This Taco Lasagna recipe is so easy and is a casserole that freezes well. When Mexican food meets Italian you get layers of pasta, salsa, seasoned taco meat and lots and lots of cheese.

Taco Lasagna

oven ready lasagna noodles ((see note))

beef

(1-oz.) package Old El Paso taco seasoning

(15-oz.) carton ricotta cheese

cheddar cheese

(24-oz.) jar chunky salsa

Optional toppings: sour cream, green onions, diced tomatoes

Preheat oven to 350 degrees.

In a large skillet, brown beef until no longer pink. Drain meat and add the taco seasoning. Stir until combined and set aside.

In a small bowl, add the egg and ricotta and stir until combined.

In a 9x13 baking dish, start by layering 4 lasagna noodles on the bottom of the pan. Next, layer 1/3 of the ricotta, 1/3 of the beef mixture, 1/3 of the salsa, and 1/3 of the cheese. Repeat the layers 2 more times.

Bake covered for 30-40 minutes or until the casserole has heated through and is bubbly. Let casserole stand 10 minutes before cutting. Top with sour cream, sliced green onions, and diced tomatoes if desired.

tomatoes (1 14.5-ounce can)

black beans (1 15-ounce can, rinsed and drained)

sweet corn

fire roasted diced green chiles (1 4-ounce can)

enchilada sauce (or

8” large flour tortillas

shredded pepper jack cheese

Colby Jack cheese

black olives

scallions (finely chopped)

cilantro

Preheat oven to 425°F.

Drizzle olive oil into a large skillet, over medium high heat. Add beef, onion, paprika, cumin, chili powder, salt and pepper to skillet. Brown beef for about 5-7 minutes. Add tomatoes, beans and corn. Stir to combine. Allow to cook while you begin preparing the baking pan.

Smooth about 1/3 of the enchilada sauce over the bottom of a 9x13 baking pan. Lay tortillas on the bottom of the pan, slightly overlapping until pan is covered (about 4 tortillas).

Spoon half of the beef mixture over top of the tortillas, spread evenly. Layer tortillas on top of beef mixture. Smooth about 1/3 of the enchilada sauce over the tortillas. Sprinkle 1/2 of each of the cheeses on top. Scatter the green chiles over the cheese. Add the remaining beef mixture. Spread evenly. Layer tortillas on top of beef mixture. Spoon remaining enchilada sauce over tortillas. Sprinkle remaining cheese on top of tortillas. Garnish top with olives and scallions.

Bake for 10-15 minutes, until cheese is melted and lasagna is warmed through. Remove from oven and sprinkle with cilantro.

Taco Lasagna with Tortillas

Take your taco Tuesdays game to the next level. Layers of tortillas, lots of cheese and perfectly spiced taco meat make this a flavorful cross between Italian and Mexican-inspired dishes. 

flour tortillas (10-inch

sweet yellow onion (finely diced)

garlic (fresh minced)

mild taco seasoning ((or add 4 tablespoons of our homemade taco seasoning))

water

chunky mild salsa (divided)

black beans (drained, rinsed, and divided)

fiesta blend shredded cheese (divided)

cilantro (optional garnish)

sour cream (optional topping)

pico de gallo (optional topping)

Preheat the oven to 375°F. Spray a 9x13 baking dish with nonstick spray. Set it aside.

Lay 2 of the flour tortillas into the bottom of a 9x13 baking dish. Use a sharp knife, or a pizza cutter to trim the excess tortilla edges. Use the 2 trimmed tortillas as a pattern to trim the remaining 2 tortillas for the 2nd layer of the lasagna.

Using a 3 or 4-quart saucepan over medium-high heat, add the ground beef, onion and minced garlic. Cook the ground beef until it is cooked through and no longer pink. Reduce the heat to medium-low.

Using a small mixing bowl, whisk together the taco seasoning and 1 cup of water. Pour over the cooked ground beef. Cook for another 2 to 3 minutes, or until the meat mixture begins to thicken. Stir often. Remove from the heat.

Arrange 2 of the trimmed flour tortillas in the bottom of the prepared baking dish.

Evenly spread  ½ of the meat mixture on top of the tortillas.

Evenly spread ½ of the salsa over the meat mixture.

Evenly sprinkle ½ of the black beans over the salsa.

Evenly sprinkle ½ of the shredded cheese over the beans.

Arrange the last 2 tortillas over the shredded cheese, and repeat the final layers of ingredients.

Bake for 20 to 25 minutes. Remove from the oven, and garnish the chopped cilantro. Top with sour cream and pico de gallo. Serve while hot.

black beans ((15 ounces, rinsed and drained) )

Refried Beans ((15 ounces))

sized flour tortillas

Mexican Blend Shredded Cheese

Preheat the oven to 350 degrees Fahrenheit and spray a 9X13 baking dish with non-stick cooking spray.  

In a large skillet, brown the beef and drain any remaining grease.

Stir in the onion and cook over medium heat for 2 minutes until the onions are soft. 

Stir in the salsa and taco seasoning. Cook for 2-3 minutes for the sauce to simmer. 

Add in the black beans and both cans of the diced tomatoes with green chiles. Cook for 5-7 minutes uncovered on medium low heat.  

Place ? of the tortillas at the bottom of the pan.

Spread half of the refried beans on top of the tortillas and spoon ? of the beef mixture on top. Top the beef with 1 cup of the shredded cheese.  

Repeat the layers again. Layer of tortillas, refried beans, beef mixture and 1 cup of the shredded cheese.  

Top with the remaining tortillas and shredded cheese.  

Bake for 20-25 minutes until the taco lasagna is heated through and the cheese is melted.  

Remove from the oven and let set for 5-10 minutes.

Cut and serve with your favorite taco toppings and enjoy!
