Dumplings are intimidating (well, they can be). But they also are, in fact, delicious. No matter what you stuff them with, the concept of pillowy, soft dough encasing a luscious, super flavorful filling is enough to warm you up from inside to out. Well, with our homemade dumpling recipe, we’re bringing that warm, fuzzy feeling right to your very own kitchen table. 

Homemade Dumplings Recipe by Tasty

all-purpose flour

salt, divided

water

red cabbage

In a large bowl, combine the flour, 1 teaspoon of salt, and the warm water and mix until well-combined.

Roll out dough on a floured surface and knead until smooth.

Roll out 1 piece of dough into a thin log and divide into 6 or 8 pieces, depending on the size of dumplings you want. Repeat with the remaining dough portions.

Lightly flour the dough pieces and roll out 1 piece into a thin circle roughly 4-inches (10 cm) in diameter.

Keep the dumpling wrappers separated with a small piece of parchment paper and repeat with the remaining dough.

Combine the cabbage, green onions, garlic, ginger, soy sauce, and sesame oil in a medium bowl and mix until well-incorporated.

For the pork filling, combine the ground pork with the remaining teaspoon of salt, the pepper and 1 cup (125g) of the cabbage mixture and stir until well-incorporated.

For the veggie filling, combine the mushrooms and carrot and microwave for 3 minutes, until soft. Add 1 cup (125g) of the cabbage mixture and stir until well-incorporated.

For the shrimp filling, combine the shrimp with 1 cup (125g) of the cabbage mixture and stir until well-incorporated.

To assemble the dumplings, add roughly 1 heaping tablespoon of filling to the center of a dumpling wrapper. With your finger, lightly coat half of the outside of the wrapper with water. Fold the moistened half of the wrapper over the filling and, using your fingers, pleat the edges to seal. Repeat with the remaining fillings and wrappers.

Heat the oil over medium high in a large skillet and add a few dumplings, cooking them in batches. Once the bottoms of the dumplings start to brown, add a splash of water and cover with a lid. Steam for about 5 minutes, or until the dumplings are cooked and the water has evaporated. Transfer the cooked dumplings to a paper towel-lined plate to remove any excess moisture or grease.

In a small bowl, combine the soy sauce, rice vinegar, sesame oil, and pepper flakes and stir to combine. Serve the dumplings immediately with the dipping sauce.

Pressure Cooker Steamed Dumplings

cabbage (minced)

shiitake mushrooms (minced)

dumpling wrappers

tbsp sesame oil

tbsp rice wine vinegar

Pour sesame oil into your Instant Pot and press &quot;saute&quot;.

Add the minced vegetables and cook at &quot;saute&quot; for 2 minutes.

Add soy sauce and rice wine vinegar and cook for 1 more minute.

Remove the veggies from the Instant Pot and set aside.

Place a dumpling wrapper on a cutting board and add a few drops of water.

Add 1 tbsp of vegetables in the middle of the wrapper and fold it to form a dumpling.

Repeat the process until you have 9 dumplings.

Pour water into your Instant Pot and place a trivet.

Place your dumplings on the trivet.

Close the lid and cook at high pressure for 6 minutes.

When cooking time ends, do a quick pressure release.

Take them all out and serve with soy sauce. You can also garnish with sesame seeds on top.

Steamed Dumplings

One of my favourite ways to enjoy dumplings is by either steaming or boiling these and finishing it off with what I like to call the best dumpling sauce - with the perfect balance of savoury, heat, bit of sweetness and acidity. Let’s not forget the aromatics that really take it up a notch!

Steamed Dumplings with The Best Dumpling Sauce

tbsp doubanjiang ((see notes))

tbsp chili oil

2-3 tsp sugar (, adjust to desired sweetness)

tbsp vinegar rice

tsp sesame oil

tsp sesame seeds

tsp minced garlic

scallions and coriander

Mix the sauce ingredients together. Feel free to adjust to your taste and desired spice level.

Boil or steam the dumplings from fresh or frozen. If you’re using frozen dumplings, no need to thaw. I simply line my bamboo steamer with parchment paper and steam my dumplings for 12-15 mins. If boiling, do the same and leave your pot of water to boil. Then place the dumpling directly from frozen and leave them to cook until these float up. Remove from the water.

Use the sauce as a dip or pour it over your bowl of dumplings or wontons. Garnish with more coriander and scallions, if desired. You can finish it with more chili oil or sauce if desired. Enjoy!

One of the most popular Cantonese dim sum dishes, siu mai with pork and shrimp filling can be easily made at home. Learn the tips and tricks!

Siu Mai (Shumai, 烧卖)

oz pork

oz raw, peeled shrimp (cut into cubes)

mushrooms

water (in which the mushrooms are soaked)

tsp minced ginger

cornstarch

Shaoxing rice wine

tsp light soy sauce

½ tsp sesame oil

sugar

siu mai wrappers (or thin wonton wrappers (see note 3))

carrot (for lining)

carrot (for garnishing)

Add all the ingredients for the filling to a large mixing bowl. Use chopsticks or a spatula to stir the mixture vigorously in one direction for 5 minutes or so until everything is combined into a sticky mass. You may use a stand mixer to speed up the process (with a flat beater on medium speed).

Prepare the filling

Take the wrappers out of the package. Remember to cover them if not used immediately as they dry out easily.

Put a tablespoonful of the filling in the middle of a wrapper. Then let the wrapper securely sit in the hole formed by the thumb and index finger of your non-dominant hand.

