Preheat oven to 350 degrees F.

Slice the poblano peppers in half and remove the seeds and membrane. Rub with 1 tablespoon of the olive oil. Arrange on a baking sheet and roast for 10-12 minutes until softened.

While the peppers are baking, heat the remaining olive oil in a large skillet and saute the onion and garlic until soft, about 5 minutes.

Add the ground beef and spices, cooking and breaking up with a spoon until the meat is cooked through and browned.

Add the cooked rice, beans, corn and half of the cheese. Stir well, then divide evenly between the roasted poblano pepper halves. Sprinkle with the remaining cheese.

Bake for 10 minutes until heated all the way through and the cheese is melted on top. Sprinkle with chopped cilantro and serve.

Stuffed Poblano Peppers with Black Bean, Corn &amp; Sweet Potato

(15 oz) can black beans, rinsed and drained

(15 oz) can sweet corn, rinsed and drained

chunky tomato salsa (I used Trader Joe's)

Preheat oven to 350 degrees F. Slice each poblano pepper in half lengthwise and place in 9x13 inch pan.

Poke holes in the sweet potato and microwave on high for 4 minutes. Once done, allow to cool then cut into small cubes. This allows the sweet potato to cook a little bit before mixing with the other ingredients.

Add black beans, corn, onion, sweet potato, tomato salsa, chili powder, cumin and oregano. Divide evenly into each poblano pepper half.&nbsp;

Cover pan with foil and bake for 40 minutes or until peppers are fork tender. Remove foil, sprinkle cheese on each pepper (about 1 1/2 tablespoons on each) and bake for another 5 minutes.

Remove from oven and sprinkle with cilantro. Serve with guacamole and extra salsa, if desired. Makes 10 poblano halves. 1 serving = 2 poblano halves

Stuffed Poblano Peppers are so easy to make for a flavor packed, family favorite dinner!  These peppers are filled with shredded chicken, cheese, corn, black beans, and salsa!

Large Poblano Peppers (or 6 medium)

Cups Shredded Cooked Chicken

Cup Black Beans

Canned

Cups Salsa Verde (Red salsa is fine also)

Ounces Cream Cheese (Softened)

Chili Powder

Smoked Paprika

Garlic Powder

Cumin

Salt & Pepper, (to taste)

Preheat the oven to 350 degrees Fahrenheit. Grease a baking dish large enough to hold the peppers lightly with non-stick spray.

Add the whole poblanos to the prepared pan and roast for 20 minutes until becoming soft. Remove the poblanos from the pan to a cutting board.

Meanwhile, add the shredded chicken, beans, corn, salsa, cream cheese, seasonings, and one Cup of the cheese to a large bowl and stir to combine.

Cut a slit down the length of each pepper to make a pocket, being careful not to slice all the way through and use a spoon to scoop out and discard the seeds.

Fill each poblano up equally with the chicken mixture, then sprinkle on the remaining shredded cheese.

Return the filled peppers to the baking sheet and into the preheated oven for 15-20 minutes until the cheese has melted

This stuffed poblano peppers recipe is a wonderful light summer dinner! If you can't find poblanos, bell peppers would also work here.

Preheat the oven to 400°F and line a baking sheet with parchment pepper.

Slice the peppers in half and remove the seeds and ribbing. Place on the baking sheet, drizzle with olive oil and pinches of salt and pepper, and roast cut side up for 15 minutes.

In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the onion, cauliflower, red pepper, cumin, coriander, oregano, garlic, 1/2 teaspoon salt, and several grinds of black pepper. Cook until the onion is soft and the cauliflower is lightly browned, about 5 to 8 minutes.

Remove from the heat and stir in the black beans, rice, spinach, lime juice and tomatillo salsa. Taste and adjust seasonings.

Scoop the filling into the peppers and bake for 15 minutes.

Serve with avocado slices, cilantro, tomatillo salsa, green chile cashew cream and lime slices on the side.

Preheat the oven to 350 degrees F. Coat a baking sheet with cooking spray. Lay the poblano peppers on the pan in a single layer.

Bake the peppers for 10-15 minutes or until softened.

Heat the oil in a large pan over medium high heat. Add the ground beef and cook for 5-6 minutes, breaking up the meat with a spatula, until the meat is cooked through.

Add the garlic and cook for 30 seconds.

Add the packet of taco seasoning along with 2 tablespoons of water. Stir to coat the meat in seasoning.

Add the rice, beans, corn, tomatoes and 3/4 cheese to the pan. Remove the pan from the heat and stir to combine.

Divide the meat mixture evenly between the peppers. Top with remaining cheese.

Return the peppers to the oven. Bake for 10-15 minutes or until cheese is melted. Sprinkle with cilantro, then serve.

Preheat the oven to 360°F/180°C.

