This healthy and delicious vegan chicken curry recipe is made in your slow cooker with a delightful blend of peppers, garlic, ginger, spices, and creamy coconut milk. We use meaty soy curls for the vegan chicken, so it’s easy to just place them and all the rest of the ingredients in your crockpot and let it cook until dinner time!

Vegan Chicken Curry

(8-oz) bag soy curls (broken into 1/2 inch pieces)

water

potatoes

can full fat coconut milk

red bell pepper

carrots

jalapeno pepper,

lime, juiced

garlic, minced

chicken bouillon powder

ginger

onion powder

tsp cumin

turmeric

tsp coriander

oregano

tsp coconut sugar sugar

tsp ground cinnamon

cayenne

salt (optional, taste before adding)

This easy vegan Jamaican tofu curry is made with only a few simple ingredients. It’s a meatless take on the classic Jamaican curry chicken recipe.

Vegan Jamaican Curry Tofu

oz extra firm tofu (or firm tofu, drained)

tbsps Jamaican Curry Powder ((see notes))

carrot

onion

scallion (chopped)

garlic (minced)

thyme

scotch bonnet pepper ((see notes))

allspice (ground

Salt and pepper (to taste)

tbsp oil

vegetable broth (or water)

Cut tofu into cubes and season with curry powder, minced garlic, salt and pepper.

Heat oil in a pan at medium heat. Add the tofu and cook until browned on all sides. Be careful not to toast the curry too much as this could result in a bitter aftertaste.

Add remaining ingredients including vegetable broth and whole scotch bonnet pepper.

Cover pot and reduce heat. Simmer for about 15 minutes.

Remove from heat and carefully remove scotch bonnet pepper.

Serve with plain rice or Jamaican Rice and Peas.

Sort of bland even with all of the spices.

Excellent recipe and very close to the Jamaican restaurant close to me. They actually have decent vegan menu options and I love the tofu curry plate. It is funny as every time I go there it tastes different. One time it is spicier, another time different veggies, they'll add chickpeas another time and maybe sweet potatoes. I love going for the surprise but most of all your recipe helps me make it at home. I made this with your rice and peas recipe and fried some plantains. I'm in 💕 with your recipes.

Great dish my 10 year old  has been vegan for almost 3 months band he loves it even more than I did! Added potatoes and some coconut oil instead of regular oil! Didn’t look at the serving amount would have doubled up because it was gone in 2 sit downs with me and my son!!
