Vegan Apple Bread

flax egg (1 Tablespoon ground flax + 3 Tablespoons water*)

whole wheat pastry flour*

all-purpose flour

cinnamon

baking powder

baking soda

sea salt

nutmeg

applesauce

coconut sugar

Tablespoons melted coconut oil

Tablespoons non-dairy milk (I used oat milk)

vanilla

apples

pecans*

Tablespoons coconut sugar

sugar

milk

Whisk

Make flax egg by whisking together ground flaxseed and water. Set aside for about 5 minutes to gel up.

Preheat

Preheat oven to 350°F and line a 9X5 loaf pan with parchment paper (or grease with oil).

Stir

Stir together flours, cinnamon, baking powder, baking soda, salt and nutmeg in a medium mixing bowl.

Combine

Combine applesauce, coconut sugar, coconut oil, milk, flax egg and vanilla in another mixing bowl.

Stir the dry ingredients into the wet until just combined.

Stir together chopped pecans, coconut sugar and cinnamon in a small bowl to make the topping.

Pour

Pour batter into the prepared loaf pan and top with crumb topping.

Bake

Place in preheated oven and bake for 45-50 minutes, or until a cake tester or toothpick come out clean.

Cool

Let loaf cool on a wire rack before attempting to remove the loaf from the pan.

Serve

Once cool, make glaze by stirring together powdered sugar and milk. Drizzle glaze over bread and serve.

(67 grams) sugar

(246 grams) plain, unsweetened applesauce

(80 milliliters) melted coconut oil

vanilla extract

turbinado sugar

Preheat oven to 325°F (165°C).

Grease a 5" x 9" (1.5 quart) loaf pan.

Prepare cinnamon swirl by mixing brown sugar and cinnamon together. Set aside.

If using, prepare the topping by mixing the turbinado sugar and cinnamon together. Set aside.

Prepare your flax eggs by whisking together ground flax seeds and water. Set aside to thicken.

In a large bowl, whisk the flour, baking powder, cinnamon, nutmeg, and salt together.

In a small bowl, mix the sugar, applesauce, melted coconut oil, vanilla, and flax mixture together.

Pour wet ingredients into dry ingredients and mix well to combine.

Fold in the chopped apples.

Pour half of the batter into greased loaf pan.

Sprinkle cinnamon swirl mixture evenly on top of batter.

Pour the remaining batter on top of the cinnamon swirl layer.

If using, sprinkle topping evenly on top of batter.

Bake for 50-55 minutes or until a tester comes out clean.

Allow the loaf to fully cool before slicing.

I have just tried this recipe using ordinary flour and it worked beautifully. I didn't add extra liquid and I was still happy with the consistency. My family polished off the lot in seconds! Thanks Gwen for a great recipe.
