Chocolate-Covered Chickpeas

Canned Chickpeas ((400 ml, 15 oz can))

Dark Chocolate Chips

Preheat the oven to 350°F (180°C). I recommend using the convection mode for faster roasting, but the recipe works on conventional mode as well.

Open the can of chickpea, drain under a sieve and rinse them under cold water. Shake the sieve to remove any water, then place the chickpeas onto a large baking sheet covered with parchment paper.

Gently rub the chickpeas with a clean towel or absorbent paper to remove a part of the moisture. If some skin peels off of the chickpeas, leave it and remove it later.

Bake for 50 minutes, making sure you stir them with a wooden spoon every 20 minutes to roast all sides. Keep baking until the chickpeas are hard, smaller in size, very dry and crispy. The best way to test if they are ready is to eat one! If not crunchy and too soft, keep baking.

Remove from the oven and cool on the baking sheet while you melt the chocolate.

In a large saucepan, melt the chocolate chips and coconut oil together on low heat. Stir constantly until fully melted.

Remove the saucepan from heat and stir in salt and the roasted chickpeas.

Scoop out 1 tablespoon of chocolate-covered chickpeas on a plate covered with a lightly- oiled piece of parchment paper. Repeat this step, leaving half thumb space between each chickpea chocolate cluster.

When the plate is full, pop in the freezer for 10 minutes to let the chocolate set.

Remove the plate from the freezer, release the chocolate chickpeas cluster from the parchment paper, and store in an airtight box in the fridge for up to 1 week.

Sautéed Chickpea Recipes are the simplest way to make pan fried chickpeas. A classic staple that’s budget-friendly and easy to prepare.

Sautéed Chickpea Recipes

tbsp Olive Oil

½ tbsp Garlic Powder

Paprika

tsp Ground Turmeric

Salt

⅛ tsp Black Pepper

Lemon

Parsley

Open canned chickpeas, rinse under running water then dry on a clean kitchen towel. Heat olive oil in a skillet/frying pan on medium heat.

Add chickpeas and sauteed until it turns golden crispy on the surface. Before adding the spices, turn the heat to very low to prevent spices burnt. Add ground turmeric, paprika, garlic powder, and salt. Mix until chickpeas are well coated (no more than 2-3 minutes to avoid burning the spices). .

Add lemon juice (optional, leave out if you prefer crispy texture) and stir.

Turning off the heat then finish it with chopped parsley. Serve as a side dish or with salad or rice.

A refreshing, colorful Mediterranean chickpea salad for a filling light lunch or as a side dish. Protein-rich chickpea salad with a bright zesty dressing that takes only 10 minutes.

Mediterranean Chickpea Salad

(15.5 ounces) chickpeas (drained and washed)

red onion (diced.)

cucumber (diced.)

tomato (diced.)

red bell pepper (diced.)

parsley (chopped.)

olive oil

lemon juice

cumin

cardamom

dry mint

Salt (or

black pepper (optional)

In a bowl, combine veggies and set aside.

In an empty jar combine salad dressing ingredients and shake well to combine.

Pour dressing over veggies and toss to coat everything well.

Let it set for 30 minutes in the fridge before serving.

asalamu alaikum, jazaki Allahu Khairn for this recipe.  I made this tonight, my husband, toddler and I ate it all, I had to make another batch of this since my husband wants it for breakfast in the morning.  I made it along with kebabs, rice and tzatziki sauce. it is truly delicious, light and fresh.  In sha Allah this will be one of our favorite go to salads in the future.  :)

Made it for dinner last nigh  and it was delicious. Leftovers were even better with shredded chicken for lunch today.
