Grilled Zucchini Salad with Corn and Tomatoes

zucchini,

cherry tomatoes, (halved)

corn kernels

olive oil, (divided)

salt and fresh ground pepper, (to taste)

olive oil

lemon juice

garlic, (minced)

arugula

goat cheese, ((or bleu cheese or feta cheese))

Preheat an outdoor Grill to medium-high; about 425˚F.

Brush grill grates with oil.

Drizzle olive oil over slices of zucchini and season with salt and pepper.

Grill zucchini for 2 to 3 minutes per side, or until tender and grill marks appear.

At the same time, grab a grill pan and combine tomatoes and corn inside the pan; drizzle with a tablespoon of olive oil and season with salt and pepper.

Set grill pan on the grill and cook, stirring frequently, until tomatoes and corn are charred; about 2 to 3 minutes.

In a salad bowl, whisk together 3 tablespoons olive oil, lemon juice, garlic, oregano, salt and pepper.

To the bowl, add zucchini, tomatoes, corn, and arugula; toss to coat with salad dressing.

Top with crumbled cheese and serve!

Bring a large pot of salted water to a boil over medium heat and cook the pasta according to package instructions for al dente. Drain and rinse with cold warer. Set aside.

In a large frying pan, add bacon and cook until crispy.

Remove from the pan and place on a paper plate lined with paper towels to absorb any excess grease.

While the bacon is cooking, make the ranch dressing.

Add mayo, milk and dry ranch seasoning to a medium bowl. Stir to combine.

In a large bowl, add all ingredients, toss to coat evenly.

Best served chilled.

Garnish with sliced green onions and cilantro.

Toast the almonds: Place the nuts in a dry skillet (no oil) over medium heat. Heat, shaking the pan and stirring often with a wooden spoon, until the nuts are fragrant and golden brown, about 4 to 5 minutes. Remove immediately from the heat and transfer to a plate to stop the cooking.

Prepare the dressing

Place the oil, lime zest and juice, garlic, honey, cream, ½ teaspoon salt and ¼ teaspoon ground pepper into an empty jar. Tighten the lid and shake vigorously until creamy and smooth. Chill in the refrigerator until you are ready to serve.


Heat the grill pan

Preheat the grill pan on a medium-high heat.


Season and oil the chicken

Rub olive oil, salt and pepper into the chicken until coated evenly. 


Grill

Place the chicken on the grill pan and cook for 5 minutes on each side. Remove from the grill pan and allow to rest for 5 minutes before chopping it into bite-sized pieces.


Assemble the salad

Start by spreading the romaine over a large platter or salad bowl. Arrange the rest of the toppings in lines on the lettuce bed so it resembles a rainbow. 


Dress the salad

Just before serving, dress the salad with the creamy lime and garlic dressing.

Tear the florets off your cauliflower and pop them into a roasting tin. Pour a good glug of oil on your florets, season with salt and pepper and roast for 15 mins.

Cook the Couscous: Bring the water to a boil on the stovetop or in an electric kettle. Add the couscous to a large bowl with a pinch of salt and pour the boiling water over it; mix well, then cover with a plate or lid and let sit for 7 minutes. Fluff with a fork and set aside. (Note: if you are warming the water on the stovetop, you can remove it from the heat and add the couscous directly to the pot)
