Sour Cream Smashed Potatoes

lb. small (not baby) red potatoes

salt and pepper

c. whole milk

margarine

c. sour cream

c. snipped chives

Ultra creamy, fluffy, and buttery mashed Yukon gold potatoes made with lots of fresh garlic make the perfect Thanksgiving and everyday dinner side dish. These are the best garlic mashed potatoes you&#039;ve ever had and will be requested again and again!

Creamy Garlic Mashed Potatoes

potatoes

unsalted butter (divided, room temperature)

garlic

heavy cream (or milk)

sour cream

Salt and black pepper (to taste)

parsley or chives (for garnish, optional)

Place the potatoes in a medium stock pot and add enough water to cover the potatoes by about one inch. Salt the water and boil the potatoes until they are easily pierced with a fork, about 20 to 25 minutes.

While the potatoes are cooking, melt one tablespoon of butter in a small saucepan over medium-low heat. Add the garlic and cook for 1-2 minutes until the garlic is fragrant. Add the heavy cream to the pan with the garlic and heat just until it begins to simmer then remove the pan from the heat.

Drain the potatoes using a colander and transfer them to a large mixing bowl. Pour the garlic and cream over the potatoes and use the beaters of a hand mixer, with the mixer turned off, to break the potatoes apart. Add the butter, one tablespoon at a time, and beat until mixed into the potatoes.

Add sour cream, salt, and pepper. Continue to beat the mashed potatoes until all of the ingredients are combined and the potatoes are smooth.

Transfer the mashed potatoes to a serving bowl and garnish with fresh chopped parsley or chives. Enjoy!

Garlic Mashed Potatoes with Garlic Butter

lbs potatoes (Yukon gold, creamer, russet potatoes)

heavy cream (start with less, adjust to your liking)

Tablespoons butter

vegetable oil

garlic (finely minced)

Prep potatoes

Prep and boil potatoes: Wash and peel the potatoes then cut them into 1 inch pieces. Cover with water and boil until soft and fork tender, about 10 minutes. Drain very well and place back into the hot pot to remove excess water. Mash the potatoes using a potato ricer, potato masher, or other tool. See Note 2.

Make garlic butter and cream

Make garlic butter and cream: Heat a sauce pan over medium low heat and add the garlic, butter, and vegetable oil. Saute until garlic is soft and fragrant, about 1½ to 2 minutes. Reserve a tablespoon of garlic butter for later. Add the heavy cream to the sauce pan and heat until cream is warm and infused with garlic flavor. Do not boil the cream.

Mash potatoes

Add remaining ingredients: Add the garlic cream to the potatoes and mix until smooth and creamy. Taste and season with salt and pepper. Note: Start with ⅔ of the amount of cream and add more if you want a smoother consistency. See Note 3 for more details.

Serve

Serve: Spoon mashed potatoes into a serving bowl and drizzle with the reserved garlic butter. Garnish with herbs and serve immediately. Enjoy!

Instant Pot Creamy Mashed Potatoes

To an instant pot, add the steamer wire rack. Pour in 1 cup of water and the garlic cloves. Add the peeled russet potatoes. Cover the Instant Pot with its lid and turn to “seal.” Turn the machine to manual and set it to 12 minutes. When it’s done, use the quick release and carefully remove the lid.

Instant Pot Directions:

Using a pair of tongs, remove the potato, one at a time, and place it in a potato ricer. Push the potato ricer into a bowl. Repeat until you’ve worked through all of the potatoes. Add the garlic cloves to the potato ricer and push those through, too.

Add the butter and heavy cream to a small saucepan and set over medium heat. Warm just until the butter has melted. To the potatoes, add the butter and heavy cream mixture, along with the sour cream and salt.

Mix together until combined. Give it a taste and adjust the salt according to your liking.

Garnish with melted butter and some fresh chives and lots of black pepper.

Stuffing Muffins are a delicious and fun rendition of traditionalThanksgiving stuffing. This small batch version is filled with crumbled Italian sausage, toasted sourdough bread, autumnal herbs and chicken broth.

Stuffing Muffins

white bread (cubed (about 1 loaf))

olive oil

Italian sausage (removed from casing)

yellow onion (finely diced)

celery (finely diced)

Kosher salt

sage leaves (minced)

thyme (minced)

pepper

chicken stock

eggs (lightly beaten)

Preheat the oven to 300 degrees F. Thoroughly butter or grease the muffin tin and set aside.

In a single layer, place the bread cubes on a sheet pan and bake for 10 minutes, or until barely toasted. Remove and set aside.

In a medium skillet, set over medium heat, add the olive oil. When the oil is hot, add the Italian sausage, breaking it up with a wooden spoon. Cook it until browned and thoroughly cooked, about 5 to 7 minutes. Remove from the pan and transfer to a small bowl.

Turn the heat to medium-low and if needed, add a teaspoon or two more of olive oil. Add the diced onion and celery, adding a few pinches of salt and cook until softened, about 5 to 7 minutes. Add the sage and thyme and cook for 2 to 3 minutes more, along with a few more pinches of salt and about 10 rounds of freshly ground pepper.

Add the toasted bread crumbs to a large bowl, along with the Italian sausage, cooked onion mixture and chicken broth; mix it until thoroughly combined. Do a taste test? Does it need a bit more salt? If it’s good, pour in the beaten eggs and mix one last time until combined.

Using a tablespoon, transfer mounds of the stuffing mixture to each muffin tin. Be sure to tightly pack the stuffing in each of the muffin cups. This will make sure the mixture adheres to itself and the muffins don&#39;t fall apart. You’ll end up with 12 stuffing muffins.

Bake for 35-40 minutes, until top is browned. To remove, take a butter knife and go around each of the stuffing muffins' outer edge. Using your knife, gently lift it up out of the muffin tins. Serve warm.
