This easy sourdough dutch baby bakes up puffy in just 15 minutes. It&#39;s a great recipe for using leftover sourdough discard because you can mix the batter and bake it right away for a quick and easy breakfast or dessert!

Sourdough Dutch Baby (German Pancake)

butter (divided)

sourdough starter discard (room temperature)

whole milk (room temperature)

eggs (room temperature)

salt

vanilla extract (optional)

cinnamon (optional)

raspberries, blueberries, or blackberries

sugar

maple syrup

lemon wedges

Make sure ingredients are at room temperature. Wipe out your cast iron skillet with a cloth or paper towel and place it onto the middle oven rack. Preheat your oven to 425°F (218°C).

Melt 4 tablespoons of butter and transfer 2 tablespoons to a large mixing bowl. (Reserve the remaining 2 tablespoons to coat the cast iron skillet in step 3.)

Add the remaining ingredients to the mixing bowl and beat for 1-2 minutes using an electric hand mixer. (This can also be done in a blender.)

Remove the cast iron skillet from the oven and swirl the remaining 2 tablespoons of butter to coat the bottom and sides of the pan. Pour the batter into the pan and bake for 15-18 minutes. (Up to 20 minutes for a 9&quot; skillet.)

Top the dutch baby with a squeeze of lemon juice, berries, powdered sugar, and maple syrup. Serve while hot.

Preheat the oven to 425˚F.

Separate the eggs, and set the yolks aside. Using a large mixing bowl and electric mixer with whip attachment, beat the egg whites until very stiff.

In a separate large bowl, whisk to combine the egg yolks, maple syrup, 1 Tbsp melted butter, sourdough starter, milk, and sea salt.

Using a rubber or silicone spatula, gently fold the stiff egg whites into the pancake batter.

Melt the remaining 3 Tbsp butter in a heavy-bottomed, oven-safe skillet over medium heat. Pour the pancake batter into the hot skillet.

Transfer to the preheated oven and bake the Dutch baby pancake for 25 minutes or until golden brown.

Serve immediately with fresh berries and a dusting of powdered sugar or your favorite toppings.

Preheat oven &amp; skillet: Place your 10-inch cast-iron skillet in the oven and preheat to 425°F. The skillet should be very hot before adding the batter.

Blend the batter: In a blender, combine the eggs, sourdough starter, milk, sugar, salt, and vanilla. Blend until smooth and frothy, about 30 seconds.

Add butter: Carefully remove the hot skillet from the oven with hot mitts. Add the butter and swirl until melted, coating the bottom and sides. Immediately pour in the batter.

Bake: Carefully return the hot skillet to the oven and bake for 16–20 minutes, until the pancake is puffed and golden brown around the edges. Avoid opening the oven during the first 15 minutes, or it may deflate.

Serve immediately: The Dutch baby will start to fall as it cools. Slice into wedges and serve hot with your favorite toppings.

Easy and EVERYONE loves to eat it.   I whisked the batter which seemed to work fine.

Looks tasty and versatile since I can use active starter or discard. I don’t own a “true” cast iron skillet, but I have the next best thing: a smaller Le Creuset enameled braiser and dutch oven, will that work just as well for this recipe?
