Leftover turkey fried rice with turkey, fluffy rice, scrambled eggs, vegetables, and classic Asian seasonings is a one skillet meal made in just 10 minutes.

Leftover Turkey Fried Rice

vegetable oil

onions, finely chopped (approximately half an onion)

garlic,

jalapeño pepper, sliced (optional

eggs

white rice, cooked

tablespoon soy sauce

sesame oil

teaspoon vegetable stock powder

teaspoon white pepper

salt

teaspoon ground black pepper

carrots and peas vegetable mix, frozen

tablespoon green onions, finely chopped

white sesame seeds (for garnish)

Heat oil in a large wok or skillet over medium high heat for 2 minutes until sizzling and hot. Add onions and garlic and sauté for 2 minutes until fragrant. Stir in jalapeño (if using).

Add shredded or cubed turkey and stir to combine, about 1 minute. Move the turkey mixture to one side of the skillet and add eggs to the empty space in the skillet. Stir the eggs until scrambled and cooked through, yet still tender, about 1 minute. (The eggs should be springy and bright in colour, and not too dry at this stage). Stir to combine all ingredients together.

Add cooked rice and all seasoning including soy sauce, sesame oil, vegetable stock powder, white pepper, salt and black pepper. Stir well to combine, about 2 minutes. If the rice is not soft enough, add up to 1/4 cup of water to soften it.

Add carrots and peas, and stir fry for 2 minutes while evenly mixing and distributing the ingredients. Then, stir in green onions.

Serve hot on a plate, and sprinkle sesame seeds on top.

That is such a great idea! We usually have tons of turkey leftover since there is only two of us. Great recipe, pinned and bookmarked to use for the days after thanksgiving. My husband loves jalapeños, he adds them on everything, he is going to  love your recipe!

I made this recipe twice, and I doubled the recipe both times. I prepped the ingredients while the rice cooked in the rice cooker. The turkey, vegetables, eggs, rice, and seasoning proportions are perfect, with the exception of the pepper. If you love pepper, then perhaps the combination of a full teaspoon of white pepper and a full teaspoon of finely ground black pepper is appropriate for a single batch, but when doubling the recipe, you would have four teaspoons of pepper, which is a sizeable amount. I cut the pepper in half for my first try, and then I cut the pepper in half again for my second try (i.e., I used 1/4 teaspoon of white pepper and 1/4 teaspoon of black pepper in my second batch). My 93-year-old mother said that she could still taste the pepper in the second batch. I think the recipe is delicious with 1/2 teaspoon of white pepper and 1/2 teaspoon of ground black pepper, but my lips felt hot for several minutes after eating, and I did not include a jalapeño pepper... just as well. I definitely will use this recipe again. The leftover turkey fried rice was yummy the next day in a pork and tofu soup. The pairing was delicious and a great way to use leftover fried rice. Easy turkey fried rice uses leftover turkey, rice, frozen vegetables, and pantry seasonings. This leftover makeover dish is simple and delicious!

Turkey fried rice recipe

turkey (diced to small bite size cubes)

rice

scallions

1.5 oz yellow onion (chopped, quarter of 1 small)

avocado oil (divided)

½ tsp coarse sea salt (plus more to taste)

garlic powder

¼ tsp white pepper

mixed vegetables

tbsp coconut aminos (or 0.5 tsp soy sauce)

tbsp vegetarian oyster sauce (optional)

Dice the cooked turkey to small bite size cubes. Set side the rice. Prepare the spring onions, yellow onions, and whisked the eggs.

Preheat a large 12-inch saute pan (or wok) over medium heat until it feels warm when placing your palm near. Add 0.5 tbsp oil and pour in the eggs. Gently stir to make scrambled eggs for about 10 seconds then transfer the eggs out and set aside in a bowl.

Add 0.5 tbsp oil to the pan and turn heat up to medium-high, add the onion and white scallion parts with a pinch of salt, saute for 10 seconds.

Add in the rice little-by-little while using your hands to gently separate the rice grains (I wear a cooking kitchen glove to do this). By doing some, the rice grains are less likely to clump and therefore each grain cooks evenly. Turn heat up to medium-high.

Use a wooden spoon or spatula to scoop the rice from bottom up and repeat the motion to toss the grains without smashing them. This scooping motion also helps the moisture to evaporate and keeps the rice grains crisp.  You should hear the sizzling sound. If not, turn heat up a bit more.

When you see the rice grains start popping, that means the grains are no longer wet, about 3-4 minutes, season the rice with salt, garlic powder, and white pepper, toss for 10 seconds.

Turn heat up to high then add the frozen veggies and turkey, keep scooping and tossing for 2-3 minutes.

Push the ingredients to the side of the pan, add the soy sauce and oyster sauce to the center of the pan. The sauce will immediate sizzle and create a nice aroma. Quickly toss everything to combine for 2-3 minutes.  Add the eggs and use your patula to break up the eggs while tossing and scooping. The pan will be really hot so be careful as you cook.

Turn off the heat. Drizzle with toasted sesame oil and garnish with green scallion parts. Serve warm.

This turned out so good and it was really fun to make! The instructions are very helpful, easy and educational. I also made your oyster sauce recipe and it was well worth it. The flavors are perfect. I plan to try more of your recipies.
