For a refreshing taste of summer, this Summer Orzo Salad hits the spot. This pasta salad is loaded with fresh summer vegetables and marinated tofu. It's vegan, easy to make and modify!

Summer Orzo Salad with Grilled Vegetables

(450 g) block extra firm tofu

extra virgin olive oil

lemon juice

apple cider vinegar

dry basil

dry oregano

dry thyme

tsp salt

corn corn

zucchini, sliced

red onion, sliced

dry orzo

cherry tomatoes, halved

yeast

salt and pepper

In a container, add your oil, garlic, lemon juice, apple cider vinegar, salt and herbs.

Cube your tofu into bite size pieces and add to the container with the marinade, seal it and give a good shake to coat the tofu completely, then set aside. 

To a grill pan or griddle set to medium-high heat, add a little oil and begin to grill your zucchini, onion and corn with a generous amount of salt. Allow to cook on both sides until vegetables are cooked through and appear to have grill marks. Remove from pan and set aside.

Cook orzo according to package, then drain and add to a large mixing bowl. 

To the mixing bowl, add in grilled corn, zucchini, tomatoes and top with your marinated tofu and nutritional yeast. 

 Gently, toss everything together to combine and adjust salt and pepper to taste. For best flavor, make sure to allow salad to marinate in the fridge for at least 1 hour. 

Fresh, vibrant and so easy to make, this cucumber lemon orzo salad is a perfect summer side dish. Full of flavor and it can be made ahead of time in minutes

Cucumber Lemon Orzo Salad

Persian cucumbers (diced)

dill

parsley

Salt and pepper (to taste)

Feta cheese (for serving (optional))

Bring a large saucepan of salted water to a boil. Add orzo and cook until al dente according to package instructions, about 8-10 minutes. Drain and transfer to a large serving bowl.

Drizzle the olive oil, lemon juice and lemon zest over the cooked orzo pasta and toss to combine. Set aside while preparing the cucumbers and herbs.

Add the diced cucumbers on top of the orzo salad along with the chopped dill and chopped parsley. Taste for seasoning and adjust with salt and pepper, as needed. Add feta cheese, if desired.

Enjoy warm immediately or cover and refrigerate until cool, about 1 hour.

This Orzo Salad recipe is the ultimate crowd-pleaser—fresh, colorful, and bursting with flavor in every bite. The tarragon vinaigrette is my favorite. Serve it warm or cold.

Orzo Pasta Salad

orzo pasta ((454 grams))

cherry tomatoes ((300 grams), halved)

artichoke hearts ((397 grams), canned, drained and chopped)

Kalamata olives ((100 grams), pitted and chopped)

dried Craisins ((80 grams))

Tablespoons capers ((13 grams))

chicken ((420 grams), chopped)

olive oil ((215 grams))

tarragon vinegar* ((80 milliliters))

Tablespoons fresh tarragon ((4.5 grams), chopped)

½ Tablespoons fresh lemon juice ((22 milliliters))

½ Tablespoons dijon mustard ((23 grams))

Cook pasta according to package instructions. Drain well and set aside to cool.

Combine dressing ingredients in a bowl and stir well to combine. Pour dressing over cooled orzo pasta and stir to combine.

Add remaining ingredients and toss to combine. Season with salt and pepper, to taste.

This pasta is so refreshing! My son devoured it. We will definitely be having this again. One note, I did not add the craisins but did add feta. Just delicious!

I have never used capers or tarragon before. Although this wasn't my favorite dish, I do enjoy trying new flavors. The 6 serving amount was more like 8-10 servings for our family. Glad we tried it and extremely thankful for TBFS for making my life simpler.

I made this without the chicken (forgot to defrost it! 😂) 
It's a lot of interesting textures and flavors that work surprisingly well together! I'll be making this one again for sure!
