This easy One-Pot Basil and Tomato Orzo Recipe&nbsp;is perfect for busy weeknight meals. It's flavorful, satisfying, and it's ready in 30 minutes or less!

One Pot Tomato Orzo Recipe

olive oil

garlic (, minced)

oregano

red pepper

salt

orzo pasta (, uncooked)

dry white wine

tomatoes (, canned)

vegetable broth (, low sodium)

capers

basil (, chopped (sub with parsley))

Heat olive oil in a large skillet or pot over medium heat. Once the oil is shimmering, add garlic, oregano and crushed red pepper flakes. Sauté for 1 minute until garlic is lightly browned.

Add the orzo and stir to coat well. Cook for 1-2 minutes to lightly toast the orzo and incorporate flavors. Move around occasionally to prevent sticking.&nbsp;

Pour in the white wine and cook until the liquid mostly cooks down. About 1-2 minutes.

Now add the diced tomatoes (with juices) and simmer for 2-3 minutes.&nbsp;

Add the vegetable broth and salt. Turn heat up to get it boiling. Once boiling, turn heat down to maintain a low simmer. Cover and cook for 7-10 minutes or until liquid has mostly cooked down and orzo is tender. Stir often to prevent sticking. Uncover the last few minutes of cook time.&nbsp;

Remove from heat and add the capers and fresh basil. Stir to combine. Taste for seasoning and add more if needed.  Let the orzo sit uncovered for 1-2 minutes. This will give it time to thicken up. Serve with vegan parmesan and fresh-cracked pepper. Enjoy!

One-Pot Basil and Tomato Orzo

A delicious 20-minute one-pot recipe to utilize fresh seasonal tomatoes and orzo pasta.

Tomato Orzo

tbsp extra virgin olive oil

cherry tomatoes

½ tsp salt and pepper

garlic (minced)

orzo

vegetable broth

coconut milk

lemon (juiced)

basil (or spinach)

In a large saucepan heat the oil and add tomatoes, salt and pepper. Cook for about 5 minutes with the lid on, then burst the tomatoes with the back of a spatula.

Add the garlic and orzo, and stir everything. Add the vegetable broth and coconut milk. Lower the heat and cook for 5-10 minutes until the orzo is fully cooked.

Stir in the fresh basil or spinach and add vegan cheese if desired. Serve on its own or as a side.

You can watch the video in the post for visual instructions.First, dice the onion, mince the garlic, and halve the cherry tomatoes.

Then, heat the olive oil in a medium saucepan/skillet over medium heat. Once hot, add the onion and sauté for about 3 minutes. Then add the garlic to sauté for 30-60 seconds.

Stir in the cherry tomatoes and cook until they soften slightly. Use a fork or potato masher to gently press them to release their juices.

Add the orzo, mix well, and toast for a minute until lightly golden and fragrant.

Pour in the vegetable broth, a little at a time, while stirring. Keep stirring until no broth remains.

Then, lower the heat to a simmer and pour in the coconut milk, cooking the orzo for about 5-8 minutes.

Next, add the tomato paste (if using), taste, and season the orzo with salt, pepper, and red pepper flakes.

Finally, add more broth if you want a saucier tomato orzo, cover the pan, and cook for a few more minutes until the orzo is al dente, stirring occasionally. Serve in bowls topped with vegan Parmesan and basil – enjoy!

I doubled the onion, garlic, and tomato. As I used soup pasta not orzo I halved the vegetable broth and used about 2/3 the coconut milk. As soup pasta cooks in 2-4 minutes, I adjusted the cooking time accordingly. The basil and parmesan cheese really improve the flavour.

In a dutch oven or large pot over medium heat, add sun-dried tomato oil, and diced onion. Cook for about 3 mins, then add in cherry tomatoes and cook for another 2-3 mins.

Next, add in minced garlic, chili flakes, cherry tomatoes and smoked paprika and stir constantly for 1 min.

Add in tomato paste, sun-dried tomatoes, and orzo. Cook for 1-2 mins then add in half the vegetable broth.

Once the broth has been absorbed, keep adding more broth a little bit at a time until the orzo is cooked al dente.

Add in chopped spinach, and thick balsamic vinegar and stir to combine. Allow the spinach to cook for 1 min.

Serve with fresh basil or vegan parm if desired, and enjoy!
