This bright and refreshing orzo salad is made with orzo, fresh vegetables and herbs, and tossed in a savory vinaigrette.

Lemon Orzo Salad

orzo (uncooked)

cucumbers (diced)

shallot (diced)

cherry tomatoes (diced)

onion

asparagus (blanched, roasted,

basil (chopped)

olive oil

lemon juice

tbsp agave nectar

garlic (minced)

rosemary (finely chopped)

salt

½ tsp pepper

Wash and prep all produce according to the ingredient list.

Cook the orzo according to the package instructions. After cooking drain and set aside.

Mix together all of the ingredients for the vinaigrette and set aside.

Combine all ingredients for the orzo salad in a large bowl. Pour the vinaigrette on top and toss the orzo salad until full coated in the dressing.

Spring Orzo Salad with Peas and Lemon Vinaigrette

(300 g) dry orzo*

(220 g) fresh peas*

5-6 red radishes, thinly sliced

parsley,

(7 g) mint

(45 g) slivered almonds

(60 ml) extra virgin olive oil

lemon (2 to 3 tablespoons)

garlic,

sea salt

Black pepper,

lemon lemon

Cook the Orzo: Bring a large pot of water to a boil and add in the tablespoon of salt. Add the orzo to the pot and cook for 5 to 7 minutes, then add the fresh peas and cook for an additional 2 to 3 minutes, until both the orzo and peas are tender. Drain and rinse with cold water until cool.

Make the dressing

add the oil, lemon juice, garlic, salt, pepper, and optional lemon zest to a small jar. Seal the jar and shake vigorously until emulsified; set aside.

Assemble

Transfer the orzo and peas to a large bowl, then add in the radishes, parsley, mint, and almonds. Pour the dressing over the salad and toss until well-combined. Season with additional salt and pepper to taste, if necessary

Serve

Serve immediately, or place in the fridge for at least 30 minutes and serve cold. Leftovers will keep in the fridge for up to 5 days.

What a lovely salad! So light and yet delicious, perfect for spring. Last year I made the crunchy asian slaw recipe (Also on FromMyBowl.com, I'll include a link below but I doubt it'll work) quite a lot, and I feel that this recipe falls in that same vein and I'm super excited about it!!!. Well done with this one!

Made it tonight for dinner and my family and I loved it.  So fresh and delish.

I've made this salad twice, and It is bomb!!  Orzo is my favorite summer pasta.  I love the addition of radishes, they give it a nice crunch texture.  I use lightly toasted pine nuts, instead of almonds.  I dress the salad per bowl, so it lasts a little longer in the fridge without getting soggy. I could eat the entire salad in one sitting, it's that awesome.  

I have recommended this recipe to many people and the comment is that is an easy fresh salad.  Orzo is my favorite summer pasta.  Thank you for sharing.

Spring Orzo Salad

Hearty Pesto Orzo Salad is made with just a handful of ingredients, yet is bursting with fresh flavor. Ready in 25 minutes! Gluten-free, Oil-Free, and Nut-Free options.

Pesto Orzo Salad

dry orzo

kosher salt (plus more to taste)

Nut-Free Pesto or Arugula Pesto (or store-bought)

red wine vinegar

cherry tomatoes

chickpeas

vegan feta ((optional))

pine nuts

arugula (or baby spinach)

Cook the Orzo: Bring a large pot of water to a boil and add 1 tablespoon of salt. Add the orzo and cook until al dente, according to package instructions. Drain the orzo and rinse with cold water, until the orzo itself comes to room temperature.

Make the Dressing: Whisk the pesto and vinegar together in the base of a large bowl until a smooth texture forms.

Mix: Add the orzo, tomatoes, and chickpeas to the bowl and mix until evenly combined. Add the basil, feta (optional), pine nuts, and arugula. Gently fold into the salad. Season with additional salt to taste, if necessary.

Serve: Serve immediately, or chill in the fridge for 15 minutes before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days.

One-Pot Orzo

garlic

vegetable broth (or water)

coconut milk (or thin cashew cream)

tomato paste ((optional))

Salt & pepper (to taste)

Red pepper flakes (to taste)

Parmesan

You can watch the video in the post for visual instructions.First, dice the onion, mince the garlic, and halve the cherry tomatoes.

Then, heat the olive oil in a medium saucepan/skillet over medium heat. Once hot, add the onion and sauté for about 3 minutes. Then add the garlic to sauté for 30-60 seconds.

Stir in the cherry tomatoes and cook until they soften slightly. Use a fork or potato masher to gently press them to release their juices.

Add the orzo, mix well, and toast for a minute until lightly golden and fragrant.

Pour in the vegetable broth, a little at a time, while stirring. Keep stirring until no broth remains.

Then, lower the heat to a simmer and pour in the coconut milk, cooking the orzo for about 5-8 minutes.

Next, add the tomato paste (if using), taste, and season the orzo with salt, pepper, and red pepper flakes.

Finally, add more broth if you want a saucier tomato orzo, cover the pan, and cook for a few more minutes until the orzo is al dente, stirring occasionally. Serve in bowls topped with vegan Parmesan and basil – enjoy!

I doubled the onion, garlic, and tomato. As I used soup pasta not orzo I halved the vegetable broth and used about 2/3 the coconut milk. As soup pasta cooks in 2-4 minutes, I adjusted the cooking time accordingly. The basil and parmesan cheese really improve the flavour.

Prepare the lemon vinaigrette by combining all the ingredients in a small bowl - whisk (or blend) well.
