Take two pieces of focaccia and spread on the special sauce.

On top of one piece of bread layer lettuce, turkey, bacon, tomato and cheese!

Making this DIY is so simple and easy, only requires a few ingredients, and is a great flavor addition to any dinner or meal prep. This homemade sauce is also gluten-free and dairy-free, low carb, and paleo!

Homemade Special Sauce: Whole30, Paleo, Keto Burger Sauce

mayo (homemade

tbsp finely chopped dill pickles

tbsp no-sugar ketchup

onion

tbsp coconut aminos

tsp dill pickle juice

tsp salt

tsp black pepper

Combine all of the ingredients into a sauce or storage container. Mix really well to fully incorporate everything together. Add more salt or garlic to taste.

Store covered in the fridge for up to 7 days.

Healthier In-N-Out Double Double & Animal Style Fries

93/7 ground beef, 170 g

Salt, a sprinkle

Low-fat American cheese, 2 slices

Hamburger buns, 1

Lettuce, undefined

Tomatoes, undefined

Russet potatoes, 2

Vinegar, a spoonful

Cooking oil, a spoonful

Salt,

Ketchup, 1 part

Mayonnaise, 1 part

Smoked Paprika, a sprinkle

Onion Powder, a sprinkle

Black Pepper, a sprinkle

Vinegar, a drizzle

Onions, 1

Cooking oil, a drizzle

Prep the fries ahead of time

Fill a pot with water and set it to a boil along with a few heavy sprinkles of salt. While that boils, peel the potatoes, then slice into planks, and then into thin fry shapes. Thinner is better here.

When the water is boiling, add the vinegar and the fries and boil for 8-10 mins.

Drain the potatoes and add them to a wire rack over a baking sheet. This is optional, but I toss these in the freezer for 4 hours or whenever I need them.

Freezing these ahead of time will lead to crispier end product, since the gelatinized starch will fully set on the exterior of each fry before roasting.

Roast the fries

Preheat the oven to 450°F/232°C.

Add a half spoonful (~7g) of oil to a sheet pan then toss it in the preheating oven. Once the oven & pan is hot, bring it back out and add the fries to the hot pan.

This speeds up the cooking process and jumpstarts the crispy exterior on the fries touching the pan.

Spread the fries around so they are all laying flat touching the oiled pan surface. Make sure you leave ample room in between each fry or they will just end up steaming instead of crisping.

First, roast the fries for 15 minutes. Bring the pan out and add the remaining half spoonful (~ 7g) of oil over top of the fries. Carefully flip all the fries over. Roast in the oven for another 15 minutes or until crispy and browned.

Mix the sauce & caramelize the onions

While the fries roast, prep the other toppings.

Dice a white onion (and maybe reserve some of this onion for raw slices to top the burger), and toss in a pan with a bit of cooking oil. Slowly cook down until caramelized and deeply browned.

If too much fond develops on the bottom of the pan and the onions threaten to burn, deglaze them with a splash of water.

In a bowl or container, add all special sauce components and mix to combine.

Sear the burger patties

Divide the ground beef into into two equal balls, about 85 g each.

Add the beef balls to a ripping hot pan or griddle and smash them straight down with a spatula. Press them down to make them as thin as possible. Give each patty a light sprinkling of salt.

Let these sear for about 45 to 60 seconds before flipping. Add one slice of American cheese to each and before stacking them up, add a spoonful of caramelized onions in between, and set aside.

Optionally toast your burger buns before assembly.

Assemble & serve

First, add about a spoonful of sauce to the buns. Add a tomato (which you should season with a sprinkle of salt), some thinly sliced lettuce, your patty stack, and some optional onion slices before closing up. 

For a serving of animal-style fries, take 125 g of fries, and top with caramelized onions to taste, an extra slice of American cheese, and about two spoonfuls of special sauce. Enjoy warm.

This Homemade Big Mac recipe features juicy beef patties, tangy sauce, and fresh toppings for a delicious fast-food favorite made right at home.

Big Mac

mayonnaise.

unsalted butter, softened.

white onion, diced.

Shredded iceberg lettuce.

80/20 ground beef.

Make The Spread

In a small bowl, mix together the mayonnaise, relish, ketchup, sugar, and vinegar. Set aside.

Prepare The Patties

Weigh out 8 portions of 3.5 oz of ground beef or eye it out. Gently flatten the patty into a circle to desired thin or thickness, making sure to not mix or mold it too much. Sprinkle with salt and pepper on both sides. Set aside.

Toast The Buns

Brush the insides of the buns with butter. Heat a pan or skillet over medium heat. Lay the buns butter side face down. Take them off the pan when a nice golden brown develops around the edges.

Cook The Patties

Over medium-high heat in a skillet or pan, add 1/2 a tablespoon of butter and 1/2 a tablespoon of vegetable oil. Add the patties in, two at a time or more if you have a large grill/skillet. Add a teaspoon of mustard on the raw side and spread evenly. It will take about 2-3 minutes for the patty to get a nice brown crust. Flip over and add a slice of American cheese on top of half the patties you cook since Big Macs only have 1 cheese but 2 patties. Let it cook for about 1 more minute for the cheese to melt. Take off the heat.

Assemble The Big Macs

To the bottom bun, add sauce, lettuce, onion, patty, and cheese. Then add the middle bun, sauce, lettuce, onion, pickles, and the second patty. Add the top bun. Enjoy warm!.
