Snickerdoodle Blondies

Cooking spray

c. (1 1/2 sticks) butter, softened

c. sugar

brown sugar

eggs

pure vanilla extract

c. all-purpose flour

cinnamon

baking powder

kosher salt

tbsp. cinnamon sugar

These are amazing! Everyone loved them and couldn’t eat just one. I have been making snickerdoodle cookies for years and I might have found their replacement. I followed the recipe which included using the 9x9 pan it called for. They came out look beautiful and were delicious.

This recipe is fantastic. I have to say that when I read everyone’s reviews and watched part of the video, all It did was confuse me. I decided to use the 13 x 9 pan at 350 For 25 minutes. These came out wonderful moist and I would definitely make them again

So easy to make and made with everything already in the pantry.

These are fantastic! Followed the recipe and as others have said, these do not pour, you need to spread them out by pressing the dough out. These are the best!!

These would have been great if they had been cookies. The texture was off for me and the entire thing lacked flavor. The saving grace was the cinnamon sugar mixture on top. Also there was a photo here last night that someone posted of them making these, and you guys removed it. That’s petty and it’s also censorship. Do you guys not want people sharing photos of themselves enjoying your recipes?

Snickerdoodle Blondies are impossible to stop eating...they're cinna-mazing.

All your favorite flavors of a cinnamon roll in an easy, buttery, chewy blondie swirled with cinnamon sugar and drizzled with a cream cheese icing. These cinnamon roll blondies are seriously delicious!

Cinnamon Roll Blondies

salted butter,

eggs egg

vanilla extract

salt

all purpose flour

white sugar

cream cheese

heavy cream

sugar

Preheat your oven to 350°F. Line a an 8 x 8 pan with parchment paper and set aside.

In a large mixing bowl whisk together the butter and brown sugar. Add the eggs, yolk, and vanilla extract and mix well.

In a separate bowl stir together the baking powder, salt, cinnamon, and flour. Add the wet ingredients into the dry and fold together until just mixed and no clumps of flour remain. Do not over mix.

Pour the batter into your prepared pan. Make the cinnamon sugar by combining the sugar and cinnamon. Drop large spoonfuls of cinnamon sugar on top of the blondie batter. Use a butter knife to create big swirls.

Bake for 30 to 40 minutes or until the brownies are golden brown and set on the edges and have puffed up. The middle will still be pretty doughy, but they will continue to cook as they cool!

While the cinnamon roll blondies cool, make the cream cheese icing. In a small sauce pan over medium low heat, combine the cream cheese, heavy cream, powdered sugar, vanilla, and salt, whisking constantly until everything is melted and combined. Take off the heat and allow to cool.

Once the blondies are cool, drizzle with the cream cheese glaze. Cut into 9 squares and enjoy!

These sound absolutely amazing! I can't wait to make them for my family! However, I don't see the measurements for the cinnamon and sugar. Am I missing them?

These were delicious but the consistency turned out more like a cake than a brownie. Also used dark brown sugar and they were quite dark! Any reason for that? Thanks !

I have made these three times so far because they're so delicious and everyone loves them! I used unsalted butter because it's what I had and just upped the salt by 1/4 tsp to compensate, and they're amazing! This is definitely the new recipe I'm pulling out when I want to impress.

I just put a batch of these in the oven, but I’m worried they are not correct! I ended up with a thick cookie batter-like dough and when I went to “swirl” in the cinnamon/sugar mix, all it did was make the top clump. The ingredients list says two eggs and an egg yolk, but in the directions is says to add an egg- as in singular- so I’m wondering if this is why. Keeping my fingers crossed they turn out ok, because I tasted the dough and it was delicious. Will let you know how it turns out :)

I’m so upset! Unless you’ve read through all of the comments, you wouldn’t know that you’re supposed to only use 1 egg!! I used 2 plus a yolk and mine are most definitely not done everywhere except the very edge! I baked them for 43 minutes. I just put them back in the oven but without a doubt they will be too done on the top and around the outside! I have been trying to make these for 2 weeks and finally had the time. This is so disappointing and I hate wasting money! :(

