Our favorite Southwest Salad recipe is healthy and hearty and topped with a delicious homemade cilantro ranch dressing.

Southwest Salad Recipe

lettuce

orange bell pepper (chopped)

black beans

cherry tomatoes (halved

corn

avocado

chicken breasts (seasoned to taste, cooked and cubed)

green onions (optional)

chopped cilantro (optional)

Ranch dip or dressing mix ((or 3 tablespoons))

mayonnaise

sour cream

cilantro

garlic

jalapeños

milk

For the dressing, combine all ingredients in a blender, beginning with ⅓ cup of milk. Blend until smooth. Add more milk as needed until it is the consistency you like. Refrigerate dressing until ready to serve.

Place all salad ingredients in a bowl and stir to combine.

Drizzle with dressing before serving.

Southwest Salad

This healthy Spicy Southwestern Salad recipe has roasted sweet potatoes, black beans, corn, lettuce, and creamy avocado dressing!

Spicy Southwestern Salad with Avocado Dressing

potatoes

salt and pepper

sweet corn,

romaine heart, chopped

Greek yogurt

water

cilantro leaves

salt

lime juice

Preheat the oven to 400 degrees. Peel the sweet potatoes and chop into bite-sized pieces. Mix the olive oil, cumin, and chili powder together in a small bowl. Brush mixture on sweet potatoes. Roast for 10 minutes. Stir or shake the pan. Turn heat up to 425, and roast for another 10-15 minutes. Check, stir, and bake until the sweet potatoes are just barely roasty-brown on the outside. Season with salt and pepper.

Meanwhile, pulse all the dressing ingredients in a food processor until mostly smooth.

Toss the beans, corn, lettuce, and sweet potatoes with the dressing. Serve with chips and/or the other half of the avocado for extra yum!

Oh my goodness.  Saw this and had to run out and get some sweet potatoes.  I have all the other ingredients.  I don't like cilantro, so I substituted with Italian parsley.  This was a big hit with me and my husband.  Hubby likes side salads, but wants meat . . . with this salad he didn't need the meat or want the meat.  A delicious and fabulous salad. This southwest salad with shrimp has it all - crisp romaine, creamy avocado, hearty black beans and straight-from-the-cob corn with sliced red onions and cilantro. Then, it's topped with perfectly, pan-seared shrimp and finished with a drizzle of honey chipotle vinaigrette for a nice little kick of heat.

Southwest Salad with Shrimp

shrimp,

teaspoon baking soda

tablespoon olive oil

teaspoon garlic powder

Salt and pepper

head romaine lettuce, chopped

avocado, sliced

tomatoes tomatoes

black beans, drained and rinsed

corn,

red onion

cilantro, chopped

lemon juice

honey

olive oil

chipotle peppers

½ – 1 tablespoon adobo sauce

In a large bowl, cover the shrimp with cold water and stir in salt &amp; baking soda. Let the shrimp brine for about 30 minutes. Then, drain and pat dry with paper towels. Lightly season the shrimp with garlic powder, salt &amp; pepper.

Working in batches, sear the shrimp in a large non-skillet over high heat, turning once, until the shrimp have turned pink and are completely opaque (about 1-2 minutes per side). Transfer to a plate and set aside.

For the shrimp:

Combine ingredients in the bowl of a food processor or blender. Process until smooth.

Transfer to an air tight container and refrigerate until ready to use.

For the dressing:

Top with vinaigrette and toss to combine. Serve immediately.

Mix dressing. In a small bowl or 2 cup glass measuring cup, combine mayonnaise, sour cream, milk, and taco seasoning. Whisk until smooth and set aside in the refrigerator.

Prep ingredients:Wash and cut tomatoes in half lengthwise.Smash avocado and season with a squeeze (about 1 tablespoon) of lime juice and a pinch (about ¼ teaspoon) sea salt.Shred cheese.Rinse and drain garbanzo beans.

Grill chicken. Preheat the grill to medium-high heat. Season chicken with a drizzle of olive oil, sea salt, and black pepper. Grill over direct flames about 4-6 minutes per side, or until it reaches an internal temperature of 165 degrees F. Let rest for about 5 minutes, then slice thinly against the grain.

Make spiced garbanzo beans. Heat 1 tablespoon of oil in a nonstick skillet over medium heat. Add beans and sprinkle with taco seasoning, stirring to coat. Cook for 4-5 minutes.

Assemble salad. Layer greens onto salad plates. Top with sliced chicken cheese and drizzle with dressing. Add spiced garbanzo beans, tomatoes, smashed avocado, shredded cheese, and tortilla chips. Drizzle with more dressing if desired and serve with lime wedges.

This one surprised me. I’m trying to eat healthier and really enjoyed all the flavors. So happy to try something new and delicious too!
