Sautéed Fennel With Garlic Recipe

In a large skillet, heat the olive oil over medium-high heat. Add the fennel and garlic, and cook, turning as needed, until golden brown, 8 to 10 minutes.

Add the tomato juice, salt and pepper, and cook, covered, over medium low until tender, 10 to 15 minutes. Stir in the fennel fronds and lemon juice, then check the seasoning and serve.

Wash, core, and remove blemishes from tomatoes. 

Cut into small sections.

In a large stock pot, add tomatoes and very little water (at most 1 cup).&nbsp;

Bring to a boil.

Put through colander to remove seeds and skin (see above notes for tips).&nbsp;

Discard seeds and skin.

Return juice to the stock pot and bring to a boil again, adding salt, onion salt, and celery salt according to how many quarts of juice you have yielded.

If canning, pour 2 tablespoons lemon juice into sterilized quart-sized jars. Add tomato juice, leaving about 1/2&quot; air space at the top. 

Discard seeds, and skin.

How to make tomato juice with and without a juicer with one of three methods: blending, grating, or a tomato juicer recipe. I&#039;ve also thrown in a bonus heated method. The resulting homemade tomato juice takes just minutes to prepare and is fresh, packed with flavor, and perfect for whipping up cocktails or storing for later!

How to Make Tomato Juice (4 Methods)

tomatoes (use more or less if wanted)

Wash the tomatoes well and pat them dry. Depending on which method you plan to use, you may want to remove the tomato core, too.

This method is the simplest of them all and requires no manual squeezing.Chop the tomatoes, so they fit through the chute of your juicer.

Slowly feed them into the juicer – voila! The juicer will automatically remove the skin and seeds from the juice.

Chop the tomatoes into rough pieces.

Blend until the mixture is juice-like and smooth – this may take a couple of minutes to properly break down.

Place a large nut milk bag or layers of cheesecloth inside a large bowl (alternatively, use a sieve) and pour the tomato mixture from the blender into it. Lift the bag/cheesecloth up and allow it to drain naturally. Then, using your hands, squeeze the leftover pulp to remove as much juice as possible.

Grate or chop the tomato as finely as possible into a large bowl, then transfer than mixture to a nut milk bag (or cheesecloth layers) and squeeze, squeeze, squeeze.

Chop your tomatoes and add them to a large pan on the stovetop over medium heat with a splash of water. Simmer for 20-30 minutes. Continuously stirring to soften the tomatoes.

Press the softened tomatoes through a sieve or food mill to extract the juice and leave behind the skin and seeds.

Return the extracted juice to the stovetop and heat over medium heat until just before boiling (around 185-195ºF/85-90ºC - don&#39;t boil it!).You can then can the juice or allow it to cool slightly before transferring to the refrigerator or freezer.

BONUS The Heated Method

Store: once prepared, fresh tomato juice can be stored in an airtight container in the refrigerator for 2-3 days.Freeze:  transfer the tomato juice to a freezer-safe container or bags, leaving 1-inch headspace (for expansion), then freeze for up to 1 year.For small servings, you could add little portioned amounts to silicone ice-cube trays and freeze until solid. Then transfer to a freezer-safe bag/container. Then simply pop out as many cubes as needed each time.

imitation crab (aka jaiba, about 1.25 lbs)

shrimp (cooked and de-shelled)

baby clams (canned)

cucumber (diced)

cilantro (finely chopped)

celery (small diced)

onion (small diced)

tomato cocktail juice (or spicy tomato cocktail juice)

limes (4 juiced, 4 wedged on the side)

serrano pepper (small

Shred all imitation crab, de-shell and remove tails from cooked shrimp, drain clams (optional) and place in large bowl set aside in fridge.

Note: If defrosting the ceviche and notice excess liquid, simply strain ceviche. You don’t need to pat it dry or anything, just let the excess drain off.

Dice all remaining ingredients: cucumber, onion, celery, cilantro.

Combine all ingredients in large seafood bowl, including tomato cocktail juice, juiced lime, and with large serving spoon gently mix ingredients.

Serve immediately and enjoy or refrigerate for later consumption.

Ensure all ingredients are chilled for freshest taste; including can of baby clams.
