Lightly toast the bread. Warm the sweet potato until just warm to the touch.

Spread the sweet potato onto the bread. Sprinkle with cinnamon, a drizzle of almond butter, or an additional layer of cream cheese. Cut into cube or sticks as needed for easy chewing.

Sweet potato toast is a healthy, blank canvas for breakfast. This version gives your morning a major boost with delicious, nutrient-dense toppings.

Sweet Potato "Toast" with Avocado, Cucumber, Smoked Salmon and Poached Egg

Wash and scrub the sweet potato. Slice the potato lengthwise, into even slices, using a sharp knife or mandoline.

If using a toaster, place the sweet potato slices in the toaster and toast several times, or until cooked through.

If using the oven, preheat the oven to 400 degrees fahrenheit. Lightly oil both sides of the sweet potato slices, then place them on parchment paper on a baking sheet.

Bake for 30 minutes or until slightly toasted.

While the potato is baking, bring a pot of water to a simmer. Crack and poach the eggs for 3-4 minutes. Remove the eggs from the pot and place in a bowl of room temperature water (while the potato is still baking).

Once the potato has cooked, add to a plate and top with sliced avocado, cucumber, smoked salmon and a poached egg.

Sweet Potato Toast Air Fryer Recipe (Gluten Free, Paleo, Whole30)

cooking oil spray ((non-aerosol))

Slice

Slice the pointy ends off the sweet potato. Using a knife or mandoline, carefully cut the sweet potato into ¼-inch thick slices (0.64 cm). You can keep the skins on the sweet potatoes. I yielded 6 slices.

Spray

Spray an air fryer tray or air fryer basket with cooking spray. Place the sweet potato slices in a single layer on the tray, and mist them with oil too. (You may need to air fry them in batches if your air fryer is small.)

Sprinkle

Sprinkle the prepared sweet potato slices with salt and black pepper. If you have an air fryer oven, put the sweet potato slices in the top rack position.

Air fry

To air fry: Air fry for 10 minutes at 400°F (200°C), then flip the toasts over and air fry 8-10 more minutes. You don’t have to add additional oil. Let them sit about 3 minutes to cool before topping and enjoying.

Oven bake

To oven bake: Preheat the oven to 350°F (175°C). Mist a dark baking tray with the cooking spray. Put your potato slices in a single layer on the tray and very lightly mist them with the cooking spray as well. Sprinkle with salt and pepper. Bake the sweet potato slices about ⅓ from the top of your heated oven for 13-15 minutes. When finished, let them cool a bit before popping in the toaster oven or toaster to crisp up.

Preheat Oven

Preheat the oven to 400 degrees Fahrenheit.

Slice Potato

Slice the sweet potato into even slices, approximately 1/4 to 1/2-inch thick, using a sharp knife or mandoline.

Lightly Oil

(Optional) Lightly oil both sides of the sweet potato slices, then place them on a baking sheet.

Bake Potato

Bake for 30 minutes, or until cooked through and slightly toasted. Thicker slices may require more time to cook.

Store

To meal prep and save the cooked sweet potato, let it cool completely. Then, place it in a storage container.
