Baked sweet potato latkes have beautiful crispy edges and are soft inside. They are irresistible served hot with a big dollop of sour cream and some green onions. This baked version is much healthier than traditional deep-fried latkes yet every bit as delicious.

Sweet Potato Latkes

cooking oil, divided

½ lb sweet potatoes, about 2 medium

flour (gluten-free, if needed)

green onions,

eggs

garlic clove, finely minced

each: paprika, sea salt, and pepper

cheddar cheese

Sour cream, to serve

Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper. Drizzle each baking sheet with 1 tablespoon of oil.

Peel and grate the sweet potatoes using the large holes on your grater.

Place the grated sweet potatoes into a large bowl and add the flour, the white parts of the green onions, the eggs, garlic, paprika, salt, and pepper and mix together well.

Use a large cookie scoop or ¼ cup measuring cup and make 18 latkes, dividing them between the 2 baking sheets. Press them down so that they are about ¼ inch thick. Drizzle the remaining 2 tablespoons of oil over the tops of the latkes.

Bake for 40 minutes, or until the tops start to brown and crisp. Sprinkle a little cheese on top of each latke then put them back in the oven for 5 minutes.

Serve the latkes hot out of the oven with some sour cream and the green onions on top.

Purple Sweet Potato Latkes with Kimchi

potato

matzo meal

red onion

Salt and pepper (to taste)

Canola or vegetable oil (for frying)

sour cream

Tb kimchi juice

kimchi (roughly chopped)

onions

Furikake seasoning (for garnish)

cilantro leaves

To make the latkes, add the sweet potato and onion to a food processor fitted with a shredding blade (or you can shred by hand).

Add mixture to a bowl of cold water and allow to soak for 5-10 minutes. This will help crisp up the potato. Then using a clean kitchen towel and squeeze out the mixture really welel to get a smuch moisture out as you can.

Then in another bowl, add the potato mixture with the matzo meal and eggs and salt and pepper and mix everything together well.

Heat a large skillet with enough oil to coat the bottom on medium-high heat. Stop a piece of potato in the oil and if it sizzles, it's ready. Then use a tablespoon to spoon mixture into the hot oil. I can usually fit 4-5 latkes.

Fry latkes on first side until they turn a deeper purple color, about 3-4 minutes and then carefully flip over and finish cooking on the other side for another 2-3 minutes.
