Caprese Stuffed Air Fryer Fried Avocado

This light and easy chicken salad recipe made with leftover rotisserie chicken breast meat and my homemade ranch dressing. Great for lunch and meal prep!

Ranch Chicken Salad

1% buttermilk

mayonnaise

chives

salt

garlic powder

onion powder

parsley

basil

black pepper (to taste)

In a medium bowl combine the buttermilk, mayo, chives, salt, garlic powder, onion powder, parsley, basil and black pepper and mix.

Add the shredded chicken and mix well. Refrigerate until ready to eat.

Chicken Salad Stuffed Avocados

c. shredded rotisserie chicken

c. red onion, minced

Greek yogurt

Dijon mustard

I made it with tuna instead of chicken. Used green onion as garish. It was delicious and filling.

It would be nice to have calorie information.

Creamy, ripe avocados are wonderful stuffed with easy rotisserie chicken salad and flavored with seasoning and lime juice.

Chicken Salad Stuffed Avocado

rotisserie chicken

red onion

celery

mayo

sour cream

tbsp fresh squeezed lime juice

avocados ((can use 4-6 avocados with more or less stuffing))

lime

paprika

chili powder

NOTE: Chicken salad recipe makes about 3 1/2 cups. This recipe can make about 8-12 stuffed avocados, depending on how much stuffing is used on each half. Chicken salad can also be made ahead of time and used as needed for individual avocados. 

Take rotisserie chicken apart, picking out all the meat.

Dice chicken meat and add it to a large mixing bowl.

Add diced red onion, diced celery, parsley, mayo, sour cream lime juice, salt, and pepper. Mix very well, until all ingredients are incorporated throughout. 

Chicken Salad:

Cut avocados in half and take out the pits. Use a large spoon to gently separate the skin off the avocado flesh. Carefully spoon the avocado meat out, leaving it intact.

Make a thin slice at the rounded bottom of each avocado half to help it stand without rolling over. 

Rub each avocado half with lime juice on all sides and season it with salt all around. Sprinkle just a pinch of paprika and chili powder onto the avocado.

Spoon about 1/3 cup of chicken salad into the avocado halves and serve.

Caprese Stuffed Avocados

c. cherry tomatoes, halved

mozzarella

Italian seasoning

balsamic vinegar

olive oil

Scoop out avocados, leaving a small border. Dice avocado and set aside.

In a large bowl, toss diced avocado with tomatoes, mozzarella, Italian seasoning, balsamic, and olive oil. Season with salt and pepper.

Divide salad among 4 avocado halves and garnish with basil.

Slice the avocados in half and remove the seed. Dollop a few spoonfuls of tuna salad onto each avocado half.
