Life Changing Soft Scrambled Eggs

Melt the butter in a medium sized non-stick skillet over medium low heat. We want the butter to pretty much coat the whole pan.

Whisk the eggs. When the butter is just barely bubbling, add the eggs to the pan directly in the center so that the butter gets pushed out to the sides. ZERO STICKAGE. This is good.

Watch for the edges to just barely start to set, and then gently swipe a spatula around the edges of the pan to create large soft curds. Don&#8217;t flip the curds over. Continue this process, pausing in between to allow time for the eggs to cook but working quickly enough so as not to overcook the eggs, just gently pushing/folding the liquid eggs to form curds. The entire process should take 2-3 minutes or less.

When the eggs are barely set and you have some big folds of heavenly soft scrambled eggs laying in the pan, remove from heat. Serve on a breakfast sandwich or with your bowls or just by themselves. SO. AMAZINGLY. GOOD.

Coconut oil is so bad for you due to 15% of DV in saturated fat in one serving. No thanks.

You need to educate yourself beyond the trends. Coconut oil is extremely healthy and has an unmatched silky texture. Millions of  Asians eat it every day, all of their very long life, and never need a cardiologist. Give it a try. (Real oil, not hydrogenated over-processed nonsense.)

Use it externally for amazing skin and hair. Then imagine what it an do for your internal epithelial tissues.

Yes eggs cooked with coconut oil is the best! Ever since living in Thailand I can't go back!!! Btw these aren't a true soft scrambled. A true soft scrambled is the consistency of Gordan's. But these are perfectly cooked scrambled eggs.

I am also really picky about my scrambled eggs, and over time have learned the slower you cook them the better! It takes longer, but it's totally worth it!

totally agree on small pieces of scrambled eggs. Reminds me of something people bring you when you are sick. Love the croissant sandwich which is perfect for perfect eggs.

Try a spoon full of mayo (which is just oil infused egg really) before they go in the pan. Makes a big difference in the creaminess! 
When I make scrambled eggs I'm always sure to make way more than i need after discovering "The Queens Egg Salad" which uses scrambled instead of hard boiled eggs. Omg, it's another life changer! :) Bon Apetit!

These are exactly are you say - life changing. As a person who makes scrambled eggs for breakfast at least 3x a week, I just made these and WOW what a difference!!! I can't believe I've gone my whole life stirring them so much. Thank you Lindsay for this post!

I LOVE eggs:) There are so many ways to cook them and soft scramble is one of my favorites. Thanks for sharing your method, sometimes it's hard not to over cook or undercook the eggs, your pictures are very helpful.

Don't know if anyone is even reading this post any longer, but I thought of a couple things regarding soft scrambled eggs:  cooking the whites first until about half done, then fold in the yokes and continue cooking.  And always keep the heat down low.  Being patient isn't easy, but worth it!  Also, butter is not a bad thing ... it's sugar we need to avoid!

Soft-Scrambled Eggs

unsalted butter

Flaky salt,

pepper,

herbs of your choice, optional

In a medium sized bowl beat eggs along with salt until pale yellow, about 30 second.In a nonstick skillet melt butter over medium-low heat until it begins to start bubbling

Immediately begin sliding eggs across the pan using a rubber spatula

Continue to do this until eggs are barely set, about 2 minutes

Immediately transfer to plates to avoid over cooking and top with flaky salt and ground pepper.Optional Add ins: 
2 tsp fresh herbs after cooking, chives, basil, thyme, dill, finely chopped1 tsp red pepper flakes after cooking1 tsp everything but the bagel seasoning after cooking1 tsp hot sauce after cooking1 oz feta cheese after serving2 oz grated cheddar cheese, added after eggs go into the pan2 tbsp cream cheese, added a after eggs go into to the pan

These cheesy scrambled eggs are a high protein, filling breakfast! Plus this recipe produces a soft scrambled egg, not one that is stiff and dry.

Cheesy Scrambled Eggs

butter (salted

eggs ((I use large eggs))

salt (more or less to your liking)

ground pepper (more or less to your liking)

In a medium bowl whisk the eggs, salt, and pepper until well combined. 

In a nonstick skillet set over medium low heat add the butter. Once melted stir in the egg mixture, using a silicone spatula stir the eggs right away. Continue stirring and moving the egg mixture slowly but constantly. Cook for 2 mins.

Add the cheese and continue stirring, cook for 1 minute more. Remove from heat. The eggs will continue to cook even once removed from the heat. Serve warm, topped with additional salt and pepper if desired.

I use a blend of sharp cheddar, swiss, mozzarella, and asiago cheeses. seasoned with salt, pepper, tarragon, and cumin. I switch things up once in a while but that's my go to. Cheesy eggs are delicious!