Prepare the peppers by slicing them in halves, then remove the seeds and the membrane. Brush them with a little bit of olive oil inside and out, and roast them until they're just undercooked (10-15 minutes).

In a non-stick pan, saute the diced onion until soft and translucent. Then add the ground beef, jalapeno, taco seasoning, salt, and pepper.

Brown the ground meat as you break it down with a wooden spoon, add the diced tomatoes, and cook everything together.

Add in cooked rice and mix well, cook for a couple of minutes. Mix in half of the cheese. Remove from the heat.

Take the poblano peppers out of the oven and spoon the stuffing into each pepper half (divide the meat mixture between the peppers), then top with the rest of the cheese.

Put back in the oven for 10 minutes. This will allow the flavors to settle, the bell peppers will be fully cooked, and the cheese will melt. Garnish with chopped cilantro and serve.

Easy Chicken Stuffed Poblano Peppers

poblano peppers (large sized)

c chicken (shredded)

tomatoes (14.5 oz.)

black beans (15 oz.)

cilantro (chopped (plus more for topping))

c corn kernels

c rice (already cooked)

tsp chili powder

tsp cumin

tsp pepper

tsp crushed red pepper

jalapeno (small diced and seeds removed) (optional)

c shredded monterey jack cheese

Preheat oven to 400°F.  *If you like your peppers super soft, slice and remove seedd and massage olive oil into them. Roast about 10-15 minutes before adding the chicken mixture. We like ours more firm and omit this step.

In a medium bowl, combine chicken, rice, beans, corn, tomatoes, jalapeno (optional), cilantro, and spices. Stir to combine. (I drain the tomatoes almost all the way but leave a small amount of liquid in them which helps keep this mixture the right consistency.)

Cut each poblano pepper in half and remove seeds and membrane. Line them on a parchment lined baking sheet. Spoon equal amounts of the chicken mixture into each pepper.

Bake for 15 minutes. Top each pepper with cheese and bake for an other 5 minutes or until cheese is melted. I like to broil mine for a couple minutes as well after the cheese melts for a touch of crispiness but this is not necessary.

Allow to cool for several minutes and then sprinkle with more cilantro and serve!

I made your stuffed pablano peppers tonight and they were amazing! I made fresh pineapple, jalapeno, tomato, red onion salsa with lime chips for a side. I will be making your wonderful stuffed pablano peppers again!

Chiles en Nogada are full of Mexican history. Puebla nuns invented the dish in 1821, to honor a visit by Mexican General Augustín de Iturbide. The dish features the colors of the Mexican flag: white creamy walnut sauce sprinkled with bright red pomegranate seeds and fresh green parsley. This dish is commonly served to celebrate Mexican Independence Day on September 16.

Chiles en Nogada (Stuffed Poblano Chiles with Walnut Sauce)

Preheat broiler.

Rinse pepper thoroughly to remove dust particles. Place peppers evenly in a single layer on a foil-lined cookie sheet. Pierce each chile with a knife.

Place under broiler. Watch them closely as the skin will blister and turn black within minutes. Turn the peppers after 3 to 5 minutes to blister all sides evenly. When done, the pepper skins should be evenly blistered and mostly black.

Place roasted peppers in a plastic bag, and when cool, peel off blackened skin. Using a small sharp knife, carefully slit roasted chiles open along one side. Remove seeds, leaving stems attached. Set aside to fill later.

Boil tomatoes for 5 to 10 minutes and peel. Let cool and chop.

In a large skillet, over medium heat, add oil. Add onions and sauté until translucent, about 2 minutes add garlic and continue to cook for another minute.

Add ground pork and add all spices and vinegar.

After 8 minutes of stirring and breaking up meat and meat is cooked add chopped tomatoes, peaches, apples, pears, wine, and parsley. Stir and cook for 5 minutes uncovered. Cover and cook for an additional 5 minutes to steam and soften fruit.

Add raisins and almonds and combine and let cook for an additional 10 minutes uncovered.

While mixture is cooking make the sauce. In a blender place milk, crema, wine, cream cheese, goat cheese, walnuts and blend. Add more milk as needed to make mixture creamy. Add sugar and blend.

Assemble poblanos by stuffing with filling.

Pour cream sauce over the poblanos and ganish with pomegranate seeds and chopped parsley.

Add water to a large pot and bring to a boil over high heat. Once boiling, add rice and cook for 30 minutes. Then drain for 30 seconds, return to pot off of heat, and cover for 10 minutes*. Set aside.

In the meantime, preheat oven to high broil and place a rack at the top of your oven.

Lightly brush whole poblano peppers with oil. Place on a baking sheet and broil on high for 1-2 minutes on each side, or until lightly blistered (see photo).

Turn oven off broil and preheat to 375 degrees F (190 C).
