It's cocktail time and I've got a Strawberry Basil Mojito with your name on it! Fresh strawberries and a gentle basil flavor make this my favorite mojitos recipe. It's lightly sweetened and beautifully fragrant and perfect for a hot summer's day. It's also super easy to make a big batch for easy summer entertaining.

Strawberry Basil Mojito

white rum

strawberry simple syrup (see ingredients below)

lemon juice

basil leaves

soda water

strawberries and basil leaves,

water

white sugar

strawberries, sliced

Add the rum, strawberry simple syrup, lemon juice, and basil leaves in a cocktail shaker or mason jar filled with ice. Shake then pour into a glass.

Top the glass with soda water and garnish with strawberries and basil.

Combine the water, sugar, and strawberries in a pot and bring it to a boil

Remove the pot from the heat, cover, and let it stand at room temperature until cool.

Blend the strawberries and syrup together then strain through a fine-mesh sieve to remove the solids.

Strawberry Mojito

C (120 grams) Sugar (Evaporated Cane Juice)

C (116 grams) Water

Mint (stems and)

Soda

Pour the sugar and water in a two-quart saucepan, then add the mint and bring to a boil. Stir. Boil until all the sugar is dissolved. Set aside to steep for 10 minutes and allow the syrup to cool. Remove the mint leaves and pour into a lidded container for storage in the refrigerator until ready to use.

For the Mint Simple Syrup:

In a 16 oz (454g) highball glass, layer the cut lime wedges, mint leaves, and three quartered strawberries.

Pour in the simple and muddle the mixture for about 30 seconds. The goal is to squeeze out the lime juice, mash the berries and to allow the mint to release its oils. There should be bits of strawberries left when muddling is complete.

Add the light rum (or omit for mocktail) to the muddled mixture, then add crushed ice (I fill mine almost to the top). Top off with Club Soda. Stir well. Garnish with a lime wedge, medium strawberry, and mint stem. When finishing the mojito, have a spoon on hand to dig out the delicious strawberry bits!

For the Mojito:

This Virgin Strawberry Mojito Mocktail recipe is refreshing and perfect for summer! It&#039;s made with strawberries, lime, mint, and club soda.

Add ½ cup water to a small saucepan and heat the water to medium-low but do not bring to a boil.

Add ½ cup sugar to the water and stir until all of the sugar has dissolved.

Once dissolved, pour the simple syrup into a glass container (a mason jar works great) and allow to cool. (The simple syrup can be made and cooled ahead of time).

For The Simple Syrup:

Thoroughly wash 1 lb. of fresh strawberries (you can also use frozen strawberries if desired).

Hull the strawberries or simply chop the green stems off with a knife. Cut the strawberries in halves or quarters, depending on the size of the berry.

Add 1 lb. of chopped strawberries, ¼ cup of fresh lime juice (equals 2-3 limes), ¼ cup fresh mint, and ¼ cup of the cooled simple syrup to a blender. You can also use an immersion blender. (You can add the full 1/2 cup of simply syrup if you like a little extra sweetness).

Blend until the mixture is totally combined. The texture should be smooth and easy to pour.

For The Strawberry Puree:

Fill a highball glass with ice. Pour ⅓ cup or so of the strawberry puree over the ice (the glass should be ⅔ full).

Top the strawberry puree with club soda. Fill until the glass is totally full. Stir until combined. Garnish with fresh mint and a wedge of lime and serve immediately.Feel free to add 1 shot of white rum to each glass if you&#39;d like to make it into a cocktail.

Slice the 3 strawberries in half. In a cocktail shaker, muddle the mint leaves. Add the strawberries and muddle again. Add the rum, lime juice and simple syrup and fill the cocktail shaker with ice. Shake until cold.

Place ice into a glass, and strain in the liquid. Top off the glass with soda water. Garnish with additional mint leaves and sliced strawberries.

Pitcher variation

Muddle 1 pint strawberries (24 berries). Then add to this Mojito Pitcher recipe, and garnish with additional sliced strawberries.
