat with vegetable oil and sprinkle with the sea salt.

Cover with foil and roast  for an hour and a half.

Slice the onions and cut the apples into wedges and place at the bottom of the oven tin.

Return to the oven for another hour.

Remove the foil and increase the oven to 180FAN/200C/400F for 30 minutes to crisp up the crackling.

Place it on a carving tray and cut off the crackling and put it on a separate plate.

Cover the pork loosely with foil and leave to rest for at least 15 minutes.

Drain the fat from the tray, reserving the juices, onions and apples.

Slice the pork and serve with chunks of crackling and the apples and onions on the side.

Soft, succulent and melt in your mouth - Greek slow-roasted lamb is a delicious and easy recipe that you can make at home. The lamb is slow-cooked in a sensational lemon and olive oil sauce, resulting in an incredibly tender and juicy piece of meat.

Greek Slow Roasted Lamb

garlic (peeled)

tsp oregano (dried, Greek variety)

lemons (juiced)

onions (quartered)

Rosemary

250 ml (1 cup) white wine

250 ml (1 cup) water

Preheat your oven to 220°C/465°F.  Start by trimming any excess fat on the leg of lamb.  Leave the good bits on top - they will render off and provide delicious flavour to our sauce.

Place lamb into your preferred roasting pan.  Then, using a sharp knife, cut slits into the lamb's flesh (top, bottom, sides).

Insert the garlic into the incisions you've made.

Season with salt, pepper, and oregano and rub well into the meat.  Drizzle the olive oil and roast in your preheated oven for 30 minutes uncovered. (see note 3)

Once it has browned, remove it from the oven and turn it upside-down.  Add the onions, rosemary, wine, lemon juice and water (or chicken stock).

Cover with parchment paper and cover again with aluminum foil.  Turn the oven down to 180°C/350°F and bake for 2 hours - make sure to check it every half hour and baste it with the juices.

Remove again from the oven, and add the potatoes (if using).  Cover with parchment paper and foil again, and cook for a further 1.5 - 2 hours or until the meat is fall-apart tender.

Remove the parchment paper and foil and cook uncovered for 20-30 minutes and allow the meat to brown.  Remove again and transfer the slow-cooked lamb to a plate or platter, cover loosely with foil and allow to rest before carving and serving with the sauce.  (see note 4)

Made it today, came out perfectly. Used the resting period to reduce the juices and to gives the potatoes some colour under the grill. No need for a knive for carving, was able to portion it out with a spoon. Tasted great! Thank you for a Well spelled out recipe, it was very easy to follow!

I searched the internet for a slow cooked lamb leg recipe and decided to make yours for a Greek dinner party which we hosted last night. Followed the recipe exactly as is and it was absolutely delicious with everyone coming back for seconds and third helpings.  Made it with the potatoes (I did take them out of the juices and put them on another baking tray for the last 30 minutes to crisp up) and the Greek lettuce salad.  Everyone asked for the recipe. This was outstanding. Used a lidded roasting dish for it, gave the the potatoes a squirt of lemon juice and transferred them onto the lid to crisp and brown,  along with some asparagus when l uncovered the meat. Because the dish was quite deep and narrow the jus hadn't reduced much so simmered it down while the meat rested. It not only tasted amazing it looked brilliant. Sadly l didn't get a photo of it because some VERY large chunks "fell off" while it was resting. Sorry, not sorry. Absolutely will make again and again.

Preheat Oven and Caramelize Onions

Preheat your oven to 325°F. In a large oven-safe Dutch oven over high heat, melt the butter and add the thinly sliced onions. Cook for about 5 minutes until softened, then add the dry white wine and season with black pepper. Continue cooking for another 5-8 minutes until the wine evaporates and the onions turn lightly golden.

Add Aromatics and Short Ribs

Stir in the sliced shallots, chopped garlic, fresh thyme, fresh sage, and chili flakes. Add the bone-in short ribs to the Dutch oven. Pour over 6 cups of low sodium chicken broth, add tamari, bay leaves, and star anise if using. Cover the pot with a lid.

Roast Short Ribs

Place the covered Dutch oven in the oven and roast for 2 1/2 to 3 hours until the short ribs are tender and falling off the bone. Add the baby carrots during the last 1-2 hours of cooking so they become tender but not mushy.

Prepare the Meat

Remove the Dutch oven from the oven and discard the bay leaves and star anise. Remove any bones and excess fat. Lightly shred the meat in the pot and taste the broth, seasoning with salt if necessary. Keep the pot over low heat on the stovetop to stay warm.

Toast the Bread

Increase the oven temperature to 425°F. Arrange the French bread slices on a baking sheet and toast in the oven for about 10 minutes until very dry. Then switch the oven to broil.

Add Cheese and Broil

Remove the toasted bread and top each slice with the shredded Gruyère cheese. Place the bread slices back under the broiler and broil for 2-3 minutes or until the cheese is bubbly and golden.

Serve

Ladle the short rib and onion mixture into bowls. Top each bowl with a cheesy toast slice. Sprinkle freshly ground black pepper and garnish with fresh thyme leaves before serving. Enjoy the warm, hearty comfort of this dish.
