Jo Pratt blends authentic ingredients into a quick homemade paste that forms the base of her Thai green chicken curry. If you are in a rush you could use a shop-bought curry paste.


Easy Thai green curry

vegetable oil

tbsp Thai green curry paste (according to taste)

tbsp soft dark brown sugar

lemongrass, fat ends bashed with a rolling pin (optional)

grams/1½lb skinless, boneless chicken chicken

lime

coconut milk

good shake of Thai fish sauce soy sauce

coriander,

½–1 lime, juice only

This healthy veggie Thai green curry is packed with protein and flavour. It's easily made 100% vegetarian (and vegan) by switching the fish sauce out for soy sauce. 

Each serving provides 358 kcal, 14g protein, 47g carbohydrate (of which 6g sugars), 11.5g fat (of which 5g saturates), 6g fibre and 2.1g salt. 

Tofu Thai green curry

shallots, thinly sliced

½ tsp sesame oil

green finger chilli, finely chopped (optional)

300 milliliters/10fl oz hot vegetable stock

lighter coconut milk

tsp Thai fish sauce soy sauce

aubergine,

makrut lime leaves

tofu,

½ green pepper,

grams/1¾oz mangetout

grams/1¾oz

juice of 1 lime, plus lime wedges to serve

150 grams/5½oz basmati rice, to serve

This vegetable thai red curry can be made vegetarian and vegan by leaving out the shrimp paste. It's a real crowd-pleaser.

Vegetable Thai red curry

250 grams/9 ounces glutinous (sticky) rice (available from Asian greengrocers)

red onions, peeled and roughly chopped

garlic cloves,

lemongrass, outer leaves removed, core roughly chopped

red chillies,

coriander

tsp chilli powder

galangal,

lime leaves

shrimp paste (optional)

hot paprika

tsp turmeric

tsp cumin seeds

tbsp vegetable oil

leek, trimmed, thinly sliced

garlic cloves, crushed to a paste

red chilli, trimmed, finely chopped

tbsp Thai red curry paste (see above)

carrots, peeled, roughly chopped

tomatoes

250 milliliters/9fl oz vegetable stock

trimmed,

½ small butternut squash, peeled, seeds removed, flesh cut into 2.5cm/1in pieces

175 grams/7 ounces snake or French beans, trimmed

x 225 grams/8½oz can bamboo shoots, drained

beansprouts,

With their attention-grabbing flavours, Thai curries are real crowd-pleasers. This homemade Thai curry paste can be made vegetarian by leaving out the shrimp paste.
