Boil eggs.Eggs and water go into a saucepan or pot. Water should be an inch above the eggs.On high heat, bring water to a full boil then turn off the heat. With the pot covered, let it sit for 12 minutes. 

Peel eggs.Peel eggs under running cold water.

Chop eggs.Give the hard boiled eggs a good chop. Not too fine that they&#039;ll turn into mush when you mix it with mayo and not too rough that they&#039;ll look too messy.

Combine chopped eggs, mustard, mayo, and salt in a bowl.You can prepare this a day  or two ahead and store in the refrigerator in a sealed container. 

Cut bread into circles.Use a round cookie cutter that&#039;ll cut two circles out of one slice of bread. Avoid cutting the crust.

Assemble the tea sandwiches.From the bottom up: Bread, a tablespoon of egg salad, bread, and a sprig of parsley. Put a cocktail fork through the tea sandwich and use it to hold the parsley in place.

Blend softened butter with finely chopped chives and a pinch of salt. If using unsalted, check for flavor and add more if necessary.

Chive Compound Butter

Peel or score the cucumber (see notes). Slice very thinly.

Butter each slice of bread and lay cucumbers on 3 slices, slightly overlapping.

Top with remaining slices of bread and trim crusts carefully. Cut into fingers or triangle.

If desired, butter one edge of each sandwich and cover with finely chopped chives

Traditional English tea sandwiches

Peel the skin from the piece of cucumber and slice as thinly as possible. A mandolin or wide vegetable peeler is most effective for this. It&#39;s often safest to simply peel a section from the cucumber then slice it while still attached to the rest of the cucumber so that you have something to hold while slicing (and keep fingers safe!)

Put a thin layer of butter on both slices of bread then arrange a layer or two of cucumber over one slice. Try to make the cucumber layer as even as possible and right to the edges.

Top with the other slice of bread, trim off the crusts keeping the edges parallel  as you do so. Cut into either 3 - 4 thin fingers or four triangles.

For cucumber sandwich

Spread both slices of bread with a thin, even layer of bream cheese. Top one of them with a slices of smoked salmon in an even layer, going close to the edge.

For smoked salmon sandwich

Spread one slice of bread with butter and the other with a thin layer of mustard (if you like, you can also butter it underneath as well).

Make a layer of roast beef on top of one of the slices of bread, going right to the edges and without gaps.

In a small mixing bowl, combine the labneh, chopped fresh herbs, and a dash of kosher salt. Add a drizzle of extra virgin olive oil. Mix well.

Arrange the bread slices on a large cutting board and spread one side of each slice with a generous spoonful of labneh.

Arrange the cucumber slices on half of the bread slices, overlapping the cucumbers so they will fit well. Top with the other slice of bread (you should have 4 cucumber sandwiches at this point).

Pressing down gently, cut each cucumber sandwich into quarters (triangles or rectangles will work as well).

Arrange the sandwiches on a plate and serve with a garnish of dill. (If you have any cucumber slices left, you can arrange them on the plate as well). Enjoy!

Place cucumber slices in a small bowl. Add Italian dressing. Set aside.

Using a small biscuit cutter, cut small circles out of the bread slices. Set aside.

Place Bumble Bee® Solid White Albacore Tuna in a medium bowl. Add mayonnaise and pepper, to taste. Stir to combine. Set aside.

Assemble tea sandwiches:

Add about a tablespoon of tuna mixture to each bread circle. Place a cucumber slice on top, then a parsley leaf. Serve immediately or store covered for 1-2 days.

Leaving the skin on, cut the cucumber in half and grate over a bowl. Place the grated cucumber into a fine mesh strainer. Next, grate the onion, add to the strainer, and toss together with the cucumber. Let the grated onions and cucumber drain for 10 minutes gently pressing every few minutes.

Add the cream cheese, grated cucumber onion mixture, lemon zest, salt, pepper, and food coloring into a medium bowl and beat with a hand mixer at medium speed until light and fluffy.

Generously spread the Benedectine onto the soft white bread. Arange on a pretty tray and enjoy!
