Southwest chicken salad is a hearty &quot;main dish&quot; kind of salad. It&#039;s simple to make, filled with bold flavors, hearty enough to fill you up, and also makes for delicious meal prep.

Southwest Chicken Salad

chicken breasts (approximately 6 ounces each)

olive oil (divided)

limes

cilantro leaves

garlic (minced)

cumin

chili powder

salt

black pepper

romaine lettuce (chopped)

cherry tomatoes (halved)

black beans

corn (rinsed and drained)

red onion (thinly sliced)

avocado

olive oil

water (or more for thinner consistency)

cilantro, basil or parsley leaves

lime (juiced)

salt and pepper (to taste)

Mix Marinade

In a mixing bowl, whisk together two tablespoons of olive oil, with the lime juice, cilantro, garlic, chili powder, cumin, salt, and pepper. You can also pulse in a food processor until it&#039;s combined.

Marinate

Combine the marinade and chicken fillets in a shallow dish or plastic bag. Marinate the chicken for 2-6 hours in the fridge.

Blend Dressing

When the chicken is done marinating, make the avocado dressing. Place all the dressing ingredients to a food processor and blend until creamy. Set aside.

Cook Chicken

Heat the remaining one tablespoon of olive oil in a large skillet over medium-high heat. Then sear the chicken for 4-5 minutes on each side, until they&#039;re golden brown and have reached an internal temperature of 160 degrees fahrenheit.

Rest

Let the cooked chicken rest for a couple of minutes. Then slice into strips.

Combine Salad

In a large salad bowl, layer the chopped lettuce with beans, corn, tomatoes and chicken strips. Then drizzle the avocado dressing on top.

Prep ingredients:Wash and cut tomatoes in half lengthwise.Smash avocado and season with a squeeze (about 1 tablespoon) of lime juice and a pinch (about ¼ teaspoon) sea salt.Shred cheese.Rinse and drain garbanzo beans.

Grill chicken. Preheat the grill to medium-high heat. Season chicken with a drizzle of olive oil, sea salt, and black pepper. Grill over direct flames about 4-6 minutes per side, or until it reaches an internal temperature of 165 degrees F. Let rest for about 5 minutes, then slice thinly against the grain.

Make spiced garbanzo beans. Heat 1 tablespoon of oil in a nonstick skillet over medium heat. Add beans and sprinkle with taco seasoning, stirring to coat. Cook for 4-5 minutes.

To make chicken (if using): Preheat oven to 450ºF. Season chicken and bake for 17-20 minutes, (or until 165 degrees internally). Once cooked, cover with foil for 10 minutes to seal in the juices. Then slice into strips or dice into cubes.

While the chicken is cooking, you can make the dressing and prep the salad ingredients.

To make the dressing: Add all dressing ingredients to a food processor and blend until the mixture becomes very smooth and creamy, and there are no longer chunks of garlic, cilantro, or tomatillo.

To assemble the salad: In a large salad serving bowl, toss the chopped romaine lettuce with tomatoes, black beans, corn, red onion, jicama, cheese, and sliced/diced chicken. Drizzle and toss with avocado dressing just before serving. Enjoy!
