Baked Oats for One

½ cup old fashioned rolled oats

banana

½ tsp baking powder

salt

vanilla extract

honey

cocoa powder

chocolate chips

tbsp cookie butter

Preheat oven to 350°F/175°C. Lightly grease a ramekin with baking spray or use a pastry brush to brush over vegetable oil.

In a blender, blend together all of the main ingredients. If you want to add any mix ins (like nut butters, spreads or cocoa powder) add them now. Pour into your ramekin. If you want to use chocolate chips or berries, sprinkle them over now. If you want to add jam, swirl that in now.

Pour into your baking dish and bake for 22-25 minutes. Let it cool for 5 minutes before eating.

In a high speed blender, add in all ingredients except chocolate chips. Blend until smooth.

Stir in chocolate chips using a spoon or spatula.

Bake it in the oven for 25-30 minutes, or until a toothpick inserted into the middle comes out clean. Alternatively, you can cook it in the air fryer for 15-20 minutes at 180C/350F, or microwave it on high for 2-3 minutes.
