Healthy, baked chicken nuggets with a little kick! I took my Healthy Baked Chicken Nugget recipe and and added a touch of spice!

Baked Buffalo Chicken Nuggets

garlic powder

paprika

tsp chili powder (use ground cayenne to make it hotter)

tsp black pepper

breadcrumbs

panko

olive oil spray (I used my Misto)

tbsp Frank's Hot Sauce (or Tabasco

olive oil

lb skinless chicken breast

celery stalks (trimmed to 4 inch strips)

skinny blue cheese dressing

Preheat oven to 425°F. Spray a baking sheet with olive oil spray.

Combine garlic powder, paprika, chili powder, black pepper, bread crumbs and panko in a medium bowl and toss well.

Place the hot sauce in another medium bowl with the oil.

Dip the chicken into the hot sauce mix, then into the crumbs and place on the baking sheet.

Spray the top generously with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.

Serve with celery sticks and blue cheese dressing if desired.

Nashville Hot Chicken Bites

cayenne pepper

brown sugar

all purpose flour

chili powder

salt

canola oil

lb raw boneless, skinless chicken breast

In a small dish, stir together the cayenne pepper, brown sugar, flour, paprika, chili powder, salt, and garlic powder. Place the cut up chicken pieces into a gallon zip-seal plastic bag and add the spice mix. Seal the bag and shake/massage the contents until the chicken pieces are coated with the spices.

Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken pieces (you don’t want to overcrowd the pan, so depending on the size of your skillet you may want to work in two batches instead of one) and stir to break them up and coat them in the oil. Cook the chicken for 7-8 minutes, stirring every couple minutes (you don’t want to stir super frequently because the chicken needs time to brown and get a “crust” on each side). Once the chicken is cooked through and browned on the outside, remove from heat and serve.

These buffalo chicken nuggets are chicken breast pieces lightly battered and fried to crispy perfection, then coated in a homemade buffalo sauce. An easy and delicious snack or meal!

Buffalo Chicken Nuggets

chicken breasts (cut into 1 inch pieces)

buttermilk

eggs (beaten)

flour

pepper

baking powder

hot sauce (such as Frank's Red Hot)

butter (melted)

honey

ranch dressing and celery sticks

Pour the buttermilk into a medium sized bowl. Add the chicken pieces and soak for 10 minutes.

Place the eggs in a small bowl.&nbsp;

In a medium sized bowl, mix together the flour, salt, pepper, garlic powder and baking powder.

Dip each piece of chicken in the flour mixture.

Dip each piece of chicken in the egg mixture, then back into the flour mixture. Place the coated chicken pieces on a plate.&nbsp; Repeat the process with all of the chicken pieces.

Heat 2-3 inches of oil in a deep pan to 350 degrees F.

Place 4-5 nuggets in the pan. Cook for 4-6 minutes or until crispy and golden brown.

Place the fried chicken on paper towels, then repeat the cooking process with the rest of the chicken.

In a small bowl, whisk together the hot sauce, butter and honey.

Pour the buffalo sauce over the cooked nuggets and gently toss to coat. Serve immediately with ranch dressing and celery sticks on the side.&nbsp;

Spicy Chicken Nugget are a cayenne pepper spiced chicken nugget perfect for dipping in your favorite sauce! Crunchy, spicy, and a little sweet from the brown sugar in the bread crumbs, this is an easy snack or dinner!

Spicy Chicken Nuggets

For the Blue Cheese lemon juice

Preheat oven to 425 degrees. Line a large baking sheet with tine foil and top with a cooling or baking rack. Spray the rack with cooking spray so the chicken won&#8217;t stick to it.

In a bowl combine the bread crumbs, garlic &amp; onion powders, brown sugar, cayenne pepper, salt &amp; pepper. Stir to combine. In another bowl pour the flour, and lastly in another bowl whisk the egg with about 2 tablespoons of water to create your egg wash.

If your chicken breasts are thick, butterfly them by taking your knife and slicing through the chicken width-wise so you have two halves of chicken then you can open like a book. If your chicken is not overly thick, there&#8217;s no need to butterfly them thinner. Next, cut the chicken into nuggets and strips. They do not need to be the same shape, I actually like making my various shapes/lengths.

To bread the chicken nuggets, coat each chicken piece in the flour, then the egg wash, then lastly the spicy bread crumbs. Place on top of the rack on your baking sheet and drizzle each piece with olive oil. Bake for 15-17 minutes until the chicken is no longer pink. For my oven, 15 minutes was good. Remove from the oven and if you like extra spicy give each chicken nugget a sprinkle of a little more cayenne.

While the chicken is baking, make the blue cheese dipping sauce. In a medium pot over medium heat, add the half &amp; half and heat until you see a little steam coming off the cream. It doesn&#8217;t need to be bubbling, you just want it hot enough to melt the cheese. Whisk in the flour, then add the blue cheese and lemon juice. Season with salt and pepper. Pour into a serving bowl and let cool.

Dakgangjeong (Korean Popcorn Chicken) is crispy, sweet, and spicy. Double-fried for extra crunch and coated in a sticky gochujang glaze, this addictive Korean fried chicken is perfect for snacking or party food!

Dakgangjeong (Korean Popcorn Chicken)

lb chicken thighs

peanut (optional)

oil (for deep-frying)

cake flour

cornstarch

onion powder

tsp salt

ginger paste

tsp pepper

sweet rice wine (mirim)

egg white (beaten)

tbsp oil

tbsp chili sauce

Korean chili paste (gochujang)

ketchup

tbsp minced garlic

Korean rice syrup (jocheong) (or dark corn syrup)

tbsp sugar

tbsp chili oil

tbsp rice vinegar

Mix all the ingredients well. Reserve 2 tablespoon of the mixture on the side. Put the rest of coating mixture in a zip bag and set aside.

To make the chicken coating

Put chicken in a large mixing bowl, add reserved 2 tablespoon of chicken coating, ginger, salt, pepper, rice wine, egg white, and oil. Mix with your hand to coat evenly.

To season the chicken

Heat oil to 340˚F. Add chicken into the coating mixture in a zip bag; shake well to coat evenly. Shake off the excess coating from chicken pieces.

Deep-fry chicken in small batches, about 2-3 minutes, until they are lightly golden. As you deep-fry, stir them with metal tongs or a wire skimmer to keep them from sticking to each other. Shake off excess oil as you take the chicken pieces out of the oil.

After the first frying is over, do the second frying until they get deep golden brown; about 2 minutes. Keep them on a wired rack to prevent them from getting soggy.

To deep-fry

Combine chili sauce, Korean chili paste, ketchup, Korean rice syrup, sugar, garlic, chili oil, rice vinegar, and rice wine in a skillet.

Bring the sauce to boil over medium high heat until it thickens to a glaze consistency, stirring constantly.

Add chicken and toss well to coat with the glaze. To garnish, sprinkle with chopped peanuts. Serve hot.

To make dakgangjeong sauce

I just made this dish tonight (ending up going to Hmart anyway so I found some rice syrup) and it turned out SO good! I got  cold bean sprout salad, made some rice and tore some lettuce leaves with it, ate it all together. Tasted similar to Korean bbq but at home.