Top up with more filling. Level with a frosting spatula or the handle of a spoon so that the wrapper is generously filled to the rim (watch the video below for reference).

Assemble the siu mai

Scatter the carrot slices in the steamer basket. Then place the assembled siu mai over the carrot (see note 4 for alternative methods). Garnish each siu mai with a pinch of finely minced carrot.

Add 2 cups (500ml) of water to the wok/pan you plan to use for steaming. Bring it to a full boil then place the steamer baskets over (you may stack up multiple baskets and cook all at once).

Leave to steam over high heat for 7 minutes. Serve immediately, on their own, or with a sauce of your choice (such as chili oil, black rice vinegar etc.).

Steam the siu mai

Right after assembly, place uncooked siu mai on a tray in a single layer. Put into the freezer. Once completely frozen, transfer them to air-tight containers/bags. Store in the freezer for up to three months.

Steam frozen siu mai for 10-12 minutes (without defrosting).

Siu Mai with Pork & Shrimp Filling | 猪肉鲜虾烧卖

Pork Dumplings are sausage, cabbage, sweet ginger, and garlic-filled soft dough wraps that are scrumptiously fried or steamed.

Sweet Pork Fried Dumplings

oz package all natural round wraps (I use Nasoya wraps)

egg beaten

lb pork sausage (uncooked

savoy or napa cabbage

fresh grated ginger or ginger paste

garlic

mirin

green onions sliced 1/4 inch wide

Vegetable oil

Combine beaten egg, ground pork, cabbage, ginger, garlic, 2 tablespoons soy sauce, 1 tablespoon mirin, and 1/2 teaspoon sesame oil in a medium bowl. After mixing, place in refrigerator for 30 minutes.

When working with the wraps, cover non-stuffed and stuffed ones with cold, wet paper towels to keep them from drying out. Holding the wrapper in one hand, dip your index on your free hand in cold water. Moisten 1/2 of the wrap with that finger making a 180-degree circle around the edge of the wrap that is furthest from you. Now place a rounded teaspoonful of the meat mixture in the middle. Fold over and gently seal one end to the other, pressing the wrap together to close tightly. Repeat until the meat mixture is gone, placing them on a lightly greased cookie sheet and covering them with moistened paper towels.

Add 2 tablespoons of vegetable oil to a large skillet over medium heat. Add a batch of about ten dumplings and cook until browned on one side, approximately 2-3 minutes. Add 2/3 cup of water to the skillet, cover, and cook for 3 minutes. Uncover the pan flip the dumplings, and cook until the water is gone and the other side of the dumpling has browned; approximately 3-5 minutes.

Mix 2/3 cup soy sauce, 1/3 cup mirin, and 1/8 teaspoon sesame oil in a small bowl to serve with the dumplings. Sprinkle several tablespoons of chopped green onion on the sauce.

Sprinkle the remaining green onions on the dumplings right before serving.

These pork dumplings look absolutely divine! I love the crispy bottoms. :)

We tried these last week and loved the recipe.  We used the Instant Pot for steaming and decided we wanted to just try them steamed and maybe the next time, try them both ways.  I have to admit, steamed was really good.  We Made another 20 and placed them in the freezer by Freezer them on a cookie sheet and then transferring to the sealing bags. Miren can be found at Asian Grocery  Stores and online at Amazon. If you go with sherry, go with DRY Sherry, found in Liquor Stores, don't use cooking Sherry, Sweet Sherry, or any other but the dry. I have gotten into arguments with the assistants at the stores about this, I use Taylor Dry Sherry, but beware, they also have a bottle labeled "Cooking Sherry.".

Shumai are easy to make and delicious as an appetizer, snack, or light meal. Filled with ground pork, minced shrimp, and shitake mushrooms, these steamed dumplings are tasty and filling.

Siomai

large shrimp, peeled, deveined and finely chopped

thumb-size ginger, peeled,

(30 pieces) shumai wrappers

lemon juice

chili garlic

Soak shiitake mushrooms

In a small bowl with warm water, soak shiitake mushrooms until softened. Using hands, squeeze liquid and then mince.

Make filling

In a bowl, combine ground pork, shrimp, mushroom, ginger juice, soy sauce, salt, sugar, and pepper until well-distributed.

Add cornstarch

In a bowl, combine corn starch and water, Stir until cornstarch is dissolved and add to pork mixture.

Mix well

Assemble dumplings

Separate wrappers into individual sheets. Spoon a heaping tablespoonful of meat mixture on the middle of the wrapper and then gather sides to form a "cup" around the filling. Repeat with the remaining mixture.

Steam

Arrange siomai in a single layer about 1/4-inch apart on a lightly greased steamer basket and steam for about 15 to 20 minutes or until cooked through.

Serve

Gently remove from steamer and serve hot with dipping sauce.

Water

Combine ground pork and minced shrimp in a bowl. Gradually mix together.

Add jicama, carrot, onion, scallion, egg, ground black pepper, and sesame oil. Continue to mix until all the ingredients are well blended.

Add Knorr SavorRich Pork Liquid Seasoning. Mix well.

Scoop 1 1/2 tablespoons of the pork mixture and wrap in wonton wrapper (see video below for guidance). Perform  this step until the mixture is fully consumed.

Arrange in a steamer and then steam for 15 to 20 minutes.

Transfer to a serving plate. Serve with toyo and calamansi dipping sauce and some chili garlic paste.
