yummmmmm. Any way you cook the corn. I do think roasted adds a texture element, and like it that way best.

I roasted frozen in oven. Came out chewy, and stuck all in my teeth. Bummed

I used 2bags of frozen corn(15oz), wish I had three bags.  I roasted the kernels on stove top.  Delish.

Muchas gracias to the person who provided this recipe!  We had a family camping trip this weekend with 12 people total, & even the kids loved this twist on corn.  Appreciate the frozen corn equivalent, it really helped. In my opinion, I used a little too much mayo, but now I know what to change next time, lol.  As for everyone wondering about the cheese, I used grated parmesan in the salad, & shredded parmesan sprinkled on top with the extra chili powder.  I'm keeping this one as a top recipe, & plan to make it often! 👍🙂🌽

Mexican Corn Gets A Salad Makeover

Don&#x27;t let the name fool you, this Summer Corn Salad definitely can (and should be!) enjoyed all year round!  It&#x27;s a fresh corn salad made with onion, bell pepper, avocado, and.....corn!  Fresh or frozen corn will work!

Summer Corn Salad

olive oil

red onion (, diced)

red bell pepper (, diced)

avocado (, seeded, peeled and chopped)

Tbsp apple cider vinegar

tsp sugar

tsp dijon mustard

juice from 1 lime

salt and pepper

Whisk dressing ingredients together and set aside.

Add 1-2 inches of water to a large skillet. Bring to a boil. Add shucked corn ears and cook for 3-4 minutes, rotating to cook on all sides. Drain water.

Heat grill on medium-high heat. Brush corn lightly with olive oil and grill for a few minutes, rotating it as it cooks, until golden on all sides.

Allow the corn to cool and then cut corn off of the cob and add to a bowl. Add remaining salad ingredients and drizzle with desired amount of dressing (you may not use it all). Toss to combine. Refrigerate until ready to serve.

SUMMER CORN SALAD

Summer Corn Salad is a bright refreshing taste of summer. Garden fresh corn and tomatoes come together with fresh mozzarella, herbs and a glorious dressing that really gives it an even lighter fresher taste. This simple recipe is the perfect summer side!

Summer Corn Salad + Video

grape tomatoes (halved)

mozzarella cheese

basil leaves (chiffonade (roll leaves and slice thinly))

lemon juice

extra virgin olive oil

garlic

salt

black pepper

Cut corn off the cob, place into a medium mixing bowl.  Add tomatoes and mozzarella. Sprinkle with basil.  Set aside.

Add fresh lemon juice, olive oil, garlic, salt and pepper to a pint size canning jar.  Shake to combine.  Pour dressing over salad.  Toss to combine.

Serve and enjoy!

Steam or boil the corn until crisp-tender (about 3-5 minutes). Drain and cool to room temperature.

In a medium bowl, whisk together sour cream, mayonnaise, vinegar and dry mustard until combined.

In a large bowl, toss together corn, tomatoes, bell pepper, red onion, bacon, basil and dill. Stir in the dressing and toss to coat. Taste and season with salt and pepper. Cover and refrigerate until ready to serve.

Fresh corn, tomatoes, peppers, and onion come together with a splash of lime to create the most refreshing summer salad ever!

Combine the corn, bell pepper, onion, tomatoes, and cilantro in a mixing bowl. In a small bowl or measuring cup, combine the oil, lime juice, garlic, salt, and pepper. Whisk or stir to combine.