I have made this recipe many times, and it never disappoints! super moist, delicious, and fun to make! I would leave it in the oven for longer than the recipe says though, maybe 10-20 minutes more because they do take a long time to bake! Have a wonderful day :))

Just made them. Delicious. Very underbaked but I rebaked so should be ok. I think I should have mixed the butter, sugar eggs mixture more. ( consulted another sight about fixing under baked blondes and they suggested that). Will try again with that in mind but love the flavour and I’m sure they will be a hit at my work! Thanks

I made these and they turned out more like coffee cake (not that I’m complaining!) Is this because I over stirred or over baked? My oven runs hot, I checked at 25 mins and took them out at 30. The texture is definitely more cake-like than brownie. Also I used all the cinnamon sugar mixture on top and it coated the entire 8x8 pan edge to edge. Tried to do swirls but in the end I don’t think this is what you did for yours…all the cinnamon sugar on top made it hard to see how baked the Blondies were in the oven. Should I had done less?

These were delicious, and all my coworkers and family loved them! The only part I wasn’t sure on was how much of the cinnamon sugar I was supposed to add to the mix. Overall wonderful recipe that I’ll be making again!

These are so, SO good!! My hubby is a huge cinnamon roll fan and these were a big hit! The recipe is also super easy.

The reaction I received after making these was incredible. I tried this recipe for our annual baking day. My friends and I make tons of different recipes and then give the spoils to our friends and co-workers.  These blondies were the #1 favorite by everyone who received our baked goods. I have never had a response like that before. This is definitely going to be a regular addition to our baking day from now on.

My oven is usually pretty spot on with baking times, if not running a little hotter, but I don't know, the 40 minutes just didn't cut it. I think if I had them in a 9x13 it would have been perfect. Delightfully thick and chewy snickerdoodle bars dusted with a crunchy cinnamon sugar topping. An easy one pan dessert ready in 30 minutes.

Snickerdoodle Bars Recipe

(226 g) unsalted butter, room temperature

(200 g) granulated sugar

(65 g) light brown sugar, packed

vanilla

(280 g) all-purpose flour, spooned and leveled

cornstarch

cream of tartar

(50 g) granulated sugar

Preheat oven to 350°F. Line an 8 x 8 inch baking pan with parchment paper. Allow the paper to extend over the sides of the pan by 1-2 inches for easy removal of the bars once baked. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugars until light and fluffy, about 3 minutes.

Add the egg, followed by the egg yolk, mixing well after each addition. 

Add the vanilla and mix until incorporated. Scrape down the sides of the bowl.

In a separate bowl, whisk together the flour, cornstarch, baking powder, cream of tartar, cinnamon and salt. 

Add the dry ingredients to the butter and egg mixture in two additions. Mix only until a few streaks of flour remain. Do not over mix.

Transfer the dough to the prepared pan and use an offset spatula to level the top.

Whisk together the remaining sugar and cinnamon. Sprinkle generously over the top of the dough.

Bake in the center rack of the oven for 23-25 minutes or until the edges are set and the top is golden brown. A toothpick inserted into the center of the bars should come out clean or with a few crumbs remaining.

Remove the pan from the oven and cool completely on a wire rack before slicing into squares.

These were delicious and so simple to make. I was told by a coworker this was the best Snickerdoodle dessert they’ve ever had! Would definitely make again.

I baked these little gems for the ladies at the office, and they went fast! I also made a gluten free batch by simply substituting the wheat flour for GF flour--an equally sweet treat!  All of Heather's recipes are well written, easy to follow, and fail proof.

These turned out great. I browned my 3 sticks of butter to give it a caramelly flavor. The bars are in the oven now and I can't wait to try them....of course, I tasted a little bit of the batter. Delish! Thank you for posting these.

I made these for thanksgiving and they were sooo amazing. The recipe was super simple and detailed, so it was easy to follow along.

Followed the recipe exactly.  Turned out soft and feeling under baked despite baking them longer than the recipe called for and them finally passing the toothpick test.  I thought they were disgusting and tasteless but fortunately the person I made them for really liked them.  Only reason I gave it two stars instead of one.

I made these today and they were a huge hit! I will definitely be making them again.
